Abstract

The invention relates to biotechnology, in particular to a process for cultivating theSporobolomyces pararoseusyeast strain and can be used for producing yeast and exopolysaccharide biomass with antifungal activity.The process for cultivating theSporobolomyces pararoseusCNM-YS-01 yeast strain, according to the invention, provides for the submerged cultivation of the strain at a temperature of +27-+28°C with continuous stirring at 200 rpm for 120 hours, on nutrient media obtained from agro-food vegetable waste, containing carrot peel extract or red beet peel extract.
