Abstract
This utility model introduces the process of producing banana (Musa acuminata x balbisiana) bark chips with coating mix formulation. The process comprising the steps of: peeling away the banana stem sheaths to expose the bark; slicing the bark into square shapes; soaking the sliced banana barks in salt solution; squeezing the soaked banana barks; mixing of ingredients for coating mixture; coating the sliced banana barks in the mixture, frying the coated banana barks; placing the fried banana bark chips to remove excess oil; adding flavoring powders to the fried banana chips; and, packing banana chips into containers. The coating mixture for every sliced banana bark consists of cornstarch (42.66% g), all-purpose flour (29.34% g), powdered pepper (12.60% g), table salt (9.40% g), and Monosodium glutamate (6.00% g).
