Abstract
Description
Method and device for extracting coffee beverage from finely ground coffee beans
[0001] The present invention relates to a method and device for extracting a coffee beverage by expanding the extraction area of a filter and efficiently applying stirring force and centrifugal force so as to be suitable for extraction of coffee beans that are very finely ground to about 0.1 to 0.2 mm. More specifically, the present invention optimizes the stirring force and centrifugal force when extracting a coffee beverage from finely ground coffee beans, and optimizes each condition so as to extract within a short period of time, thereby enhancing the flavor and increasing the extraction efficiency even from coffee beans that are relatively difficult to extract.
[0002] In particular, it is effective when extracting from lightly roasted beans to enhance flavor and extraction efficiency.
[0003] There are various methods for extracting coffee beverages by adding water to ground coffee beans. These include espresso extraction, traditional hand drip, pour-over hand drip, and immersion hand drip, as well as cold brew and steeping methods, all of which have evolved to enhance coffee flavor and improve extraction efficiency.
[0004] The flavor of a coffee beverage basically depends on the quality of the coffee beans to extract a good-flavored coffee beverage, and the degree of roasting of the coffee beans, grinding degree, extraction method, extraction time, and water temperature have a great influence on the flavor.
[0005] Generally, the flavor of coffee beans differs depending on the degree of roasting. In the case of lightly roasted coffee beans (Nordic roasting, cinnamon roasting, medium roasting, and hereafter collectively referred to as light roasting), the original flavor and aroma of the coffee are well preserved, but the density of the coffee beans is considerably high during extraction, and the porous layer or cracks are less likely to occur, making extraction difficult.
[0006] That is, lightly roasted beans have a considerably high density and less cracking during roasting, which makes it fundamentally difficult to extract their flavor. For example, when grinding finely, hand drip often causes filter clogging and bad flavors such as excessive bitterness are extracted. In addition, it is difficult to control the water flow within the portafilter basket in the espresso method. Therefore, in reality, coffee beverages are extracted by roasting medium or higher.
[0007] In general, the hand drip method is the method that uses the simplest equipment, which is to place a filter paper on the dripper and add water to the ground coffee beans through the filter paper to extract the coffee beverage. The key to the extraction method is to ensure that the water and coffee beans meet harmoniously during the extraction process, extracting only the coffee soluble solids and preventing the extraction of bad tastes from the fibers of the beans. However, there are many variables such as water pouring, water control, extraction time control, and bean size grinding. In particular, when lightly roasted beans are finely ground, the filter can become clogged by finely ground fibers such as the coffee cell walls, which takes a considerable amount of time to extract the coffee beverage, and as a result, excessive bitterness such as a burnt taste of fiber is extracted from the fine fibers, which has a bad effect on the taste of the coffee.
[0008] In other words, in order to increase the yield of coffee extraction from lightly roasted beans and produce a strong flavor, the coffee beans must be finely ground. However, in this case, the filter is clogged by the finely ground fibers and the water flow is obstructed, which lengthens the extraction time and causes a lot of bad flavors such as a burnt taste to be extracted from the finely ground cell wall fiber components. On the other hand, if the grinding size is large, less cracking occurs, so a coffee beverage with a flat flavor is extracted.
[0009] In the present invention, the immersion and simultaneous extraction methods are harmoniously applied to a hand drip device, and the extraction area of the filter where the mixture of coffee beans and water staying in the dripper during extraction is in contact is expanded, and the stirring ability is harmoniously operated to extract a coffee beverage with a short extraction time and a rich flavor.
[0010] According to prior art, brewing methods that utilize centrifugal force in the extraction method to apply centrifugal force to a mixture of ground coffee beans and water so that it is well filtered through a double filter have been disclosed.
