Description

[Technical field]

[0001] The present invention relates to a packaged jelly drink that is stored in a warmer and served in a warmed state, and a method for suppressing thermal deterioration of the packaged jelly drink. [Background technology]

[0002] Jelly drinks for energy supplementation that can be easily consumed to replenish energy during exercise, when you feel hungry, or to keep you full for a long time are known (see Patent Document 1). Jelly drinks for supplementing vitamins and proteins that tend to be lacking in daily diets are also known (see Patent Document 2).

[0003] Such jelly drinks are sold in packaging bags with spouts and are popular because they can be easily consumed by removing the cap of the spout and sucking. This type of jelly drink is generally sold in a refrigerated state and is usually consumed in a cold state.

[0004] However, in winter and other times when the outside temperature is low, consuming cold jelly drinks can make the body feel cold, so people tend to avoid them.

[0005] On the other hand, there are also known spouted packaging bags in which the insulating properties of the laminate film have been improved to make the contents less sensitive to cold or heat when held in the hand, or to improve the cold or heat retention properties of the contents (see Patent Documents 3, 4, and 5). [0006] [Patent Document 1] Patent No. 5329488 [Patent Document 2] JP 2016-187312 A [Patent Document 3] Patent No. 4397214 [Patent Document 4] Patent No. 4514097 [Patent Document 5] JP 3604685 A Summary of the Invention [Problem to be solved by the invention]

[0007] As described above, jelly drinks are generally sold in a refrigerated state and are normally consumed cold. However, the inventors wondered whether it might be possible to provide a warm jelly drink when the outside temperature is low, such as in winter, and attempted to store and serve a jelly drink filled in a packaging bag in a heater.

[0008] However, it has been found that when a jelly drink filled in a packaging bag is stored in a heater, the part that comes into contact with the support surface of the heater is heated to a high temperature, which can cause the jelly drink inside to deteriorate, resulting in discoloration and a change in texture.

[0009] Therefore, an object of the present invention is to provide a jelly drink in a packaged bag and a method for suppressing thermal deterioration of a jelly drink in a packaged bag, which can suppress the deterioration of the jelly drink due to localized high temperatures when the jelly drink in the packaged bag is stored in a warmer and served in a heated state. [Means for solving the problem]

[0010] As a result of intensive research to achieve the above-mentioned objective, the inventors discovered that thermal deterioration can be suppressed by ensuring that the bottom portion of the packaging bag does not come into direct contact with the support surface of the warmer, and thus completed the present invention.

[0011] That is, one aspect of the present invention provides a jelly beverage in a packaging bag comprising a self-supporting packaging bag having a bottom portion and a jelly beverage filled in the packaging bag, the jelly beverage in the packaging bag being stored in a warmer and provided in a heated state, the packaging bag having a lower end seal portion extending downward from the periphery of the bottom portion, the lower end of the lower end seal portion being in contact with the support surface of the warmer to enable it to stand on its own, and the bottom portion being configured so that when filled with the jelly beverage, the bottom portion does not come into contact with the support surface. According to the jelly drink in a packaging bag of the present invention, the lower end of the lower end seal portion is in contact with the supporting surface of the warmer so that it can stand on its own, and the jelly drink is packed into a packaging bag configured so that the bottom portion does not come into contact with the supporting surface when filled with the jelly drink. As a result, heat from the supporting surface of the warmer is less likely to be transferred to the jelly drink, and thermal deterioration of the jelly drink can be suppressed.

[0012] In the jelly drink of the present invention, it is preferable that the lower end seal portion extends downward in a frame shape so as to surround the peripheral edge of the bottom portion.

[0013] According to the above aspect, the lower end seal portion extends downward in a frame shape surrounding the periphery of the bottom portion, making it less likely for the lower end seal portion to bend due to the weight of the jelly drink and more reliably preventing the bottom portion from coming into contact with the supporting surface.

