Abstract
The present utility model discloses a method for producing coconut pulp (Cocos nucifera) cookies that addresses the problem of agricultural waste accumulation resulting from the underutilization of coconut pulp, a by-product of coconut milk extraction. The process provides a novel solution by incorporating coconut pulp as a major functional ingredient in cookie production. The method comprises grating the coconut meat to obtain pulp, weighing and sifting the dry ingredients, creaming butter and sugar, gradually incorporating eggs, and mixing the coconut pulp with the dry ingredients to form a dough. The dough is then chilled to enhance texture, portioned onto a baking sheet, baked in a preheated oven until fully cooked, cooled for stabilization, and packed in suitable packaging for storage and distribution. The principal use of this utility model is the production of a sustainable, high-fiber cookie intended for human consumption
