A method for reducing the unpleasant odor of a food manufactured by pressure-heat treatment in a container, comprising: accommodating the processed star anise according to claim 1 in the container together with a food material and sealing; and subjecting the container to pressure-heat treatment to manufacture a pressure-heat treated food.

7. Use of the processed star anise according to claim 1 for reducing the unpleasant odor of a food manufactured by pressure-heat treatment in a container.

8. A pressure-heat treated container-packed food, comprising: a container; and a food accommodated in the container and sealed in cooperation with the processed star anise according to claim 1.

9. A method for manufacturing a processed star anise, comprising treating star anise with superheated steam under conditions of a water vapor pressure of 0.2 MPa-G or more and 0.5 MPa-G or less, an oxygen concentration of 2.4% or more, a temperature of 185°C or more and 235°C or less, and a treatment time of 5 seconds or more and 22 seconds or less.

10. The method according to claim 9, the treatment with the superheated steam is performed using a rotary valve type device. ​