[0014] The packaging bag is preferably a spouted packaging bag having a spout with a cap attached thereto.

[0015] According to the above aspect, the jelly drink can be easily consumed by removing the cap and drinking from the spout. By sucking little by little through the spout, hot jelly can be prevented from flowing into the mouth all at once.

[0016] The packaging bag is preferably constructed from a laminate sheet having a metal foil layer and a weldable sealant layer disposed on the inner surface.

[0017] According to the above-mentioned aspect, since the packaging bag is made of a laminated sheet having a thin metal layer, the rigidity of the laminated sheet constituting the packaging bag is increased, the bottom seal part is less likely to bend due to the weight of the jelly drink, and the bottom part can be more reliably prevented from contacting the placement surface. Also, the heat from the placement surface of the heater is easily transferred to the entire packaging bag through the thin metal layer, making it easier to heat uniformly.

[0018] It is also preferable that the packaging bag has a front portion, a rear portion, both side portions, and a bottom portion, each formed from a laminated sheet having a weldable sealant layer on its inner surface, and that the side ends of the front portion, the rear portion, and both side portions are sealed to each other to form four side end seal portions extending vertically, and that the both side portions form foldable horizontal gusset portions, and that the lower ends of the front portion, the rear portion, and both side portions are joined to the outer peripheral edge of the bottom portion to form the lower end seal portion that protrudes downward in a frame shape, and that the bottom portion forms a foldable bottom gusset portion.

[0019] According to the above-mentioned embodiment, the side gusset portion and the bottom gusset portion can increase the content volume. Also, since the bottom seal portion protrudes downward in a frame shape, and the lower ends of the four side seal portions extending vertically are arranged at the four corners of the bottom seal portion, the vertical rigidity of the packaging bag itself is maintained, and the bottom seal portion is further prevented from bending due to the weight of the jelly drink, and the bottom surface portion can be more reliably prevented from contacting the placement surface.

[0020] Another aspect of the present invention provides a method for suppressing thermal deterioration of a jelly drink contained in a packaging bag when the jelly drink is filled into the packaging bag, stored in a warmer, and served in a warmed state, characterized in that the packaging bag has a lower end seal portion extending downward from the periphery of the bottom portion, and the lower end of the lower end seal portion is in contact with the mounting surface of the warmer so that the bag can stand on its own, and the method provides for suppressing thermal deterioration of a jelly drink contained in a packaging bag, the method being characterized in that the packaging bag is filled with the jelly drink and stored such that the bottom portion does not contact the mounting surface.

[0021] According to the method of the present invention for suppressing thermal deterioration of a packaging bag containing a jelly drink, by using a self-supporting packaging bag in which the lower end of the lower seal portion is in contact with the supporting surface of the warmer and the bag is filled with jelly drink, and the bottom portion is not in contact with the supporting surface, heat from the supporting surface of the warmer is less likely to be transferred to the jelly drink, thereby suppressing thermal deterioration of the jelly drink. Effect of the Invention

[0022] According to the present invention, the lower end of the lower end seal portion is made to be in contact with the supporting surface of the heater so that it can stand on its own, and the jelly drink is packed into a packaging bag configured so that the bottom portion does not come into contact with the supporting surface when filled with the jelly drink. As a result, heat from the supporting surface of the heater is less likely to be transferred to the jelly drink, and thermal deterioration of the jelly drink can be suppressed. [Diagram 5] 1 is a table showing the results of Test Example 1 of the present invention. DETAILED DESCRIPTION OF THE PREFERRED EMBODIMENTS

[0024] In the present invention, the jelly beverage used in the packaged jelly beverage may be any fluid, jelly-like food product that can be ingested by squeezing it out of the package, and there are no particular limitations on the raw materials or manufacturing method thereof.

[0025] To explain a preferred embodiment, examples of gelling agents that are preferably used in jelly drinks include agar, locust bean gum, deacylated gellan gum, native gellan gum, glucomannan, xanthan gum, pectin, carrageenan, and sodium alginate, and these can be used in combination of one or more types.