[0011] There are many examples of technologies that utilize rotational force to extract coffee, such as Korean Patent Application No. 10-2016-0149679 (November 10, 2016) 'Coffee filtering device using centrifugal force' and Korean Patent Registration No. 10-1719356 (March 17, 2017) 'Drip coffee machine'. Most of them are technologies that automatically hand-drip by rotating the dripper so that the falling water evenly touches the ground coffee beans, and coffee makers that evenly spray hot water on the ground coffee beans. The principle of utilizing rotational force for coffee extraction is the same, but if you look at the devices in detail, in order to utilize rotational force, the stirrer or dripper rotates to generate stirring force, or the centrifugal force generated by rotating the cylinder container containing the ground coffee beans and water connected to the motor and gear or pulley is utilized. Therefore, the structure of the device is complex and the device is heavy, which reduces convenience, and for extraction from slightly roasted beans, There is no description of a fundamental method to improve the flavor of coffee beverages, and the coffee extract container is not easily detachable after extraction, making it difficult to wash or drink the coffee beverage.
[0012] In addition, there are still problems such as no way to shorten the coffee beverage extraction time and, in particular, no way to improve flavor and efficiency when extracting from lightly roasted beans.
[0013] The 'Dutch coffee device' disclosed in Korean Patent Publication No. 10-2019-0087135 (published on July 24, 2019) describes a device that puts ground coffee beans and water in a container and stirs them, but does not disclose or imply any method for expanding the filter area to be extracted, and is simply a method and device for mixing water and coffee, which is fundamentally different from the method for expanding the filter area and increasing the stirring force by utilizing the rotor volume and stirring force in the dripper, which is the core of the present invention.
[0014] The purpose of the present invention is to provide a specific and optimal coffee beverage extraction method and device capable of reducing filter clogging and shortening extraction time by expanding the extraction area when a mixture of coffee beans and hot water, including coffee beans having a larger grind size depending on the degree of roasting of the coffee beans, comes into contact with the filter, thereby reducing the grinding area of the filter and increasing the extraction efficiency by efficiently applying the stirring force and centrifugal force of the coffee beans and water during the extraction process.
[0015] The present invention is applicable to all roasted coffee beans, but is particularly applicable to lightly roasted (cinnamon, Nordic, medium roasted) beans, and its main purpose is to extract a coffee beverage with a deep flavor and high extraction efficiency.
[0016] The purpose of the present invention is to provide a method for controlling the flavor of a coffee beverage extracted from coffee beans by the stirring force and centrifugal force by controlling the width of the extraction port of the dripper, the volume of the rotor that generates stirring force and centrifugal force, and the selection of various shapes such as spiral patterns, stripes, and grooves formed on the rotor surface, and the rotation speed of the rotor.
[0017] The purpose is to shorten the extraction time and extract a deeply flavored coffee beverage from lightly roasted coffee beans, including coffee beans ground to a finer size than that for espresso, and to extract a deeply flavored coffee beverage quickly from coffee beans ground to a finer size than 0.2 mm depending on the degree of bean roasting.
[0018] Another object of the present invention is to apply the present invention to a coffee extractor of a machine structure to enable automation and reduce time and labor costs.
[0019] The coffee beverage extraction method and device suitable for the present invention basically apply a dripper or filter (collectively referred to as a dripper in the present invention) extraction method, and efficiently apply stirring force and centrifugal force to significantly reduce the extraction time even for very finely ground coffee beans, and ensure that the extraction area of the filter is sufficiently secured when the mixture of water and coffee beans passes through the filter.
[0020] The structure of the dripper can be manufactured as an insulating structure so that the temperature of the mixed liquid inside the dripper or filter can be appropriately maintained as needed, or the structure can be manufactured as a structure that maintains the temperature by appropriately maintaining the temperature of the outer wall of the dripper or filter using a lamp, heating wire, etc.
[0021] A rotor (12, 500) that generates stirring force and centrifugal force is placed inside the dripper, and the level of the mixture of water and coffee beans inside the dripper rises by the volume of the rotor, thereby expanding the extraction area where the filter and the mixture come into contact.
[0022] The dripper or filter (11, 300) described in the means of the present invention is a structure for performing a filter function used in the extractor of the present invention, and uses the same drawing reference numeral (11, 300). The dripper is a structure in which a separate filter paper is installed and used, and the filter is a structure in which filter holes are arranged in the filter itself to have a filter function.
[0023] The above dripper or filter functions as a filter and is a space where coffee beans and water are mixed and where the rotor is placed.
