High protein yoghurt-like product based on whey protein, ingredients suitable for the production thereof and method of production

Abstract

The present invention relates to a novel food ingredient comprising insoluble whey protein particles having a particle size in the range of 1-10 microns (referred to as type A particles) and acid coagulable whey protein aggregates (referred to as type B particles). Furthermore, the present invention relates to a whey protein based yoghurt-like product comprising a combination of type A and type B particles and a method of producing the food ingredient and the whey protein based yoghurt-like product.