[0026] In this case, considering the use of the jelly drink of the present invention, which is stored in a warmer and provided in a warmed state, the gelling agent is preferably one that can maintain a gel state at a temperature of, for example, 45 to 75°C, and in particular, one or more types selected from desacyl gellan gum, pectin, xanthan gum, locust bean gum, glucomannan, and carrageenan are preferred, with desacyl gellan gum being particularly preferred.

[0027] The jelly drink of the present invention may contain ingredients suitable for supplying, for example, an energy source, a protein source, vitamins, amino acids, minerals, etc. As ingredients serving as an energy source, for example, sugars such as monosaccharides, disaccharides, oligosaccharides, sugar alcohols, dextrin, and starch syrup are preferably used. Specific examples include glucose, fructose, sugar, maltose, lactose, trehalose, erythritol, xylitol, sorbitol, and maltodextrin. In addition, in diet jelly drinks, sugar alcohols such as reduced starch syrup and high-intensity sweeteners such as aspartame, stevia, acesulfame K, sucralose, and thaumatin can also be used as sweeteners.

[0028] Examples of raw materials that serve as protein sources include whey protein, soy protein, collagen, collagen peptide, casein, etc. As whey protein, whey protein isolate (WPI), whey protein concentrate (WPC), whey protein hydrolysate (WPH), etc. are preferably used, and as soy protein, isolated soy protein (SPI), etc. are preferably used.

[0029] Examples of vitamins include vitamin A, vitamin B1, vitamin B2, vitamin B6, vitamin B12, vitamin C, vitamin D, vitamin E, vitamin F, vitamin H, vitamin K, vitamin P, pantothenic acid, choline, folic acid, inositol, niacin, para-aminobenzoic acid (PABA), etc. These vitamins can be used alone or in combination of two or more.

[0030] Examples of amino acids include alanine, arginine, aspartic acid, asparagine, cysteine, glutamic acid, glutamine, glycine, histidine, isoleucine, leucine, lysine, methionine, phenylalanine, proline, serine, threonine, tryptophan, tyrosine, valine, etc. These amino acids can be used alone or in combination of two or more.

[0031] Examples of minerals include sodium chloride, potassium chloride, calcium chloride, magnesium chloride, calcium lactate, sodium lactate, etc. These minerals can be used alone or in combination.

[0032] Other acidulants that may be added include, for example, citric acid, malic acid, lactic acid, succinic acid, tartaric acid, ascorbic acid, gluconic acid, phosphoric acid, and salts thereof. Fruit juice, dietary fiber, flavorings, seasonings, colorings, and the like can also be added.

[0033] The jelly drink used in the present invention can be produced by dispersing the above-mentioned ingredients in water, dissolving the gelling agent by heating, and then gelling by cooling. The order of addition of each ingredient can be appropriately adjusted so as to obtain a desired gel property.

[0034] The jelly drink in a package of the present invention is a jelly drink as described above filled in a self-supporting package having a bottom surface, stored in a warmer and provided in a warmed state. The package has a bottom seal extending downward from the periphery of the bottom surface, the bottom of the bottom seal is in contact with the mounting surface of the warmer to be able to stand on its own, and is configured so that the bottom does not come into contact with the mounting surface when filled with the jelly drink. 1 to 3 show one embodiment of a packaged jelly drink according to the present invention. This packaged jelly drink 100 comprises a package 101 and a jelly drink 113 (see FIG. 3) filled inside the package 101.

[0035] As shown in FIG. 1, the packaging bag 101 has a front portion 102, a rear portion 103, a pair of side portions 104 arranged on either side, and a bottom portion 105, each formed of a laminated sheet having a weldable sealant layer on its inner surface.

