Abstract

The invention relates to oleogel compositions and dairy food products and dairy-analogue food products comprising the oleogel compositions. In particular, the invention relates to the use of oleogel compositions to reduce the saturated fat content in dairy food products and dairy-analogue food products, while simultaneously providing desirable organoleptic properties in said food products.
