Description

[0001] METHOD OF PREPARING A MOIST PET FOOD COMPOSITION AND A MOIST PET FOOD COMPOSITION OBTAINABLE THEREFROM

[0002] The present invention relates to a method of preparing a moist pet food composition. The invention further relates to a moist pet food composition obtainable by the method. The invention also relates to the use of faba bean proteins in a moist pet food composition.

[0003] Moist pet food compositions are known per se and are typically formulated to provide essential nutrients that pets, such as cats and dogs for instance, need to maintain their health and well-being. Moist pet food compositions typically contain a mixture of nutrients, which may include proteins, fats, carbohydrates, vitamins, and minerals, to meet the specific dietary requirements of the pets. The nutrients in the moist pet food composition originate from pet food ingredients that are provided and processed in the preparation of the pet food composition. Moist pet food compositions, also referred to as wet pet food compositions, have a relatively high total moisture content of at least 50 wt.%.

[0004] Animal blood plasma (ABP) is a commonly used ingredient in moist pet food compositions, especially high-quality pet food compositions, due to its excellent functional properties, for instance described by Polo, Javier, et al. "Functional properties of spray-dried animal plasma in canned petfood.", Animal feed science and technology 122.3-4 (2005): 331 -343. ABP may contribute to a compact texture of moist pet food and promote cohesion between the different ingredients of a moist pet food composition. Further, ABP may contribute to enhancing the palatability when compared to other binding agents, such as wheat gluten. Therefore, ABP is considered a unique product in moist pet food compositions, because it allows to standardize the quality of the final pet food product, irrespective of the raw material quality. A disadvantage of the use of ABP in pet food compositions is its relatively high cost. It would therefore be highly desirable to be able to find an alternative for ABP as ingredient in moist pet food compositions not having this disadvantage, or at least to a lesser extent, while still preserving the functional advantages of ABP. Additionally, due to its animal origin, ABP is perceived as undesirable by an increasing number of consumers. It would therefore be highly desirable to be able to find plant-based ingredients having similar functional advantages as ABP.

[0005] Therefore, an aim of the present invention is to provide a method of preparing a moist pet food composition wherein the amount of animal-based proteins, in particular ABP, may be lower than in the known moist pet food composition, while at the same time maintaining or even improving at least one of the textural characteristics and / or palatability offered by ABP. Another aim is to provide a method of preparing a moist pet food composition wherein ABP may not be used at all, while at the same time maintaining or even improving at least one of the textural properties and / or palatability offered by ABP. A further aim is to provide a moist pet food composition obtainable by such a method of preparing.

[0006] In a first aspect of the invention, this and other aims are achieved by a method of preparing a moist pet food composition, the method comprising the steps of: a) providing at least one pet food ingredient containing faba bean proteins, b) providing at least one pet food ingredient containing animal proteins and / or at least one further pet food ingredient; c) optionally, providing an aqueous solution; and d) processing the pet food ingredients from step a) and b), and optionally c), in relative amounts to obtain the moist pet food composition having:

[0007] • a faba bean protein content in a range from 0.1 to 35.0 wt.%, based on the total dry matter weight of the moist pet food composition; and

[0008] • a moisture content of at least 50.0 wt.%, based on the total weight of the moist pet food composition, and wherein the processing in step d) comprises at least on processing step wherein the pet food ingredients from step a), step b), and optionally step c), are subjected to a temperature of at least 100°C; and wherein the at least one further pet food ingredient in step b) comprises an ingredient selected from the list consisting of carbohydrates, vitamins, coloring agents, flavoring agents, texturing agents, microbials, enzymes, preservatives and stabilizers.

[0009] It was surprisingly found that the presence of faba bean proteins in a moist pet food compositions as claimed, permits to partially or even fully omit ABP in the moist pet food composition, while maintaining or even improving one or more functional properties such as palatability, water retention and / or textural characteristics, such as hardness, gel strength, elasticity and / or adhesiveness.

[0010] In the context of the present invention, the term "pet" encompasses any domestic animal including, but not limited to, dogs, cats, horses, cows, ferrets, rabbits, pigs, and the like. Preferably, the term “pet” in the context of the present invention encompasses dogs and cats, more preferably dogs.

