Abstract

The present invention discloses a transparent milk beverage and a preparation method thereof, and a gel prepared therefrom, the milk beverage comprising water, more than 1.0% of whey protein isolate, 0.20–1.00% of a hydrocolloid and 0.03–0.40% of a buffering salt, based on the weight of the milk beverage, wherein the milk beverage is a colourless transparent liquid, the pH thereof at room temperature being 6–8. According to the technical solution of the present invention, the milk beverage complies with the standard GB / T 21732-2008 for milk beverages, is a colourless transparent liquid, remains stable over its shelf life, and can be gelled simply by adding an acid so that there can be diverse application scenarios of the milk beverage.
