[0001] The present invention relates to instant fried noodles that have improved flavor reduction caused by a reduction in sodium content.
[0002] In recent years, many so-called low-salt products with reduced sodium content have been launched on the market in order to reduce health risks. Claims
1. Instant fried noodles with reduced sodium content, characterized in that the instant fried noodles contain 2-acetyl-1-pyrroline as an active ingredient to improve the reduced flavor caused by the reduced sodium content.
2. Instant fried noodles according to claim 1, further comprising at least one active ingredient selected from the group consisting of trans-2-decenal, 2,4-decadienal, and allyl isothiocyanate.
3. A method for improving the flavor of instant fried noodles with reduced sodium content, comprising adding 2-acetyl-1-pyrroline to the soup for the instant fried noodles.
