OIL DISPERSION COMPOSITION COMPRISING A BIOPOLYMER COMPLEX The present invention relates to a dispersion composition comprising a continuous oil phase and a plurality of biopolymer complexes dispersed in the oil phase, wherein the biopolymer complex comprises: (a) at least one biopolymer; and (b) at least one lipophobe selected from sugar alcohols.
