Advantages of the Invention

Embodiments for Carrying Out the Invention

In the present invention, examples of shrimp include Kuruma shrimp, Ucides cordatus, Pandalus borealis, Litopenaeus vannamei, Pandalus eous, and lobster. A method for producing a food composition, comprising a step of adding to a shrimp-derived component at least one organic acid selected from the group consisting of fumaric acid, citric acid, malic acid, and tartaric acid or a salt thereof, arginine or a salt thereof, and lysine or a salt thereof.
5. The production method according to Claim 4, further adding succinic acid or a salt thereof.
6. A method for enhancing the shrimp miso flavor, comprising a step of adding to a shrimp-derived component at least one organic acid selected from the group consisting of fumaric acid, citric acid, malic acid, and tartaric acid or a salt thereof, arginine or a salt thereof, and lysine or a salt thereof.