[0036] The sealant layer is preferably an unstretched synthetic resin film or a layer extruded from a synthetic resin. The synthetic resin forming the sealant layer may be one type or two or more types. In the case of two or more types, the sealant layer may be a single layer of a mixture of two or more synthetic resins, a multilayer of two or more synthetic resins, or a multilayer including a layer of the mixture.

[0037] When the sealant layer is a multi-layered layer, it can be produced by a known method such as a co-extrusion method, a lamination method, etc. In the case of the co-extrusion method, a water-cooled inflation method, an air-cooled inflation method, a T-die molding method, etc. can be used. In particular, the air-cooled inflation method, which allows molding of a thin film and a wide raw material, is advantageous.

[0038] Examples of synthetic resins include polyethylene-based resins such as high density polyethylene (HDPE), low density polyethylene (LDPE), linear low density polyethylene (LLDPE), and polypropylene-based resins, with polyethylene-based resins being preferred.

[0039] It is preferable to combine HDPE, which has excellent heat resistance, with LLDPE, which is flexible and has excellent impact resistance, as the polyethylene resin. In this case, the sealant layer may be a single layer of a mixture of HDPE and LLDPE, a multi-layer including a layer of HDPE and a layer of LLDPE, or a multi-layer including a layer of a mixture of HDPE and LLDPE.

[0040] The laminate sheet preferably has the sealant layer disposed on the inner surface, a base layer made of a synthetic resin film having heat resistance, puncture strength, tensile strength, impact resistance, etc. disposed on the surface side, and an intermediate layer having functionality such as oxygen barrier properties, water vapor barrier properties, tear properties, impact resistance, etc. disposed between the sealant layer and the base layer.

[0041] Examples of the substrate layer include polyethylene terephthalate, polypropylene, polyamide, and ethylene-vinyl alcohol copolymer, and biaxially or uniaxially stretched films thereof are preferred. In order to impart a barrier property against oxygen or water vapor to these films, a deposition film in which a metal such as aluminum or magnesium or an oxide such as silicon oxide is deposited, or a coated film coated with a barrier coating agent such as polyvinylidene chloride may be used. The substrate layer may be a single film such as the above-mentioned film, or a laminated film.

[0042] The laminate sheet preferably has a metal foil layer and a weldable sealant layer disposed on the inner surface. In this case, the metal foil layer is preferably disposed as the intermediate layer. The metal foil layer is preferably made of aluminum.

[0043] Both sides of the pair of side portions 104 are heat-sealed to both sides of the front portion 102 and the rear portion 103 to form four vertically extending side edge seal portions 108. In this case, the pair of side portions 104 are folded inward at fold lines 115 that extend vertically in the center in the width direction to form expandable horizontal gusset portions.

[0044] The lower edges of the front portion 102, the rear portion 103, and the pair of side portions 104 are heat-sealed to the peripheral edge of the rectangular bottom portion 105 to form a bottom seal portion 109. The bottom portion 105 is folded inward at fold lines 116 to form an expandable bottom gusset portion. Both ends of the bottom end seal portion 109 arranged on each side of the bottom portion 105 are connected to the corresponding lower ends of the four side end seal portions 108 extending in the vertical direction, and the lower ends of the side end seal portions 108 and the bottom end seal portion 109 form a seal structure that seals the periphery of the bottom portion 105.

[0045] And, the bottom end seal portion 109 extends downward in a frame shape so as to surround the periphery of the bottom surface portion 105. In the present invention, the term "frame shape" does not necessarily mean a structure in which both ends of the bottom end seal portion 109 extending downward are connected to each other, but also means a mode in which they are arranged in contact with each other or in close proximity with a gap of 3 mm or less.

[0046] Furthermore, in the present invention, the bottom end seal portion 109 does not necessarily have to be frame-shaped, and as long as the bottom end seal portion 109 has sufficient rigidity to prevent the bottom end seal portion 109 from falling sideways and can support the packaging bag 101 filled with a jelly beverage at its lower end, the two ends of the bottom end seal portion 109 may be separated from each other, and the number of bottom end seal portions 109 extending downwardly may be two.

