Abstract
Description
Protein for beverage mixing and carbonated water containing the same
[0001] The present invention relates to a protein for mixing beverages and carbonated water containing the same.
[0002] Due to changes in eating habits resulting from economic growth, the consumption of high-fat foods such as meat has increased, leading to an increase in the number of obese and overweight people, which has led to an increase in the incidence of various adult diseases.
[0003] Obesity has been clinically proven to cause and worsen diseases such as hypertension, diabetes, arteriosclerosis, and fatty liver disease. In particular, the incidence of endometrial cancer is reported to be significantly higher in obese women than in those of normal weight. While the exact cause of obesity remains unclear, there is consensus that a lack of exercise and poor dietary habits are key contributors, leading to a growing demand for high-protein, low-calorie foods.
[0004] Typically, athletes and ordinary people who do weight training consume natural foods such as boiled chicken breast and boiled egg whites to supplement protein, which is a nutrient necessary for muscle strength.
[0005] However, foods like chicken breast and boiled egg whites require separate cooking, which can be inconvenient. Furthermore, their fishy odor can make them difficult to consume frequently. Furthermore, as protein intake increases, the feeling of fullness can significantly reduce exercise activity.
[0006] Due to the aforementioned issues, commercially available protein supplements are often consumed before or after exercise. These protein supplements are manufactured in powder form and dissolved in water or other beverages, or are initially formulated as beverages and used as functional foods such as sports drinks, energy drinks, and fitness drinks. Powdered products, however, require the hassle of mixing them directly into a beverage like water or milk to consume the supplement. Furthermore, beverages typically use whey protein isolate, soy protein, and chicken breast as protein sources. However, these beverages suffer from drawbacks such as a characteristic off-flavor, which reduces sensory quality. Therefore, further technological development is still required.
[0007] The present invention aims to provide a protein for beverage mixing with improved protein supplementation and sensory properties, and carbonated water containing the same.
[0008] 1. Protein for beverage mixing containing kelp hot water extract, protein, L-arginine, branched-chain amino acids (BCAA), taurine, stevia, and maca extract powder.
[0009] 2. In the above 1, for 100 parts by weight of the total protein for mixing beverages, the kelp hot water extract is 30 to 60 parts by weight, the protein is 30 to 60 parts by weight, the L-arginine is 3 to 10 parts by weight, the branched chain amino acid (BCAA) is 3 to 20 parts by weight, the taurine is 0.5 to 5 parts by weight, the stevia is 1 to 5 parts by weight, and the maca extract powder is 0.01 to 0.1 parts by weight, the protein for mixing beverages.
[0010] 3. In the above 1, the stevia is a protein for beverage mixing that has been enzyme-treated.
[0011] 4. Protein carbonated water containing any one of the beverage mixing proteins 1 to 3 above.
[0012] 5. Protein carbonated water containing at least one of lemon juice, grapefruit juice, strawberry juice, cherry juice, yuzu juice, and grape juice from the above 4.
[0013] 6. Protein carbonated water, further comprising water or carbonated water in the above 4, wherein the water or carbonated water is 50 to 80 wt%.
[0014] 7. A beverage kit comprising any one of the beverage mixing proteins 1 to 3 above.
[0015]
[0016] The present invention has the effect of providing a protein for beverage mixing with improved protein supplementation and sensory properties, and carbonated water containing the same, by including kelp hot water extract, protein, L-arginine, branched-chain amino acids (BCAA), taurine, stevia, and maca extract powder.
[0017]
[0018] Hereinafter, the present invention will be described in detail.
[0019]
[0020] The present invention relates to a protein for beverage mixing comprising kelp hot water extract, protein, L-arginine, branched-chain amino acids (BCAA), taurine, stevia, and maca extract powder.
[0021] Kelp hot water extract is a liquid extract made by extracting the active ingredients of kelp with high temperature water.
