[0001] Composition and process for a water-soluble dietary fibre containing instant oil fried noodle
[0002] The present invention relates to a composition and process for the production of a water-soluble dietary fibre containing instant oil fried noodle. In particularly the invention relates to a process for the production of a water-soluble dietary fibre containing instant oil fried noodle using a pre-blend of wheat flour and water-soluble dietary fibre.
[0003] It is already known to have non-fried noodles using non-wheat flours like oat flour to achieve a higher fibre content. The manufacturing of instant oil fried noodles with cereal flour and especially with wheat flour and higher amounts inclusion of water-soluble dietary fibre (>6%) using lamination technology has been challenging. It shows dough rheological and machinability issues like sticky dough, poor sheeting, sheet breakage or noodle formation. Water-soluble dietary fibres are highly soluble in water (-75-80% saturation point). Consequently, the direct addition of water-soluble dietary fibres in the noodle dough causes significant alteration in water absorption kinetics and rheology of noodle dough. Using existing lamination technology (sheet / slit / cut and optionally fold), the machinability operations such as dough kneading and sheeting through rollers get severely impacted when the water- soluble dietary fibres are added at greater than 4 wt%. It resulted into poor dough development, stability and stickiness with prominently visible surface disruptions and breakages in laminated dough sheets.
[0004] Therefore, to provide nutritional and health benefits of higher amounts of water- soluble dietary fibre in instant oil fried noodles it is hence essential to explore a process having good machinability and rheology of the noodle dough and having a pleasant taste.
[0005] Summary of the invention
[0006] The object of the present invention is to improve the state of the art and to provide an improved or at least an alternative solution to overcome at least some of the inconveniences described above. The object of the present invention is achieved by the subject matter of the independent claims. The dependent claims further develop the idea of the present invention.
[0007] Particularly, the object of the present invention is to provide a process for the production of a water-soluble dietary fibre containing instant oil fried noodle having good machinability and sensory attributes, especially regarding dough stickiness, dough sheeting, sheet breakage of noodle dough, noodle formation, texture, taste and a shelf life of at least 9 months of the product.
[0008] Accordingly, the present invention provides in a first aspect a process for the production of an instant oil fried noodle comprising 45 to 80wt% of cereal flour by weight of the total composition, 6 to 25wt% of water-soluble dietary fibre by weight of the total composition, 0.2 to 3.5wt% of Kansui salts by weight of the total composition, 0.5 to 10wt% wheat gluten by weight of the total composition and 10 to 30 wt% of oil by weight of the total composition, the process comprising the steps of: a) Mixing 50 to 90wt% of water-soluble dietary fibre with 10 to 50wt% of cereal flour by weight of the dry mix; b) Hydrating and heating the mixture of step a) to a temperature between 60 to 100°C, wherein a ratio of dry fibre-flour mix to water is 1 :1 to 1 :5; c) Drying the mixture of step b) at a temperature between 50 to 150°C to obtain a pre-mix; d) Mixing the pre-mix from step c), cereal flour, wheat gluten and optionally other dry ingredients with the Kansui salts and water to form a dough; e) Sheeting and slitting the dough to obtain noodle strands; f) Steaming the noodle strands from step e) by using saturated steam within 0.5 to 15min; g) Cutting the noodle strands from step f) and optionally folding; h) Pre-drying to remove moisture before frying at a temperature between 50 to 120 °C and 15 to 500 sec; i) Frying the noodle strands from step h) in oil at a temperature between 110 to 170 °C and a frying time between 30 to 200 seconds; j) Cooling.

[0010] It has been surprisingly found by the inventors that by using a pre-mix of cereal flour and water-soluble dietary fibre, wherein cereal flour and water-soluble dietary fibre has been mixed, hydrated, heated and dried to obtain the pre-mix, existing lamination technology has acceptable to good machinability and good sensory attributes in terms of non-sticky dough, good sheeting, less or no sheet breakage, good texture (not firm, chewy) and good flavor profile. To obtain the pre-mix 50 to 90wt% of water-soluble dietary fibre are mixed with 10 to 50wt% of cereal flour, preferably wheat flour. A higher flour content in the pre-mix will lead to more gelatinization by heating the pre-blend and more stickiness of the noodle dough.

[0050] Standard instant oil fired noodle manufacturing process involves mixing of pre-mix, cereal flour (wheat flour), wheat gluten and kansui solution in a batch mixer. Noodle line used for the production is from CCK supplier. Dough from mixer is passed through rollers to form two sheets thereafter compounding the two dough sheets into one, reducing dough sheet to a desired thickness through a series of rollers. The final sheet is passed through the kiriha to slit the dough sheet and form the noodle strands, which are then steamed in a tunnel.

