[0036] [Manufacture of Coagulated Egg White-like Food] Samples of coagulated egg white-like foods of Examples 1 to 6 and Comparative Examples 1 to 4 were prepared. As shown in Table 1, the formulations of Examples 1 to 6 were set to satisfy the conditions that B / A was 0.01 or more and 0.35 or less, and C / B was more than 0.015 and less than 0.5. On the other hand, the formulations of Comparative Examples 1 to 4 were set not to satisfy at least one of the conditions that B / A was 0.01 or more and 0.35 or less, or C / B was more than 0.015 and less than 0.5. Note that calcium hydroxide was used as the alkaline agent in Examples other than Example 6, and sodium hydroxide was used as the alkaline agent in Example 6.

[0039] [Evaluation of texture] Each sample bag refrigerated for about one week was opened, the sample was taken out, and cut finely with a spoon. Then, three or more trained panels ate each sample and scored the texture of each sample based on the scoring criteria shown below. In the evaluation of texture, each panel comprehensively judged the softness peculiar to coagulated egg white, chewiness (elasticity), cutting feeling, stickiness, smoothness, etc., and evaluated the similarity to real coagulated egg white. The evaluation score was set with the texture of real coagulated egg white as 3 points (the highest score) and a texture different from coagulated egg white as 1 point (the lowest score). For each sample, the average score of all panels' evaluation scores was calculated and rounded off, and an evaluation of A to C was determined based on the following evaluation criteria.

In particular, the samples of Examples 1 and 6 had a texture equivalent to or very similar to that of real coagulated egg white, which was preferable. Claims

1. A coagulated egg white-like food containing no eggs, comprising curdlan, glucomannan, an alkaline agent, and moisture, wherein the mass ratio of the glucomannan to the curdlan is 0.01 or more and 0.35 or less, and the mass ratio of the alkaline agent to the glucomannan is more than 0.015 and less than 0.5, a coagulated egg white-like food.

2. Further containing oil and fat, the coagulated egg white-like food according to Claim 1.

3. wherein the content of the glucomannan in the coagulated egg white-like food is 0.01% by mass or more and 1% by mass or less, the coagulated egg white-like food according to Claim 1.

4. wherein the content of the curdlan in the coagulated egg white-like food is 1% by mass or more and 5% by mass or less, the coagulated egg white-like food according to Claim 1.

A method for producing a coagulated egg white-like food containing no eggs, comprising a step of mixing curdlan, glucomannan, an alkaline agent, and moisture to prepare a mixture, and a step of heating the prepared mixture to 80°C or higher, wherein the mass ratio of the glucomannan to the curdlan in the mixture is 0.01 or more and 0.35 or less, and the mass ratio of the alkaline agent to the glucomannan in the mixture is more than 0.015 and less than 0.5, a method for producing a coagulated egg white-like food.
