Abstract

To provide a production method of a dried sweet potato, capable of producing a tasty dried sweet potato.SOLUTION: In production of a dried sweet potato, the following heating step and temperature holding step are performed. In the heating step, a sweet potato is heated by steaming for 0.5-2.0 hours, and in the temperature holding step, the sweet potato is held for 6-48 hours at 50-85°C in a sealed state after the heating step. In a drying step, the sweet potato is dried after the temperature holding step. By the method of heating by steaming the sweet potato for 0.5-2.0 hours, starch contained in the sweet potato is effectively gelatinized to enhance sweetness of the sweet potato. Furthermore, by the temperature holding step of holding the sweet potato for 6-48 hours at 50-85°C in a sealed state, enzyme contained in the sweet potato is effectively activated and a change is generated in components of the sweet potato due to an action of the enzyme and an acid taste is added to the sweet potato.