[0024] The function of the above rotor (12, 500) is to efficiently generate stirring force and centrifugal force, such as in the example of Drawing 6, so that the rotor has an appropriate volume and shape, such as a cone shape, and the rotor surface has spiral stripes, etc., and is placed in the internal space of the dripper or filter so that when the rotor rotates, the mixture of ground coffee beans and water is well stirred, and the level of the mixture of coffee beans and water rises by the volume of the rotor, so that the area where the mixture and the filter come into contact is expanded, thereby further reducing the phenomenon of filter clogging when extracting a coffee beverage.
[0025] The finely ground coffee grounds by the rotor do not settle but are well mixed with water, and in the process of extracting coffee solids by centrifugal force and gravity acting perpendicular to the filter surface, the fibers of the coffee bean cell walls remain evenly layered on the filter surface, which reduces the downward sinking of cell wall fibers, thus reducing filter clogging.
[0026] The volume of the rotor is determined by considering the rotation speed of the rotor, coffee extraction time, and single extraction amount.
[0027] Experiments have shown that it is desirable for the rotor volume to be 20% to 70% of the volume of the rotor submerged in the mixture compared to the volume of the mixture poured into the dripper.
[0028] It is desirable that the rotor volume and rotational speed maintain an inverse relationship under the same conditions.
[0029] When the rotor volume is small, the rotation speed is increased, and when the rotor volume is large, the rotation speed is decreased to maintain the stirring force.
[0030] If the speed relative to the volume is too high, the centrifugal force generated when the rotor rotates increases, causing diluted coffee to be extracted through the filter before the mixture is sufficiently stirred. If the speed relative to the volume is too low, the coffee grounds in the mixture settle to the bottom, preventing sufficient stirring.
[0031] If the rotor volume is too small, the area of contact between the mixture and the filter is reduced, which increases the coffee extraction time, and if the volume is too large, the amount of mixture poured into the same dripper capacity is reduced, which reduces the extraction amount.
[0032] It is desirable to determine the volume and rotation speed of the rotor by considering the above conditions and apply it to an extraction device suitable for the purpose.
[0033] As shown in the examples of each drawing, due to the above function of the rotor, the mixture in the dripper or filter is mixed in a state where the space between the filter wall and the outer surface of the rotor is narrowed, so that the coffee bean powder is stirred in a state where the mixture is more densely distributed, and gravity and centrifugal force are applied before passing through the filter.
[0034] When the mixture is stirred while the coffee grounds are evenly distributed at a certain density, the mutual contact between the coffee grounds also facilitates the extraction of coffee components.
[0035] The stirring efficiency changes during rotation depending on the shape of the rotor and the irregularities such as stripes arranged on the surface. The shape of the rotor is such that the stripes on the rotor surface are arranged in a helical spiral shape to prevent the coffee powder in the mixture from sinking to the bottom of the mixture due to gravity, so that the coffee powder does not sink during rotation but is evenly distributed in the mixture and water waves are generated efficiently.
[0036] The above waves are important in allowing the coffee water-soluble solids attached to the inner wall of the honeycomb cell structure of the coffee beans to be well mixed with water. It is desirable that the main wave frequency generated by the vertical striped stirring grooves formed on the outer surface of the rotor be less than 100 Hz, but that various types of complex waves be generated so that the solid components of various coffees can be extracted.
[0037] The shape of the rotor suitable for this purpose can effectively achieve the purpose by a spiral stripe shape arranged on the rotor surface as in one embodiment of Fig. 6 according to the rotation speed of the rotor, stripes, arrangement intervals and stripe depth, width, and various uneven shapes engraved at various angles formed on the surface of the rotor including stripes.
[0038] The shapes can be optionally selected as needed.
[0039] For example, theoretically, when the rotor rotates at a speed of 60 RPM, if 20 stripes are arranged vertically around the coffee beans on the rotor, waves will be transmitted to the water with a 20 Hz vibration, and when the rotor rotates at 300 RPM, waves will be transmitted to the water with a 100 Hz vibration.
[0040] When arranging the vertical stripes above, if the grooves between the stripes are dug deep, the amplitude of the vibration increases, and when arranging the stripes or irregularities engraved in various shapes on the rotor surface, a complex wave phenomenon occurs during rotation, resulting in a complex water wave, and various types of coffee components are extracted by mixing the various water waves with the coffee solids of the coffee grounds.
