AI Technical Summary
Traditional Indian sweets, or Mithai, are calorie-dense, high-sugar, and high-fat, leading to glucose spikes and limited diabetic-friendly options that still deliver high-calorie experiences, with current sugar-free alternatives not effectively managing blood sugar levels.
A confectionery product comprising esterified propoxylated glycerol and natural sweeteners like Allulose, Stevia, and Erythritol, combined with dairy and wheat/chickpea flour, produced using a method that includes adding esterified propoxylated glycerol to the product components and treating them to create a low-GI, low-calorie, sugar-free, and low-fat sweet treat.
The product achieves a reduced glycemic index and calorie content, lowering cholesterol and providing a similar sweet experience without glucose spikes, with esterified propoxylated glycerol and natural sweeteners used in specific proportions to enhance shelf life and nutritional profile.

Abstract
Description
A CONFECTIONERY PRODUCT AND A METHOD FOR PRODUCING A CONFECTIONERY PRODUCTREFERENCE TO RELATED APPLICATIONS
[0001] This application claims the benefit of U.S. Provisional Patent Application No. 63508513, titled “A Low-Gi And Low-Calorie Edible Item Comprising A Composition Of Esterifiedpropoxylated Glycerol And Natural Sweeteners”, filed June 16, 2023, which is incorporated by reference herein in its entirety.FIELD OF THE INVENTION
[0002] Generally, the present disclosure relates to the field of food or edible material: processes, compositions, and products. More specifically, the present disclosure relates to a confectionery product and a method for producing a confectionery product.BACKGROUND OF THE INVENTION
[0003] The field of food or edible material: processes, compositions, and products, may be technologically important to several industries, business organizations, and / or individuals. In particular, the use of food or edible material: processes, compositions, and products, is prevalent for low-GI and low-calorie edible items.
[0004] Traditional Indian sub-continental sweets, which are referred to colloquially as Mithai, traditionally are calorie-dense, high-sugar, and high-fat in composition. With the ever-growing threat of major diseases such as diabetes, there are limited solutions that deliver a similar experience without impacting ‘glucose spikes.’ Current solutions on the market provided by manufacturers, although labeled sugar-free, still deliver the dangerous effects of sugar, in addition to the high-calorie experience. These products also require refrigeration. Current sweet items (or Mithai) on the market use Polyols like Maltitol, oligosaccharide fructans, Saccharin, and sucralose.
[0005] Another critical aspect when looking at diabetic or keto-friendly mithai is the amount of carbohydrates. The carbohydrates in current foods or dishes also spike blood sugar levels.
[0006] Therefore, there is a need for an improved confectionery product and a method for producing a confectionery product that may overcome one or more of the above-mentioned problems and / or limitations.SUMMARY OF THE INVENTION