[0011] In the context of the present invention, a moist pet food, also referred to as a wet pet food, is a type of pet food having a relatively high moisture content, i.e. at least 50.0 wt.%, preferably at least 60.0 wt.%, more preferably from 65.0 to 80.0 wt.% on total weight of the pet food composition. Moist pet food typically comes in various forms, such as loaves, chunks in jelly, and / or chunks in gravy. Moist pet food is typically packaged in cans, pouches, or trays. Moist pet food loaves are a type of moist pet food that comes in a soft, dense, pate-like texture and is often loaf-shaped.

[0012] In the context of the present invention, the pet food ingredients are defined as any suitable ingredient being intended for consumption by pets. Pet food ingredients may provide nutrients to meet the dietary needs of pets and / or may provide amongst other color, taste, texture, stability and / or improved digestibility. Nutrients include among others, proteins, fats, carbohydrates, vitamins, and minerals.

[0013] In step a) of the method according to the present invention, at least one pet food ingredient containing faba bean proteins is provided, which is then processed with at least one pet food ingredient containing animal proteins and / or at least one further pet food ingredient, and optionally an aqueous solution, to obtain the claimed moist pet food composition.

[0014] The faba bean proteins may be sourced from faba beans. Faba beans are a type of legume known for their large, flat, and green pods that contain beans or seeds. Faba beans are a versatile crop with various uses and derived products. They are a good source of protein, fiber, and other essential nutrients. Faba beans are rich in folate, iron, manganese, phosphorus, and magnesium.

[0015] Faba beans belong to the species Vicia faba. While there are several varieties and cultivars of faba beans within this species, they are primarily classified into two main subspecies, being Vicia faba major and Vicia faba minor. Vicia faba major includes the larger-seeded, traditional broad beans that are commonly cultivated for both human and animal consumption. Vicia faba minor, also known as “tic” or “tick” beans, includes smaller-seeded varieties. The invention is not limited to a particular species of faba beans as source for the faba bean proteins, and any faba bean species or subspecies may be used.

[0016] Faba beans are sometimes also referred to in the art as broad beans, field beans, horse beans, Windsor beans, English beans, fava beans, haba beans, feve, dolichos beans, or bell beans, without being limited thereto.

[0017] To obtain the claimed amount of faba bean proteins in the moist pet food composition, it was found that whole faba beans may be used as source for the faba bean proteins, but also dehulled faba beans, faba bean flour, faba bean protein concentrate, faba bean protein isolate, or combinations of these. Faba proteins may be added as such in the pet food composition. It is also possible to add at least one of the above-mentioned sources to the claimed pet food composition.

[0018] Faba bean flour may for instance be obtained by grinding harvested faba beans.

[0019] Faba bean protein isolate may be typically obtained through a process that involves wet extraction and isolation of proteins from faba beans, including the steps of cleaning, and soaking the faba beans, optionally dehulling the beans, grinding the faba beans into a coarse paste or meal, mixing the ground faba bean paste with water to obtain a solution, and separating the proteins from the other components, such as starch and fiber. After separation, the protein solution may be further concentrated by ultrafiltration or isoelectric precipitation. Finally, the concentrated proteins may be dried to obtain a dry powder. Faba bean protein isolate in general has a high protein content, typically in the range of more than 80 wt.%, even more than 90 wt.% expressed on total dry weight.

[0020] Faba bean protein concentrate may also be used. It contains in general a lower protein content compared to faba bean protein isolate, typically ranging from 45 to 80 wt.% of proteins expressed on total dry weight. Typically, faba bean protein concentrate may be obtained by means of dry fractionation processes, such as an air classification process.

[0021] In useful embodiments of the invention, the at least one pet food ingredient containing faba bean proteins has a faba bean protein content of more than 45.0%, preferably more than 55.0 wt.%, more preferably 60.0 wt.%, expressed on total dry weight, such as from 45.0 to 99.0 wt.%, preferably from 55.0 to 98.0 wt.%, more preferably from 60.0 to 97.0 wt.%, expressed on total dry weight.