[0041] The solid components of coffee beans are composed of hundreds of substances, and the extraction will inevitably vary depending on the distribution of the coffee grounds in the water, the temperature of the water, and the various waves of the water. By changing the rotation speed and shape of the rotor to create waves, the various solid components of coffee can be extracted in various ways.
[0042] In addition, when the rotor rotates, an appropriate centrifugal force is generated, and when the centrifugal force is applied to the space between the outer surface of the rotor and the filter surface, an appropriate force is applied to push the coffee solids as they pass through the filter surface, enabling smooth extraction.
[0043] In this process, as a result of the appropriate centrifugal force being applied, the mixed liquid is extracted by the centrifugal force applied in the vertical direction to the filter surface, and the residue such as coffee grounds fibers are evenly spread and attached to the filter surface in a thin layer, thereby reducing the residue that settles during the extraction process and ultimately reducing filter clogging.
[0044] A coffee beverage extraction port is placed on the bottom or lower side of the dripper so that the coffee beverage can be extracted while the mixture of coffee beans and water remains in the internal space of the dripper (11, 300) for a certain period of time and is efficiently stirred.
[0045] The size (width) of the above extraction port (110, 321) can be appropriately adjusted according to the degree of roasting of the coffee beans, the degree of grinding, and the extraction amount so that the mixture stays in the dripper for a certain period of time and is efficiently stirred. However, if the size of the extraction port (110, 321) is too large, the time for which the mixture stays in the dripper is too short, so that it is not stirred efficiently and flows down to the server container too quickly, so that the flavor of the extracted coffee beverage is not deep. In addition, if the size (width) of the extraction port is too small, the extraction time takes a long time, so that bad components of the coffee beans are over-extracted, resulting in a lot of impurities such as a burnt taste.
[0046] Preferably, the extraction time from a mixture of finely ground coffee beans and water stirred in a dripper is usually 1 minute, but it is preferable to adjust the size of the extraction port to be shorter or longer than the above extraction time according to the intended use, taking into account the degree of roasting of the beans, degree of grinding, capacity of the dripper, etc.
[0047] That is, it is a structure in which coffee beans and water are poured into the dripper and the coffee beverage is extracted through the extraction port at the bottom of the dripper while being stirred by a rotor. Unlike the conventional clever dripper extraction method in which extraction is performed after steeping for a certain period of time, this structure is one in which stirring and extraction are performed simultaneously. Basically, the extraction time is determined by the volume of the mixture of water and coffee beans poured into the dripper, the size (width) of the extraction port (110, 321), and the clogging of the filter.
[0048] When applying to lightly roasted coffee beans that are very finely ground to about 0.1 mm to 0.2 mm, the total width of the extraction port placed on the dripper is set to the discharge standard time based on the time it takes for all the water to flow out when only water is poured into the conical dripper, which is 45 seconds. However, this can be adjusted depending on whether or not the coffee beans are steeped before stirring, the grinding degree of the coffee beans, and the degree of roasting.
[0049] When extracting coffee beverages from coffee beans by applying it to medium and heavy roasted coffee beans, it is desirable to adjust the grinding degree to be coarser than 0.2 mm and to have a wider extraction port width so that the extraction time is shorter than the standard 45 seconds under the above conditions to prevent over-extraction from the carbon fiber of the coffee beans.
[0050] In addition, when extracting from compressed blocks of coffee beans or coffee beans ground to a size of 0.7 mm or larger, the extraction time can be adjusted to be longer than 1 minute and 30 seconds, and the extraction can reduce the extraction of bad flavors due to the coffee bean skin fibers remaining large or the size of the ground fibers being large.
[0051] According to experiments, if the extraction time is shorter than the above-mentioned standard time, sufficient flavor is not extracted from the coffee beans, and if it is longer than the above-mentioned standard time, a lot of bitterness and impurities such as burnt flavors are extracted from fibers such as cell walls due to over-extraction.
[0052] When increasing the capacity of the dripper in the machine-structured extractor to increase the amount of coffee beverage extraction, the standard width of the extraction port (110, 321) is increased so that the total extraction time of the coffee beverage does not change significantly compared to the above example, and the standard is set at about 1 minute to 1 minute and 30 seconds. By adjusting the time according to the degree of roasting and grinding of the coffee beans, the extraction efficiency and the flavor of the coffee beverage can be maintained.