[0022] Kelp hot water extract may be manufactured, for example, by: 1) a washing and pretreatment step of thoroughly washing kelp to remove impurities and salt, and cutting the washed kelp into an appropriate size; 2) an extraction step of soaking the washed kelp in water for a certain period of time at 60 to 100°C to dissolve the active ingredients of the kelp in the water; 3) a filtration step of filtering the extracted liquid to remove solids and impurities; and 4) a step of concentrating the filtered extract to increase the concentration of the active ingredients, if necessary.
[0023] The extraction step may be manufactured by, for example, extracting kelp using a pressurized hot water extractor at 60°C to 100°C or 70°C to 90°C for 5 to 24 hours, followed by filtration and concentration.
[0024] Any protein that can be applied to protein beverages in the relevant technical field can be applied, and for example, whey protein, casein protein, soy protein, concentrated milk protein, isolated milk protein, etc. can be applied alone or in combination.
[0025] Whey protein, a byproduct of lactic acid digestion, can be derived from milk and has a high biological branching and amino acid profile. Whey protein is also rapidly absorbed and aids in muscle recovery.
[0026] Casein protein is derived from milk and has the properties of being slow-digesting and providing energy over a long period of time, which helps support muscle recovery and growth.
[0027] Soy protein is derived from soybeans and can be used as an alternative for vegans or those with dairy allergies. Soy protein has a rich amino acid profile and may provide muscle recovery benefits similar to whey protein.
[0028] Milk protein concentrate (MPC) is a protein concentrate derived from milk, made by concentrating milk proteins. MPC digests more slowly than whey protein, but can provide longer-lasting energy compared to whey protein.
[0029] Milk protein isolate is a more refined form of milk protein, with other components like fat and lactose removed or minimized to produce a pure protein isolate. Milk protein isolate also possesses an excellent amino acid profile, providing a variety of essential amino acids that can contribute to muscle recovery and growth.
[0030] The various proteins mentioned above have different components, functions, and effects, so they can be selected and applied according to the purpose, and can be used alone or in combination with various proteins, and the mixing ratio can be adjusted appropriately according to taste or purpose.
[0031] L-arginine is one of the semi-essential amino acids, and is a substance that helps expel lactic acid accumulated during exercise and increases the efficiency or effectiveness of exercise.
[0032] L-arginine can be applied, for example, through microbial fermentation or chemical synthesis.
[0033] Branched-chain amino acids (BCAAs) are amino acids that have aliphatic side chains with branched chains (a central carbon atom bonded to three or more carbon atoms). They are also called branched-chain amino acids (BCAAs).
[0034] Branched-chain amino acids (BCAAs) can be produced, for example, by microbial fermentation, chemical synthesis, or enzyme catalysis.
[0035] Branched-chain amino acids (BCAAs) can be used alone or in combination, such as leucine, isoleucine, and valine.
[0036] Taurine is a type of organic chemical called aminoethylsulfonic acid, and can be manufactured, for example, through chemical synthesis or biological methods using microorganisms or enzymes.
[0037] Stevia is a natural sweetener, a type of sugar substitute. It is a plant of the Asteraceae family and a natural herb that provides sweetness. Stevia's leaves and stems contain a powerful sweetener, which is much sweeter than sugar, yet contains virtually no calories and has a very low glycemic index (GI), making it a viable alternative for diabetics and those on calorie restriction.
[0038] Stevia can be used raw or in an enzyme-treated form. Enzyme-treated stevia can be made, for example, by boiling stevia with water to create a liquid, then reacting it with an enzyme.
[0039] Enzyme-treated stevia may be manufactured, for example, through a process including: 1) a washing and pretreatment step of thoroughly washing stevia leaves to remove dust and impurities, 2) an extraction step of boiling the washed stevia leaves in water to extract the sweet components of stevia into the water, 3) a filtration step of filtering the extracted liquid to remove solids and leaf residue, 4) a concentration step of concentrating the filtered stevia extract to increase the concentration of the sweet components, and 5) an enzyme treatment step of adding an enzyme to the concentrated stevia extract to react and convert some of the sweet components of stevia to make it taste milder.
