Production method of soybean meat

Abstract

To provide a production device of soybean meat capable of suppressing increase of a cost and increase of a size by coordination of pulverization, agitation, kneading and heating without waste, and shortening a cooking time.SOLUTION: In a production device, ingredient storage chambers 4 for storing ingredients are continuously provided above a soybean processing chamber 2 for processing soybeans. A drive shaft 6 for transmitting rotary force received from a transmission shaft 20 is inserted into the soybean processing chamber 2. The transmission shaft 20 performs high speed rotation at which the soybeans can be pulverized in normal rotation, and can perform low speed rotation in which kneading can be performed in reverse rotation. A kneading blade 10 is coupled by a first one way clutch which performs idling in normal rotation of the drive shaft 6. An agitation blade 12 is formed integrally with the kneading blade 10 and is supported to a spindle 18a extended from a lid 18 through a second one-way clutch which performs idling in a reverse direction to the first one-way clutch. Steam introduced into the soybean processing chamber 2 through a steam introduction path 3 is also used for agitation and heating of the ingredients through a partition 4b of the ingredient storage chamber 4.SELECTED DRAWING: Figure 1
