AI Technical Summary

Technical Problem

Existing poultry processing devices face challenges in separating chicken breast with wings from the carcass, as triangular bones often adhere to the breast meat, increasing workload and reducing yield due to the brittle nature of these bones and the risk of cutter interference with surrounding parts.

Method used

A poultry processing device with a fixing jig that supports and transports poultry, featuring guide members to guide wing portions and cutters on both sides, allowing precise incisions without interfering with the wings, and cutters that can be switched between active and retracted positions to avoid unnecessary cuts.

Benefits of technology

The device effectively prevents triangular bones from adhering to breast meat by making precise incisions, reducing workload and improving yield by minimizing excess material removal.

Abstract

To form a cut in a prescribed part of a poultry carcass without allowing a cutter to interfere with wing parts.SOLUTION: A poultry dressing device is so configured that a workpiece, the poultry having a body part and a pair of wing parts, is conveyed while being supported by a fixing jig. A pair of cutters are provided on both sides of a conveyance path of the fixing jig. Further, a pair of guide members extend along the conveyance path, and the pair of wing parts of the workpiece supported by the fixing jig are guided from below by the pair of guide members, so that the pair of cutters can respectively access the sides of the body part from between the body part and the pair of wing parts.SELECTED DRAWING: Figure 3