[0022] In another useful embodiment of the invention, the at least one pet food ingredient containing faba bean proteins is selected from the group consisting of whole faba beans, dehulled faba beans, a faba bean flour, a faba bean protein concentrate, a faba bean protein isolate, and selections of two or more thereof. In a preferred embodiment of the invention, the at least one pet food ingredient containing faba bean proteins is a faba bean protein concentrate or a faba bean protein isolate, or a combination of both. In the context of the present invention, a faba bean concentrate has a protein content in a range of from 45.0 to 80.0 wt.%, preferably from 55.0 to 80.0 wt.%, more preferably from 60 to 80 wt.%, expressed on total dry weight. In the context of the present invention, a faba bean isolate has a protein content of more than 80.0 wt.%, preferably more than 85.0 wt.%, more preferably more than 90.0 wt.%, expressed on total dry weight.

[0023] It has turned out that using faba bean protein concentrate provides a good balance between processing properties and the obtained textural characteristics and palatability properties of the moist pet food composition. In the context of the present invention, the term “texture”, “textural characteristics” or “textural properties” encompass mouthfeel sensations when the product is taken into the mouth, chewed and swallowed, such as, but not limited to, hardness, chewiness, smoothness, thickness. The use of faba bean protein concentrate and / or isolate is advantageous in that it contains a high protein content which is the active technological component. Other ingredients that do not substantially contribute may be excluded from the concentrate, and even more so from the isolate. This also means that a relatively low amount of faba bean protein concentrate and / or isolate may be added to the moist pet food composition, allowing more flexibility in adding other useful ingredients.

[0024] In a more preferred embodiment, the at least one pet food ingredient containing faba bean proteins is not whole faba beans or dehulled faba beans or a combination of both. Most preferably, the at least one pet food ingredient containing faba bean proteins is not selected from the group consisting of whole faba beans, dehulled faba beans, faba bean flour, and combinations of two or more thereof.

[0025] In step b) of the method according to the present invention, at least one pet food ingredient containing animal proteins and / or at least one further pet food ingredient is provided.

[0026] The at least one pet food ingredient containing animal proteins may comprise any suitable part of an animal providing proteins to the pet food, such as for instance meat, organs, carcasses of an animal and any combinations thereof. The at least one pet food ingredient containing animal proteins may also be ABP. ABP is herein defined as a pet food ingredient that is obtained as part of blood that is separated from cellular matter in blood, like red and white blood cells, and primarily consists of protein-rich compounds such as albumin, globulin, and fibrinogen. It is a yellowish or straw-coloured fluid that makes up about 55% of total blood volume in mammals. ABP may be in the form of a powder, preferably a spray-dried powder. The addition of animal proteins to the moist pet food composition does not only deliver the nutritionally required amount of proteins, but is also known to enhance the textural characteristics and / or palatability of the moist pet food composition.

[0027] Suitable animals from which the at least one pet food ingredient containing animal proteins may be derived include chicken, turkey, duck, goose, beef, pork, horse, lamb, salmon, insects, and any combinations thereof. ABP, however, is typically obtained from porcine or bovine blood, although ABP obtained from other animals, such as chicken, is not excluded.

[0028] A useful embodiment, the invented method may therefore provide at least one pet food ingredient containing animal proteins selected the group consisting of ABP, meat, organs, carcasses of an animal, and any combination of two or more thereof.

[0029] In particular embodiments of the invention, the at least one pet food ingredient containing animal proteins is selected from the group consisting of meat, organs, carcasses of an animal and any combination of two or more thereof.

[0030] In other particular embodiments of the invention, the at least one pet food ingredient containing animal proteins is ABP.

[0031] In specific embodiments of the invention, the at least one pet food ingredient containing animal proteins comprises ABP and at least one pet food ingredient selected from the group consisting of meat, organs, carcasses of an animal and any combination of two or more thereof.

