[0028] Additive Composition

[0029] The disclosure features “food or beverage additive” and “additive” (used interchangeably here) compositions and methods of making and using the same. The disclosure is based, at least in part, on the discovery that for solid additives, water-soluble gum improves the solubility of the additive composition described here, which includes at least two amino acids, as opposed to other powdered compositions without a water-soluble gum, which can result in clumping. Accordingly, it was found that the combination of a water-soluble gum and the amino acids in a powdered additive composition reduced or avoided clumping, while producing a high-protein food or beverage product.

[0030] In some embodiments, the present disclosure provides a solid, e.g., powdered, food or beverage additive composition, comprising: (1) a water-soluble gum; (2) at least two amino acids; (3) an electrolyte or electrolyte mixture; and (4) an anti-caking agent. The solid additive composition of the disclosure, in some embodiments, further comprises a flavorant, one or more botanical extracts, any other ingredient that enhances the composition for its purpose, or combinations thereof. Additional embodiments of the disclosure are directed to a powdered additive composition, comprising: (1) a water-soluble gum; and (2) at least two amino acids selected from the group consisting of: alanine, arginine, asparagine, aspartic acid, cysteine, glutamic acid, glutamine, glycine, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, proline, serine, threonine, tryptophan, tyrosine, and valine, where the powdered additive composition can be combined with a food or beverage to produce a high- protein food or beverage product. In some embodiments, additional ingredients, such as the electrolyte and anti-caking agent, can contribute to increasing solubility of the additive composition in a liquid.

EXAMPLES

[0078] The following examples illustrate specific aspects of the instant description. The examples should not be construed as limiting, as the example merely provides specific understanding and practice of the embodiments and its various aspects.

[0079] Example 1: Solubility Tests

[0080] The solubility of amino acids (3 g / L, 5 g / L, 8 g / L) in combination with gum acacia was tested. The gum acacia was tested at 0.5 g / L, 1 g / L, and 2 g / L and at different particulate sizes: 63 microns (“Fine”) and 200 microns (“Granulated”). A formulation containing five amino acids, where the amino acids had a particle size of 149 microns to 354 microns, was also tested (“Unmilled”). A “Control” with the amino acids and without gum acacia was also used. The solubility test was performed using standard procedures. Briefly, the amino acids and gum acacia were combined in amounts indicated in FIG. 1 (AA at 3 g / L), FIG. 2 (AA at 5 g / L), and FIG. 3 (AA at 8 g / L) to form the additive composition. The solubilities of “2AA” (aspartic acid and serine); “5AA” (aspartic acid, serine, threonine, tyrosine, valine); and “8AA” (aspartic acid, glycine, isoleucine, lysine, serine, threonine, tyrosine, valine) were tested. The additive composition, containing amino acids and gum acacia, and separately, the control were gradually added to water (100 mL) while continuously stirring. The temperature was kept at a constant 70.2°F±1. FIGs. 1-3 show the time to solution measured until the additive composition and control were completely dissolved.