[0053] When it is necessary to adjust the width of the above extraction port, an extraction port width adjustment part (114, 320) having a structure that can rotate in contact with the lower extraction port of the dripper can be installed to adjust, or an adjustment valve can be installed, a hole adjustment method with a pivot structure can be used to adjust, etc.
[0054] Even when using a filter having its own filter holes arranged on the outer wall of the dripper structure in place of the above-mentioned dripper, it is desirable to arrange the filter holes in the filter with the size and number of holes adjusted so that the mixture of water and coffee beans can remain in the filter for a certain period of time and be stirred by the rotor under similar extraction conditions as above.
[0055] The extraction time from the filter can be adjusted depending on the size and arrangement of the filter holes.
[0056] In order to appropriately maintain the temperature of the dripper and filter, a double-structured wall into which hot water can be poured can be installed on the outer wall of the dripper or filter, and the temperature can be maintained by arranging lamps, heating wires, etc. around the outer wall of the dripper or filter.
[0057] A coffee beverage extraction device using a stirring force suitable for the present invention includes a coffee beverage extraction unit (10) and, if necessary, a holding unit (20).
[0058] The coffee beverage extraction unit (10) functions as a server and body with a container function as a whole, and can install a dripper having an extraction port or a filter (11, 300) having its own filter function, and is configured to include a rotor (12, 500) located in the internal space of the dripper or filter (11, 300) and receiving rotational force or stirring force to generate stirring force in a mixture of ground coffee beans and water in the dripper (11, 300).
[0059] The above rotor (12, 500) can be directly rotated by the user by installing a handle (50) on the upper lid of the coffee beverage extraction unit as shown in Drawing 1 at the part connected to the rotation shaft (40), or can be rotated by receiving rotational force from the rotation part (21, 600) located on the upper part of the dripper or filter as shown in Drawing 2, Drawing 4, and Drawing 9 through the rotation shaft. The rotor serves to stir the ground coffee beans and water in the dripper or filter (11, 300) by the rotational force, and has a shape suitable for the purpose, such as a cone shape made of various materials such as plastic, metal, and wood and a spiral stripe arranged.
[0060] The above rotor (12, 500) can be rotated at an appropriate rotational speed by arranging gears when generating rotational force by a motor or handle.
[0061] Depending on the purpose, a rotor having sufficient volume may be fixed to the upper lid, etc., with a structure similar to the example illustrated in Drawing 3, and the coffee beverage extraction unit (10) may be shaken by a hand motion by the user during drip to stir the mixed liquid, or vibration or rotational force may be transmitted to the coffee beverage extraction unit (10) from an external device to provide stirring force.
[0062] When the above rotor (12, 500) rotates, the ground coffee beans and water in the dripper or filter (11, 300) are efficiently stirred, and the coffee beans pass through the extraction port or the filter through the filter paper filter installed in the dripper (11, 300), and the water-soluble components of the coffee beans are extracted out of the dripper or filter (11, 300) and collected in the server container (13, 800).
[0063] The surface of the rotor can be configured with a complex arrangement of various spiral-shaped stripes and various uneven shapes on the surface to effectively transmit waves to the mixed liquid.
[0064] The configuration of each device may vary depending on the intended use, and in all embodiments of the present invention, a handle may be added to the coffee beverage extraction unit (10) as needed.
[0065] The holder (20) may be configured to include a rotating portion (21) configured as a motor for transmitting rotational force to the rotor (12) and a control portion (22) for controlling rotational force such as rotational speed, while holding the coffee beverage extraction portion (10) and may be configured to support the dripper by a support, as shown in the example illustrated in Drawing 5, and may include a component for installing a heating wire (23) on the dripper support and maintaining the temperature of the heating wire (23) at a constant temperature.
[0066] In the case of a small home extractor, the method of placing the rotating part (21) or manual handle (50) at the top may be as shown in Drawing 1 or Drawing 2, in which the rotating part (21) or manual handle (50) is installed at the lid portion or top of the coffee beverage extraction part (10) and a structure is made to rotate the rotor placed in the internal space of the dripper or filter.