[0047] Meanwhile, the upper edges of front portion 102, rear portion 103, and pair of side portions 104 are heat-sealed to form upper end seal portion 110. The central portions of the upper sides of front portion 102 and rear portion 103 form spout joint portion 111 that is joined so as to seal the outer periphery of spout 106. As shown in FIG. 3, suction tube 112 of spout 106 is inserted into packaging bag 111.

[0048] When the packaging bag 101 is filled with jelly drink 113, the side portions 104 forming the side gussets and the bottom portion 105 forming the bottom gusset open up and expand to increase the volume, as shown in Fig. 1. The bottom end seal portions 109 located on the four sides of the bottom portion 105 all extend downward, and their bottom ends come into contact with the placement surface, allowing the bag to be placed independently.

[0049] FIG. 2 shows a state where the jelly drink in the package is placed and stored in the warmer 120. The warmer 120 has a housing 121 and a placement surface 122 arranged inside the housing 121. The placement surface 122 is composed of the bottom surface inside the housing 121, a shelf arranged above it, and a plate placed on the shelf. The placement surface 122 does not necessarily have to be plate-shaped, and may be mesh-shaped or punched metal-shaped. In the present invention, the "warmer" may be any device that has the placement surface 122 on which the jelly drink in the package is placed and a heating means that can heat the jelly drink in the package, and the shape and structure of the device are not particularly limited. Specifically, a device called a hot vend or a hot showcase may be mentioned.

[0050] The heating temperature of the heater 120 is not particularly limited, but is preferably set to a temperature at which the jelly drink 113 in the packaging bag is heated to 50 to 70°C, and more preferably 55 to 65°C. At such a temperature, the jelly drink can be provided in a relatively warm state while suppressing thermal deterioration of the jelly drink, and the jelly drink can be consumed in seasons when the outside temperature is low, such as winter, to provide the effect of warming the body. The surface temperature of the packaging bag is preferably set to about 30 to 60°C so that the jelly drink does not feel hot when held in the hand or cause burns.

[0051] 3, the jelly drink in the package placed on the placement surface 122 of the warmer 120 is placed in a self-supporting state with the lower end of the downwardly extended lower end seal portion 109 abutting against the placement surface 122. The center portion of the bottom surface portion 105 tends to sag slightly due to the weight of the jelly drink 113, but it is not in contact with the placement surface 122 and a space 114 is formed between the bottom surface portion 105 and the placement surface 122.

[0052] In this case, the downward extension length h of the downwardly extending bottom end seal portion 109 is preferably 5 to 15 mm, more preferably 5 to 10 mm. Also, the distance s between the bottom surface portion 105 and the mounting surface 122 forming the space 114 is preferably 2 to 10 mm, more preferably 3 to 8 mm. If the above h and s are too small, there is a risk that the bottom surface portion 105 and the mounting surface 122 will come into contact with each other during storage, and if they are too large, the bottom end seal portion 109 will tend to easily fall over sideways.

[0053] The method for suppressing thermal deterioration of a jelly drink in a packaging bag of the present invention is a method for suppressing thermal deterioration of the jelly drink when the jelly drink is filled into a packaging bag, stored in a warmer, and served in a warmed state. For this purpose, as shown in the above packaging bag 101, a packaging bag is used that has a lower end seal part 109 extending downward from the periphery of the bottom part 105, and the lower end of the lower end seal part 109 abuts against the mounting surface 122 of the warmer 120, and can stand on its own without the bottom part 105 being in contact with the mounting surface 122. This makes it difficult for heat from the mounting surface 122 of the warmer 120 to be transmitted to the jelly drink 113 in the packaging bag 101, and the thermal deterioration of the jelly drink 113 can be suppressed.

