Abstract

Arrowroot starch has a high demand in Bataan since it is the main ingredient in making Araro Cookies which is one of the known "Pasalubong" products from Bataan. In retrospect, araro cookies producers in Samal, Bataan were using arrowroot starch. The arrowroot starch may still be available at present, but the quality is subpar, particularly in terms of color, appearing. This will affect the quality of the araro cookies makers. This deficiency will impact the quality of the araro cookies produced. Initiating the production of high-quality araro flour within Bataan will benefit local araro cookie manufacturers.
