Abstract

The present utility model generally relates to a spread, but more particularly to the composition of a spread made from jackfruit (Artocarpus heterophyllus) seeds. A composition of jackfruit (Artocarpus heterophyllus) seed spread, containing the following ingredients: 1,000 g jackfruit seeds, 250 g skimmed milk, 600 g vegetable oil, 400 g salt, 20 g white sugar, 2,500 g water, 10 g polysorbate 80, 10 g xanthan gum, 10 g citric acid, 5 g sodium benzoate, and 5 g potassium sorbate. Jackfruit seed spread has three variations: plain, coconut milk, and chocolate flavors. Jackfruit seeds were successfully transformed into a nutritious and flavorful spread, demonstrating the feasibility of utilizing an oftendiscarded byproduct for food production, particularly in plain and chocolate flavors.