[0032] In yet another embodiment of the method, the at least one pet food ingredient containing animal proteins comprises ABP, and the ABP is provided in an amount of from 0.1 to 5.0 wt.% of the total dry weight of the moist pet food composition, preferably from 0.2 to 2.5 wt.%, more preferably from 0.4 to 2.0 wt.%, and even more preferably from 0.6 to 1 .5 wt.%. According to the invention indeed, a method of preparing a moist pet food composition is provided allowing the use of a lesser amount of ABP, and potentially also other animal proteins, than known in the art, and still preserving the functional properties, such as textural characteristics and / or palatability. It has surprisingly been found that functional properties such as gel strength and elasticity may be even further increased in a moist pet food composition comprising a combination of faba bean proteins and ABP, in comparison to moist pet food compositions comprising only one of faba bean proteins or ABP. In another aspect of the invention, a moist pet food composition obtainable by the method is provided, having a lesser amount of ABP, and potentially also other animal proteins, than known in the art, while still exhibiting the functional properties, such as texture and palatability, that may be obtained by the prior art moist pet food composition that contains ABP, and possibly also other animal proteins, in a relatively high amount.

[0033] According to an even more preferred embodiment of the invention, a method is proposed wherein the at least one pet food ingredient containing animal proteins is not ABP. A moist pet food composition that is obtainable by a method according to this embodiment therefore is substantially free from ABP. Such a moist pet food composition may be more desirable from a sustainability and economical point of view, while still showing the desired functional properties, such as texture and / or palatability. A moist pet food composition substantially free from ABP refers to a moist pet food composition having less than 0.1 wt.% of ABP added to it, regardless of the presence of animal blood, and thus potentially some ABP, in any one of the at least one further pet food ingredient. It is noted indeed that, when the moist pet food composition comprises meat, organs, and / or carcasses of an animal, it may inevitably contain animal blood, and thus some ABP.

[0034] The at least one further pet food ingredient in step b) of the method of the present invention may be any suitable ingredient, other than a pet food ingredient containing faba bean proteins and other than a pet food ingredient containing animal proteins, that is provided to meet the dietary needs of pets and / or may provide amongst other color, taste, texture, stability and / or improved digestibility. Examples of at least one further pet food ingredient may be, without being limited thereto, carbohydrates, vitamins, minerals, coloring agents, flavoring agents, texturing agents, microbials, enzymes, preservatives and stabilizers.

[0035] The at least one further pet food ingredient in step b) of the method of the present invention comprises an ingredient selected from the list consisting of carbohydrates, vitamins, coloring agents, flavoring agents, texturing agents, microbials, enzymes, preservatives and stabilizers.

[0036] In useful embodiments, the at least one further pet food ingredient that may be provided in step b) of the method of the present invention, contains vegetable proteins other than faba bean proteins. The moist pet food composition according to the invention may therefore comprise vegetable proteins other than faba bean proteins.

[0037] In a particular embodiment, the at least one further pet food ingredient that may be provided in step b) of the method of the present invention contains vegetable proteins other than faba bean proteins, and wherein the vegetable proteins other than faba bean proteins are selected from the group consisting of pea proteins, rice proteins, soy proteins, wheat gluten, and combinations of two or more thereof. Such vegetable proteins may be provided in step b) of the method in the form of the whole seed, as dehulled seed, if applicable, as flour, or as protein concentrate or isolate, and selections of two or more thereof. It will be understood that the applicable forms may depend on the nature of the vegetable. It appeared that a pet food composition comprising both faba bean proteins and vegetable proteins other than faba bean proteins may provide enhanced properties of the pet food composition, such as texture and / or palatability. Specific vegetable proteins, such as pea proteins, rice proteins, soy proteins, wheat gluten, and any combinations thereof, may further enhance those properties.

[0038] The at least one further pet food ingredient that is provided in step b) of the method according to the invention may also comprise additives suitable for moist pet food, such as one or more microbials, i.e. probiotics, one or more enzymes, one or more preservatives, one and one or more minerals. As with the pet food ingredients, any possible amount of water present in such additives is taken into account in the claimed moisture content of the moist pet food composition.