Claims
Claims1 . A process for the production of an instant oil fried noodle comprising 45 to 80wt% of cereal flour by weight of the total composition, 6 to 25wt% of water-soluble dietary fibre by weight of the total composition, 0.2 to 3.5wt% of Kansui salts by weight of the total composition, 0.5 to 10wt% wheat gluten by weight of the total composition and 10 to 30 wt% of oil by weight of the total composition, the process comprising the steps of: a) Mixing 50 to 90wt% of water-soluble dietary fibre and 10 to 50wt% of cereal flour; b) Hydrating and heating the mixture of step a) to a temperature between 60 to 100°C, wherein a ratio of dry fibre-flour mix to water is 1 :1 to 1 :5; c) Drying the mixture of step b) at a temperature between 50 to 150°C to obtain a pre-mix; d) Mixing 7.5 to 35wt% of the pre-mix from step c), cereal flour, wheat gluten and optionally other dry ingredients with the Kansui salts and water to form a dough; e) Sheeting and slitting the dough to obtain noodle strands; f) Steaming the noodle strands from step e) by using saturated steam within 0.5 to 15 min; g) Cutting the noodle strands from step f) and optionally folding; h) Pre-drying to remove moisture before frying at a temperature between 50 to 120 °C and 15 to 500 sec; i) Frying the noodle strands from step h) in oil at a temperature between 110 to 170 °C and a frying time between 30 to 200 seconds; j) Cooling.
2. A process for the production of an instant oil fried noodle as claimed in claim 1 , wherein 10 to 30wt% of the premix are added in step d).
3. A process for the production of an instant oil fried noodle in any one of claims 1 to2, wherein the cereal flour is wheat flour, oat flour, corn flour, rice flour, barley flour, millet flour or combinations thereof, preferably wheat flour.
4. A process for the production of an instant oil fried noodle in any one of claims 1 to3, wherein the cereal flour is only wheat flour.
5. A process for the production of an instant oil fried noodle in any one of claims 1 to4, wherein the water-soluble dietary fibre is beta-glucan soluble fiber, fructooligosaccharide, galacto-oligosaccharide, inulin, dextrin, polydextrose, psyllium husk or a combination thereof, preferably fructo-oligosaccharide, or a combination thereof.
6. A process for the production of an instant oil fried noodle in any one of claims 1 to5, wherein the cereal flour is wheat flour and wheat flour is the only flour used in the composition and wherein the water-soluble dietary fibre is fructooligosaccharide, dextrin or a combination thereof.
7. A process for the production of an instant oil fried noodle in any one of claims 1 to6, wherein the kansui salts comprises a mixture of sodium chloride, sodium carbonate, potassium carbonate, sodium phosphate or a combination thereof.
8. A process for the production of an instant oil fried noodle in any one of claims 1 to7, wherein the kansui salts are added as a solution of 1 to 10wt% of sodium chloride, sodium carbonate, potassium carbonate and sodium phosphate (based on the total amount of the solution) in 90 to 99wt% of water (based on the total amount of the solution).
9. A process for the production of an instant oil fried noodle as claimed in any one of claims 1 to 8, wherein the obtained premix in step c) is milled to a particle size between 50 to 400 pm.
10. A process for the production of an instant oil fried noodle as claimed in any one of claims 1 to 9, wherein the instant oil fried noodle does not comprise a thickening polysaccharide selected from the group of alginic acid salt, propylene glycol ester of alginic acid, agar or a combination thereof.
11. An instant oil fried noodle comprising 45 to 80wt% of cereal flour by weight of the total composition, 0.2 to 3.5wt% of Kansui salts by weight of the total composition, 0.5 to 10wt% of wheat gluten by weight of the total composition and 10 to 30wt% of oil by weight of the total composition, wherein the instant oil fried noodle has an amount of water-soluble dietary fibre between 6 to 25wt% by weight of the total composition.

An instant oil fried noodle as claimed in claim 11 comprising 45 to 80wt% of wheat flour by weight of the total composition, 0.2 to 3.5wt% of Kansui salts by weight of the total composition, 0.5 to 10wt% of wheat gluten by weight of the total composition and 10 to 30wt% of oil by weight of the total composition, wherein the instant oil fried noodle has an amount of water-soluble dietary fibre between 6 to 25wt% by weight of the total composition and wherein the water-soluble dietary fibre is selected from the group consisting of dextrin or fructo-oligosaccharide or a combination thereof.
13. The use of the instant oil fried noodle as claimed in any one of claims 11 to 12 for preparing a food product.