[0054] In addition, in this embodiment, the lower end seal portion 109 extends downward in a frame shape surrounding the periphery of the bottom portion 105, so that the lower end seal portion 109 is less likely to bend due to the weight of the jelly drink 113, and the bottom portion 105 can be more reliably prevented from coming into contact with the supporting surface 122.

[0055] In this embodiment, the packaging bag 101 has a spout 106 fitted with a cap 107, so that the jelly drink 113 can be easily consumed by removing the cap 107 and sucking through the spout 106. Also, by sucking little by little through the spout 106, the hot jelly drink 113 can be prevented from flowing into the mouth all at once.

[0056] In addition, in this embodiment, the front portion 102, rear portion 103, side portion 104, and bottom portion 105 of the packaging bag 101 are made of laminated sheets having a thin metal layer, so that the rigidity of the laminated sheets constituting the packaging bag 101 is increased, the lower end seal portion 109 is less likely to bend due to the weight of the jelly drink, and the bottom portion 105 can be more reliably prevented from coming into contact with the placement surface 122.

[0057] In addition, heat from mounting surface 122 of heater 120 is easily transferred to the entire packaging bag 101 through the thin metal layer, making it easier to heat uniformly.

[0058] Furthermore, in this embodiment, the bag has a front portion 102, a rear portion 103, a pair of side portions 104, and a bottom portion 105, and the side ends of the front portion 102, the rear portion 103, and the side portions 104 are sealed to each other to form four side end seal portions 108 extending vertically, the side portions 104 form foldable horizontal gusset portions, and the lower ends of the front portion 102, the rear portion 103, and the side portions 104 are joined to the outer peripheral edge of the bottom portion 105 to form a frame-shaped lower end seal portion 109 that protrudes downward, and the bottom portion 105 forms a foldable bottom gusset portion, thereby increasing the capacity of the bag. In addition, since the packaging bag 101 has a frame-shaped bottom end seal portion 109 that protrudes downward, and the lower ends of the four side end seal portions 108 extending vertically are arranged at the four corners of the frame-shaped bottom end seal portion 109, the vertical rigidity of the packaging bag 101 itself is maintained, and the bottom end seal portion 109 is further prevented from bending due to the weight of the jelly drink 113, and the bottom portion 105 can be more reliably prevented from coming into contact with the supporting surface 122.

[0059] Another embodiment of the jelly drink in a packaging bag according to the present invention is shown in Fig. 4. The same reference numerals are used to designate the same parts as those in the above embodiment, and the description thereof will be omitted.

[0060] The structure of the packaging bag 201 of this jelly drink in a packaging bag 200 is different from that of the above embodiment. That is, the packaging bag 201 has a front portion 102, a rear portion 103, and a bottom portion 105, and does not have the side portion 104 of the above embodiment. That is, both side edges of the front portion 102 and the rear portion 103 are joined to each other to form two side end seal portions 108 extending vertically. A spout 106 is inserted between the upper edges of the front portion 102 and the rear portion 103, and the front portion 102 and the rear portion 103 are joined to each other to form an upper end seal portion 110, and the periphery of the spout 106 is sealed by a spout joint portion 111. The bottom portion 105 is folded inward along a center line along its long diameter direction as a fold line, and its peripheral portion is joined in an arc shape to the inner surfaces of the front portion 102 and the rear portion 103 to form a lower end seal portion 109 extending downward from the peripheral portion of the bottom portion 105.

[0061] When the packaging bag 201 is filled with jelly drink, the bottom portion 105 expands into an elliptical shape, and the lower end seal portion 109 forms a frame-like shape surrounding the periphery of the bottom portion 105 and protrudes downward. Then, when the packaging bag 201 is placed on the mounting surface 122 of the warmer 120 in the same manner as in the embodiment shown in FIG. 2, the lower end of the lower end seal portion 109 abuts against the mounting surface 122 and can stand on its own. In this state, the bottom portion 105 is not in contact with the mounting surface 122, and a space is provided between them. In this embodiment as well, heat from the mounting surface 122 of the warmer 120 is less likely to be transmitted to the jelly drink in the packaging bag 201, and thermal deterioration of the jelly drink can be suppressed.