[0039] Flavoring agents may be selected from natural and synthetic flavoring agents suitable for pet food. Natural flavoring agents include, but are not limited to, essential oil, oleoresin, essence or extractive, protein hydrolysate, distillate, or any product of roasting, heating or enzymolysis, which contains the flavoring constituents derived from a food product such as meat, seafood, poultry, eggs, garlic, onion, dairy products, or fermentation products thereof. Other flavoring agents, also known as palatability enhancers, that may be used, include salt, phosphoric acid, citric acid, amino acids, Maillard compounds, 5’ Nucleotides, choline chloride.

[0040] Suitable colorants comprise natural and synthetic colorants and color preservatives suitable for pet food, such as tartrazine (FD&C yellow No. 5), sunset yellow (FD&C yellow No. 6), allura red (FD&C Red No. 40), brilliant blue (FD&C blue No. 1 ), indigotin (FD&C No. 2), iron oxide, titanium dioxide, sodium nitrite, sodium erythrobate, sodium metabisulfite, aluminum potassium sulfate, annatto, lutein / marigold extract, and beta carotene.

[0041] Texturing agents, such as a stabilizer, a thickener, and / or emulsifiers aim to influence the texture and / or rheology of the moist pet food composition. Suitable stabilizers and / or thickeners include, but are not limited to, gum arabic, guar gum, carboxymethylcellulose, carrageenan, agar, starch, pectin, sodium alginate, alginate, and collagen. Suitable emulsifiers include, but are not limited to, monoglycerides, diglycerides, and lecithin.

[0042] In useful embodiments, the at least one further pet food ingredient that is provided in step b) of the method of the present invention comprises a texturing agent, being provided in an amount of from 0 to 10 wt.% expressed on total dry weight of the moist pet food composition. More preferred, the texturing agent is provided in an amount of from 0.1 to 10.0 wt.%, even more preferred from 0.3 to 8.0 wt.%, even more preferred from 0.5 to 5.0 wt.%, expressed on total dry weight of the moist pet food composition.

[0085] A preferred method is disclosed in Sporl, Johannes, Karl Speer, and Wolfgang Jira. "A rapid LC-MS / MS multi-method for the detection of 23 foreign protein sources from legumes, oilseeds, grains, egg and milk in meat products.", Journal of Food Composition and Analysis 124 (2023): 105628., https: / / doi.org / 10.1016 / j fca.2023.105628, hereinafter referred to as Sporl, and incorporated in the present application in its entirety. Sporl offers a reliable detection of proteins sourced from legumes, oilseeds, grains, egg and milk in meat products. Thereto a sensitive multi-method is used for the detection of 23 foreign protein sources, among which broad bean (faba bean) in meat products, applying high performance liquid chromatography-tandem mass spectrometry (HPLC-MS / MS). In this context, a new rapid defatting procedure is also described, as well as a robust protein extraction protocol, which is suitable for various animal- and plant-based proteins including faba bean proteins, and peptide markers specifically suitable for the detection of the 23 foreign proteins, including faba beans. The general method is disclosed in paragraph 2.4. of Sporl. Paragraph 3.3. discusses the MS method used. To detect the concentration of faba bean proteins, the moist pet food composition is first defatted according to the one-pot procedure described in paragraph 2.4.1. of Sporl, using acetone. The faba bean (and optionally other) proteins are then extracted according to the sample preparation procedure described in paragraph 2.4.2. of Sporl, to obtain purified and filtered samples. Peptide separation is then performed by HPLC, and peptide detection by MS, as described in detail in paragraphs 2.4.3. and 3.3. of Sporl. As shown in Table 2 of Sporl, the peptide markers suitably used for broad bean (faba bean) are EDVLSLAPK (as quantifier) and FNLEEGDLIR (as qualifier).

[0101] Methods

[0102] Moisture analysis

[0103] The moisture of samples was determined with a halogen moisture analyzer MA 35 Sartorius. An analysis program was used at a temperature of 160 °C, and an analysis time of 20 min.

[0104] Texture analysis

[0105] Texture analyses were performed with a Perten TVT 6700. The cell size was 10 kg and a round 10 mm probe for penetration compression was used.