[0040] The enzyme may be, for example, a glucosidase or a glucosyltransferase.
[0041] When glucoside hydrolase is used, the enzymatic treatment step can be carried out for 2 to 24 hours under conditions of 50 to 60°C and pH 5.0 to 6.5.
[0042] When using glucosyltransferase, the enzymatic treatment step can be carried out for 4 to 48 hours under conditions of 40 to 50°C and pH 6.0 to 7.5.
[0043] Maca extract powder is a highly concentrated powder made from the active ingredients of maca. For example, maca roots can be washed and dried, the active ingredients extracted using a solvent such as water or ethanol, and the extracted solution concentrated in a concentrator to produce an extract powder.
[0044] For the entire protein for beverage mixing, for example, kelp hot water extract is 30 to 60 parts by weight, protein is 30 to 60 parts by weight, L-arginine is 3 to 10 parts by weight, branched chain amino acid (BCAA) is 3 to 20 parts by weight, taurine is 0.5 to 5 parts by weight, stevia is 1 to 5 parts by weight, and maca extract powder is 0.01 to 0.1 parts by weight.
[0045] The present invention relates to protein carbonated water containing kelp hot water extract, protein, L-arginine, branched-chain amino acids (BCAA), taurine, stevia, and maca extract powder.
[0046] Meanwhile, in order to avoid repetition, a specific description of the ingredients applicable to the aforementioned beverage mixing protein is omitted, but the ingredients applicable to the aforementioned beverage mixing protein can be applied to protein carbonated water.
[0047] Protein sparkling water refers to a beverage containing dissolved carbonated gas and containing kelp hot water extract, protein, L-arginine, branched-chain amino acids (BCAA), taurine, stevia, and maca extract powder.
[0048] To enhance the sensuality, lemon juice, grapefruit juice, strawberry juice, cherry juice, yuzu juice or grape juice may be included according to taste.
[0049] Depending on the preference, additional sweeteners, flavoring agents, acidulants, seasonings, etc. may be included to enhance the taste and aroma.
[0050] Sweeteners that can be used include sugar alcohols such as D-sorbitol and xylitol, sugars such as D-ribose, and high-sweetness sweeteners such as aspartame, acesulfame potassium, sodium saccharin, and sucralose.
[0051] Flavoring agents include water-soluble flavors, oil-soluble flavors, emulsified flavors, and powdered flavors. Water-soluble flavors, commonly called essences, dissolve transparently in water and are sensitive to heat, so they can be applied to non-heated foods such as beverages. Oil-soluble flavors are heat-resistant, so they can be used in foods that involve heating processes. Emulsified flavors disperse in water to exhibit flavor and turbidity, are stronger than water-soluble flavors, and can be used in liquid forms. In addition, powdered flavors contain flavoring ingredients stored in a medium such as natural gum, so their flavor is less likely to deteriorate, is stable, and is easy to handle, so they can be used in powder form.
[0052] Acidulants can be added to impart a sour taste, for example citric acid, DL-malic acid, lactic acid, L-tartaric acid, and succinic acid.
[0053] Sweeteners may be added to enhance the flavor and include, for example, glucitol, saccharin, sorbitol, sucralose, stevioside, acesulfame, aspartame or xylitol.
[0054] Protein sparkling water may contain additional water or carbonated water.
[0055] Water or carbonated water may be 50 to 80 wt% of the total protein carbonated water.
[0056] The present invention relates to a beverage kit comprising the aforementioned beverage mixing protein.
[0057] A drink kit is a package that contains all the tools needed to make a drink.
[0058] The beverage kit may include, for example, the aforementioned beverage mixing protein, water or carbonated water, and tools.
[0059] The tool could be, for example, a shaker cup, a blender, etc.
