A spoonable fermented fresh cheese composition, of the quark or skyr type, characterized in that it comprises: - at least 12%, by weight, of proteins, relative to the total weight of the composition, - the proteins being made up of a mixture of casein and milk serum proteins in a weight ratio of between 50 / 50 and 75 / 25, - the milk serum proteins comprising at least 20% of denatured milk serum proteins in the form of microparticles, by weight relative to the total weight of the serum proteins, - and in that the pH is less than 4.