[0106] General procedure A

[0107] Each of the meat ingredients was ground at a 3 mm mesh at a temperature below 6 °C. The ground meat was subsequently weighed and emulsified, optionally with additional water, using a laboratory meat emulsifier. During the emulsification, the dry ingredients were added and emulsified for a total of 2 min, to provide a meat emulsion.

[0108] Meat emulsions were poured into 100 g cans. Each can contained 80 g of the meat emulsion, and ten cans were prepared for each formulation.

[0109] Filled and weighed cans were sealed and placed to retort during a standard 55 min program, ensuring sterilization for 30 min at 121 °C. After retorting, the cans were left to cool and stabilize for a minimum of 48 h before analysis was performed. After opening of the cans, excess liquid was removed, and the formed loaves were weighed and analyzed for textural properties.

[0122]

[0123] * MDM: Mechanically Deboned Meat

[0124] Moisture analysis of the moist pet food compositions according to Example 2, and to Comparative Experiment B showed a moisture content of 75-77 %.

[0125] Figure 1 (FIG. 1 ) provides a representation of the difference between the loaf weight of the moist pet food compositions according to Example 1 & 2 and Comparative Experiments A & B prior and after retorting. Loss of loaf weight is an indication for the ability of the pet food composition to retain moisture.

[0126] In terms of weight loss, the results in FIG. 1 show that Comparative Experiment A, containing ABP, and Example 1 , containing FBC as full replacement for ABP, had a comparable loss of loaf weight. Furthermore, the results in FIG. 1 show that a partial replacement of ABP with FBP (Example 2) or a partial replacement of ABP with PPC (Comparative Experiment B), resulted in a comparable weight loss as the weight loss of a product containing only ABP (Comparative Experiment A).

[0127] Figure 2 to 5 provide a representation of different texture features, i.e. respectively hardness, gel strength, elasticity and adhesiveness, of the moist pet food compositions according to Example 1 & 2 and Comparative Experiments A & B, after retorting.

[0128] Figure 2 (FIG. 2) provides a representation of the hardness of the moist pet food compositions. Hardness represents the force that is needed to break the pet food composition. The results clearly show that moist pet food compositions wherein ABP was completely replaced with FBP (example 1 versus Comparative experiment A) showed similar hardness. It is also shown in FIG. 2 that a combination of ABP and vegetable proteins (FBP, PPC) resulted in a reduction of the hardness of the pet food composition, compared to a pet food composition containing only ABP or only FBP. This loss in hardness was, however, less for pet food compositions containing FBP as vegetable protein (example 2) compared to PPC (Comparative Experiment B).

[0129] Figure 3 (FIG. 3) provides a representation of the gel strength of the moist pet food compositions. Gel strength represents the hardness of the pet food composition prior to breakage. The results clearly show that moist pet food compositions wherein ABP was completely replaced with FBP (example 1 versus Comparative experiment A) showed similar gel strength. It is also shown in FIG. 3 that a combination of ABP and FBP (example 2) resulted in an increased gel strength of the pet food composition, compared to a pet food composition containing only ABP or only FBP. This increase in gel strength was significantly less for pet food compositions containing a combination of ABP and to PPC (Comparative Experiment B).

[0130] Figure 4 (FIG. 4) provides a representation of the elasticity of the moist pet food compositions. The results show that moist pet food compositions wherein ABP was completely replaced with FBP (example 1 versus Comparative experiment A) showed a reduction in elasticity. It is also shown in FIG. 4 that a combination of ABP and FBP (example 2) resulted in an increased elasticity of the pet food composition, compared to a pet food composition containing only ABP or only FBP. This increase in elasticity was significantly less for pet food compositions containing a combination of ABP and PPC (Comparative Experiment B).

[0131] Figure 5 (FIG. 5) provides a representation of the adhesiveness of the moist pet food compositions. The results show that moist pet food compositions wherein ABP was completely replaced with FBP (example 1 versus Comparative experiment A) showed a similar adhesiveness. It is also shown in FIG. 5 that a combination of ABP and FBP (example 2) resulted in an increased adhesiveness of the pet food composition, compared to a pet food composition containing only ABP or only FBP.
