Abstract

[Problem] The present invention addresses the problem of producing non-fried noodles having a fresh noodle-like food texture. [Solution] Non-fried noodles having a fresh noodle-like food texture can be produced by: kneading a raw material powder and kneading water to prepare noodle dough; preparing noodle strings from the prepared noodle dough; boiling the prepared noodle strings with a boiling solution having a table salt concentration of 1.0-5.0% (W / V); and then drying the resultant without washing with water, wherein said non-fried noodles have a surface that has moderate tension and is soft, and a central part that has moderate elasticity and a powdery texture. Description

Non-fried noodle manufacturing method

[0001] The present invention relates to a method for producing non-fried noodles.

[0002] Conventionally, instant noodles can be broadly categorized into fried noodles and non-fried noodles based on the drying method. Fried noodles are made by frying fresh noodles or gelatinized noodles in oil and then drying them. On the other hand, non-fried noodles are made by drying fresh noodles or gelatinized noodles using a process other than frying in oil, such as hot air drying.

[0003] Generally, non-fried noodles have denser noodle strands than fried noodles, and are therefore considered to have a texture similar to that of fresh noodles. However, although non-fried noodles have a texture closer to that of fresh noodles compared to fried noodles, the reality is that the texture is actually quite different from that of fresh noodles. [0019] -Boiling Process- The present invention is characterized in that the noodle strands are boiled in a boiling liquid with a salt concentration of 1.0 to 5.0% (W / V). A method for producing non-fried noodles, comprising: a noodle dough preparation step of kneading raw material flour and kneading water to prepare noodle dough; a noodle string preparation step of preparing noodle strings from the noodle dough; a boiling step of boiling the noodle strings in a boiling liquid having a salt concentration of 1.0 to 5.0% (W / V); and a drying step of drying the boiled noodle strings without rinsing with water.

2. The method for producing non-fried noodles according to claim 1, wherein the boiling step is carried out in a boiling liquid at 80 to 100°C for 5 to 60 seconds.

3. The method for producing non-fried noodles according to claim 1 or 2, characterized in that a loosening agent is contained in the boiling liquid during the boiling step.