[0067] The above rotating part (21) is connected to a speed controller (22) and a control unit so that it can be adjusted to suit various extraction conditions.
[0068] When applied to a machine structure such as a coffee maker, the set configuration of the dripper or filter (300), the rotor (500), and the rotating part (600) can be separated as in the embodiments of Drawings 4 to 8, and the server container (800) can be separated and arranged according to the purpose.
[0069] Specifically, in the machine structure extraction device, the rotor (500) is raised and lowered by the lifting means (700), and when the dripper (300) is fixed at the extraction position, the rotor is lowered into the dripper to stir the coffee bean powder and hot water, and after a certain period of time, the rotor returns to the original position.
[0070] In order to maintain the temperature of the dripper (300) at an appropriate temperature, a heater such as a lamp or heating wire can be installed around the dripper (300).
[0071] The rotation speed of the rotor can be set by the rotation control unit (620), and the elevation height of the lifting means (700) and the temperature of the heater can also be adjusted.
[0072] An extraction valve (320) that can control the extraction area of the extraction port (321) can be installed at the bottom of the dripper.
[0073]
[0074] *A server container (800) can be installed to contain and separate the extracted coffee beverage.
[0075] A guide groove can be installed on the lower part of the machine structure device base (100) to guide a support (200) for mounting the dripper so that the dripper or rotor can be moved to a position where it can be aligned.
[0076] The coffee extractor of the above machine structure can adjust the rotation speed of the rotor, the area of the extraction port, the temperature of the heating element, etc. according to the condition of the coffee beans by a program to suit the user's preference, and by applying AI, it can extract a coffee beverage with the optimal flavor according to the individual's preference through a learning effect.
[0077] The coffee beverage extraction device according to the present invention is applicable to very finely ground coffee beans of about 0.1 to 0.2 mm in size, and provides the effect of efficiently extracting a coffee beverage with a deep flavor and a significantly shortened extraction time even from weakly ground coffee beans.

[0092] Hereinafter, the coffee beverage extraction method and device of the present invention will be described in detail according to an embodiment illustrated in the attached drawings.
[0093] In an extraction method according to one embodiment of the present invention, a dripper (11, 300) is placed in a coffee beverage extraction unit (10), and then a filter paper is placed in close contact with the inner wall of the dripper (11, 300).
[0094] The capacity of the dripper is 600ml, and the extraction port width is adjusted to 50 seconds for complete extraction when the dripper is filled with water.
[0095] 30g of medium roasted coffee beans ground to a grinding size of about 0.2mm for espresso are placed in the filter paper of the above dripper, 420ml of hot water at 95℃ is poured in without letting it steep, and then a conical rotor with 20 stripes and a volume of 160cc is used to stir at an average of 80RPM.
[0096] Fine coffee beans remain well mixed with water, and 270ml of coffee beverage is extracted in 50 seconds without filter clogging, resulting in a coffee beverage with a smooth, deep flavor.
[0097] The extraction time after pouring water was less than 1 minute, which is similar to the total time taken for espresso extraction (30 seconds) and the tamping process.
[0098] By expanding the filter area through the method and principle presented in the means of the present invention, the phenomenon of filter clogging was greatly reduced, and not only was the extraction speed shortened, but the flavor of the coffee was also deep and good.
[0099] In another embodiment of the extraction method of the present invention, 30 g of lightly roasted coffee beans were very finely ground to a size of 0.1 mm to 0.2 mm, which is smaller than the size of espresso, and placed in a 700 ml dripper. After steeping in 60 ml of hot water for 20 seconds, 340 ml of 97°C hot water was poured into the dripper and stirred with a rotor for 1 minute, 270 ml of coffee beverage was extracted through the extraction port.
[0100] The natural flavor of lightly roasted coffee beans was good, and there was no over-extraction such as impurities, bitterness, or burnt taste through short extraction times, and there was no particular filter clogging despite the fine grinding.
[0101] In the above example, the rotor speed was 40 rpm on average, the rotor used a cone with a volume of 200 cc, the stripe spacing was arranged so that 30 spiral stripes were arranged around the rotor, the width of the dripper's extraction port was adjusted to 60 seconds in total when only water was filled into the 700 ml capacity dripper, and the time it took for the mixture to pass through the filter and be extracted from the extractor while the coffee beans and water were stirred was 1 minute, and 270 ml of coffee beverage was extracted.
