Abstract

Method of preparing an edible meal for bakery products from surplus bakery products, such as bread products, comprising the steps of: granulating a surplus bakery product by granulating means in order to obtain a granulated material, adding the granulated material to a closeable holding container comprising an inner volume for receiving and holding the granulated material, mixing the granulated material with a leaven of Bacillus subtilis of at least 103 CFU / g granulated material in the closeable holding container in order to obtain a fermented mass, inactivating at least part of the Bacillus subtilis by inactivating means in order to achieve an amount of Bacillus subtilis of not more than 104 CFU / g fermented mass, drying the fermented mass into a granular and / or powdery substance in order to obtain the edible meal for bakery products.
