The extrudate according to any one of claims 1 to 7, further comprising between 30% and 75% (w / w) additional protein, wherein the additional protein is a plant protein selected from the group consisting of vegetable protein, legume protein, seed protein, cereal protein, tuber protein, root protein, fruit protein, nut protein, algae protein, seaweed protein and any combination thereof.

9. The extrudate according to any one of claims 1 to 8, characterized in that A fibrous texture, and optionally wherein the extrudate comprises between 30% and 75% (w / w) water.

An extrudate according to any one of claims 1 to 9, wherein the extrudate is characterized by any of the following: (i) the extrudate comprises between 0.01% and 1.5% (w / w) of a swelling regulator, and optionally wherein the swelling regulator comprises calcium carbonate; (ii) the extrudate further comprises a thickener, an emulsifier, a colorant, a flavoring agent, a flavor masking agent, or any combination thereof; (iii) the yeast material is derived from a downstream food-related industry; (iv) the yeast material is selected from: whole yeast, yeast biomass, yeast filtrate, yeast concentrate, any portion thereof, and any combination thereof; and (v) any combination of (i)-(iv).