[0102] From the above examples, it can be confirmed that the extraction method of the present invention can efficiently extract a flavorful coffee beverage when applied to various roasting degrees and grinding degrees by adjusting the width of the extraction port and the amount and temperature of coffee beans and water, the volume and shape of the rotor, the rotation speed, and whether or not to steam, depending on the roasting degree and grinding degree of the coffee beans.
[0103] Hereinafter, a coffee beverage extraction device having a machine structure according to the present invention will be described in detail according to a preferred embodiment illustrated in the attached drawings.
[0104] Figures 7 to 11 show preferred embodiments of a coffee beverage extraction device according to the present invention.

[0111] The above dripper holder (230) is formed as a conical surface whose inner surface corresponds to the outer surface of the dripper (300), so that when the dripper (300) is inserted into the dripper holder (230), the dripper (300) is stably supported by the dripper holder (230).
[0112] A guide groove (150) is formed on the upper surface of the base plate (110), and a guide projection (250) that is inserted into the guide groove (150) is provided on the lower surface of the server container mounting plate (210), so that the support (200) can be guided between the extraction position and the preparation position.
[0113] The guide home (150) can be extended to the end of the device base (100) as needed.
[0114] The above dripper (300) is formed in a cone shape with the lower part inserted into and supported by the dripper holder (230).
[0115] A dripper handle (310) is provided on the upper outer surface of the above dripper (300).
[0116] The lower part of the above dripper (300) has an extraction port (321), and a valve (320) for opening and closing the extraction port (321) and controlling the extraction area is provided.
[0117] The above valve (320) can open and close the extraction port (321) and control the extraction area by turning the opening and closing and control handle (322) provided on one side.
[0118] The purpose of controlling the extraction time by adjusting the extraction area of the extraction port (321) and the amount of coffee beans and water by the above valve (320) is to control the extraction time and the flavor of the coffee beverage.
[0119] The above dripper heater (400) is formed in a form in which the heating wire is embedded inside the insulating material and is installed in a state in which it is wound around the outer surface of the dripper (300).
[0120] The dripper heater can be installed wrapped around the outer surface of the dripper or separately installed as a lamp or heating wire on the main body such as a vertical stand to heat the dripper when it is settled in the extraction position.
[0121] The temperature of the above drip heater can be controlled by a temperature control switch (410) provided on the front of the support (200).
[0122] It is preferable that the above rotor (500) be formed in a cone shape with spiral stripes having an outer surface corresponding to the inner surface of the above dripper (300).
[0123] Depending on the shape of the rotor (500) and the depth of insertion into the dripper (300), the space formed between the inner surface of the dripper (300) and the outer surface of the rotor (500) can be varied.
[0124] That is, if the insertion depth of the rotor (500) into the dripper (300) is deepened, the space between the inner surface of the dripper (300) and the outer surface of the rotor (500) becomes narrower.
[0125] Conversely, if the insertion depth of the rotor (500) into the dripper (300) is made shallow, the space between the inner surface of the dripper (300) and the outer surface of the rotor (500) becomes narrower.
[0126] A plurality of stirring grooves (510) are formed on the outer surface of the rotor (500) to increase stirring efficiency.
[0127] It is preferable that the above stirring groove (510) be formed in a helical shape to efficiently stir hot water and coffee powder.
[0128] A rotation shaft (520) is coupled to the center of the upper surface of the above rotor (500).
[0129] The above rotor (500) can be made of glass, wood, metal, ceramics, synthetic resin, etc.
[0130] The above-mentioned rotation means (600) is installed so as to be able to ascend and descend inside the cabinet (130) and includes a rotation motor (610) whose rotation motor shaft is coupled to the rotation shaft (520).
[0131] The rotation speed of the above-mentioned rotary motor (610) can be set by the rotation speed setting switch (620) installed on the front of the cabinet (130).
[0132] It is preferable to set the rotation speed and operating time of the rotation motor (610) by the rotation speed setting switch (620) to 2 minutes or less and 150 rpm or less.
[0133] When the rotation speed of the above-mentioned rotary motor (610) is set to 150 rpm or more, it is desirable to reduce the volume of the rotor to prevent the stirred water from excessively passing through the filter due to centrifugal force.