[0062] As described above, in the present invention, the structure of the packaging bag needs only to be such that the lower end seal portion protrudes downward, the lower end abuts the supporting surface, and the bottom portion does not contact the supporting surface, and various structures can be adopted as the joining structure of the laminated sheet. EXAMPLES

[0063] The present invention will be specifically explained below by way of test examples, but these test examples are not intended to limit the scope of the present invention.

[0064] [Test Example 1] A jelly drink was prepared in a conventional manner using the composition shown in Table 1 below.

[0065] [Table 1]

[0066] This jelly drink was filled into the packaging bag shown in Figures 1 to 3 to produce the packaging bag-packaged jelly drink of the embodiment. The packaging bag is made of a laminated sheet including aluminum foil. When the packaging bag is filled with the jelly drink and set upright with the bottom side facing down, the lower end of the lower end seal part 109 abuts against the mounting surface 122 of the warmer 120, and the bottom part 105 stands on its own without contacting the mounting surface 122. In Figure 3, h was 8 mm and s was 5 mm.

[0067] The jelly drink was then filled into a conventional packaging bag (as shown in FIG. 6 of JP 2008-290736 A) with a shape in which the bottom part of the bag abuts against a placement surface, to produce a comparative example of a packaging bag containing a jelly drink. The packaging bag was made of a laminated sheet including aluminum foil. When the packaging bag was filled with the jelly drink and placed upright with the bottom part facing down, the bottom part of the bag abuts against the placement surface.

[0068] The jelly drinks in the packaging bags of the above-mentioned Examples and Comparative Examples were placed with the bottom part facing down on the mounting surface of a warmer, and heated to 85°C inside the warmer.

[0069] A thermometer was inserted into the spout of each package of jelly drink, and the temperature of the jelly drink at a position approximately 1 cm above the bottom was measured over time. The results are shown in Table 2 below.

[0070] [Table 2]

[0071] Moreover, the results of Table 2 above are shown in graph form in FIG.

[0072] As shown in Table 2 and Figure 3 above, compared to the jelly drink in a packaged bag of the comparative example, the jelly drink in a packaged bag of the embodiment has a more suppressed temperature rise in the portion of the jelly drink located approximately 1 cm above the bottom surface.

[0073] In addition, the jelly drinks in the packaging bags of the Examples and Comparative Examples were placed on a warmer and stored for 5 days and then 12 days, after which they were taken out, respectively, and the color tone of the jelly drink inside was evaluated by measuring the color difference in the L*a*b* color system (where L* is lightness, a* is chromaticity in the red-green direction, and b* is chromaticity in the yellow-blue direction) using a colorimeter ZE-2000 manufactured by Nippon Denshoku Industries Co., Ltd. The color difference (ΔE*) was calculated using the following formula. ΔE*=[(ΔL*)2+(Δa*)2+(Δb*)2]1 / 2 In addition, the flavor and texture of each 5 The evaluation was carried out by 100 expert panelists. As a reference example, the color tone of the jelly drink in the package before storage in the warmer was also measured in the same manner, and the flavor and texture were evaluated. The results are shown in Table 3.

[0074] [Table 3]

[0075] As shown in Table 3 above, even with increasing storage days, the color tone of the jelly drink of the Example hardly changed, whereas the color tone of the jelly drink of the Comparative Example gradually darkened and turned brown. Also, the flavor of the jelly drink of the Example did not change much, whereas the jelly drink of the Comparative Example lost sweetness drastically, became sour, and had a caramel smell. Furthermore, the texture of the jelly drink of the Example maintained the jelly graininess, whereas the jelly graininess of the Comparative Example became smaller. [Explanation of symbols]
