The preparation method of the present invention comprises the following steps: mixing pea starch milk and a liquefying enzyme for liquefaction to obtain a liquefied liquid, with the DE value of the liquefied liquid being 8%-11%; and subjecting the liquefied liquid to a molecular rearrangement reaction under an acidic condition to obtain the resistant dextrin, with the mass content of dietary fiber in the resistant dextrin being ≥ 93%. In the present invention, pea starch is used as a raw material, and after liquefaction, a crude dextrin material liquid (liquefied liquid) with a suitable DE value is easily obtained. In the present invention, the DE value of the liquefied liquid is controlled to be 8%-11%, and the prepared resistant dextrin has a high dietary fiber content and good digestion resistance.