[0134] In order to efficiently achieve the purpose of the present invention, various coffee flavors can be obtained by combining the extraction port area, heater temperature, and rotation speed in various ways.
[0135] The above-mentioned lifting means (700) includes an lifting motor (710) fixed to the inner upper side of the cabinet (130), an lifting screw (720) coupled to the lifting motor shaft of the lifting motor (710), and an lifting nut block (730) coupled to one side of the rotation motor (610) and screw-fitted to the lifting screw (720).

[0139] The above-mentioned lifting motor (710) can be set by the lifting distance setting switch (760) installed on the front of the above-mentioned cabinet (130).
[0140] When the lifting distance is set by the lifting distance setting switch (760), the rotation speed of the lifting motor (710) is set, and the lifting distance is determined by the rotation speed and the lead value of the screw portion of the lifting screw (720) and the lifting nut block (730).
[0141] The above server container (800) is formed in a form equipped with a handle (810).
[0142] When the above server container (800) is placed on the server container mounting plate (210), the server container (800) can be accurately placed directly below the dripper (300) by placing the server container (800) on the server container mounting groove (240).
[0143] Additionally, a power terminal (910) to which a power cord can be connected is provided on the rear of the base plate (110).

[0146] Hereinafter, the operation of the coffee beverage extraction device of the present invention will be summarized and explained.
[0147] With the power cord (not shown) connected to the power terminal (910), the support (200) is placed in the ready position on the base plate (110), the dripper (300) is inserted into the dripper holder (230), and the server container (800) is placed on the server container mounting plate (210).
[0148] At this time, by inserting the guide projection (250) provided on the lower surface of the server container mounting plate (210) into the guide groove (150) formed on the upper surface of the base plate (110), the support (200), the dripper (300) supported by the support, and the server container (800) can move accurately between the extraction position and the preparation position.
[0149] In addition, the server container (800) can be seated in an accurate position with respect to the server container seat plate (210) by being seated in the server container seat groove (240) formed on the upper surface of the server container seat plate (210).
[0150] Place a filter (not shown) on a dripper (300) with a set extraction area and pour in ground coffee beans and water.
[0151] The rotation speed of the rotation motor (610) is preset by the rotation speed control unit (620), the elevation distance is preset by the elevation distance setting switch (750), and the heating temperature of the dripper heater is set by the temperature control switch (410), and the support (200) is moved to the extraction position.
[0152] At this time, the guide projection (250) provided on the lower surface of the server container mounting plate (210) is inserted into the guide groove (150) provided on the upper surface of the base plate (110), so that the support (200) moves in a stable position without being disturbed.
[0153] When the support (200) is moved to the extraction position, the rear of the server container mounting plate (210) activates the sensor (920), and accordingly, the heater (400), rotation motor (610), and elevation motor (710) are operated.
[0154] The lifting motor (710) rotates at a number of rotations corresponding to the lowering distance set by the lifting distance setting switch (710), and the rotating motor (610) and the rotor (500) are lowered by the screw action of the lifting screw (720) and the lifting nut block (730), and the rotor (500) is inserted into the dripper (300) to the set depth.
[0155] At this time, the rotor (500) is inserted into the dripper (300) to a depth set and effectively stirs the coffee beans and water introduced into the dripper (300).
[0156] Accordingly, a coffee beverage having a desired flavor can be extracted through the extraction port (321) of the dripper.
[0157] When the extraction of the coffee beverage is completed according to the set procedure, the power to the rotary motor (610) and the dripper heater (400) is cut off, so that the rotation of the rotor (500) stops and the heating of the dripper heater (400) stops.
[0158] Next, the lifting motor (710) is operated and rotates in the opposite direction to the lowering direction, and the rotation motor (610) and the rotor (500) are raised to the ready position by the screw action of the lifting screw (720) and the lifting nut block (730).
[0159] When the elevation of the rotary motor (610) and the rotor (500) is completed, power to the lifting motor (710) is cut off, and the rotary motor (610) and the rotor (500) stop at the elevated position.
[0160] In this state, when the support (200) is moved back to the ready position, a series of processes by this device are completed.
[0161]
