Abstract
Description
[0001] Title: Cleaning article for a rotisserie oven, an assembly of a rotisserie oven and one or more cleaning articles, and method for producing a cleaning article
[0002] The invention relates to a cleaning article for a rotisserie oven.
[0003] Rotisserie ovens are used to prepare food, such as poultry, for example chickens, in stores, bars and restaurants. During operation, grease and food particles drip and splash from the food, contaminating the floor and / or walls of the rotisserie oven. These contaminations, e.g. poultry grease, require particular aggressive cleaning agents. Specific cleaning agents are available in the market for cleaning rotisserie ovens. Typically, several different cleaning agents are needed to effectively clean a rotisserie oven.
[0004] In the context of the present disclosure, the term "cleaning agent" refers to any substance or mixture of substances used for cleaning purposes.
[0005] It is known in the art to combine two cleaning agents into a single cleaning article, i.e. a single product that comprises two different cleaning agents. One type of a known cleaning article comprises a plastic cartridge that has two compartments, each holding a different type of cleaning agent. The cartridge is closed off by a cap. The cap is removed prior to inserting the cartridge into the oven for cleaning.
[0006] The cartridge and cap protect the cleaning agents from reacting with each other or the environment. Furthermore, the cartridge and cap prevent the user from coming into contact with the aggressive cleaning agents which could otherwise cause chemical burns.
[0007] A disadvantage of this type of cleaning article is that, after cleaning, the empty cartridge remains as waste. Moreover, the cap forms additional waste. In addition, the empty cartridge needs to be removed manually from the rotisserie oven after the cleaning process.
[0008] EP-3.848.440-B1 (EP'440) discloses an embodiment of a cleaner combination in block form as a three-stage cleaning product. According to the illustration in FIG. 2 of EP'440, this comprises a decalcifier or cleaner block 18 (reference numbers as in EP'440), a further cleaner block 20, for example NaOH-based, a bleach block 22, for example in the form of a tablet, and an enzymatic cleaner block 36. The further cleaner block 20 is surrounded by a first decomposable jacket 28, and the enzymatic cleaner block 36 is furthermore surrounded by a second decomposable jacket 38. The first decomposable jacket and the second decomposable jacket have different melting temperatures.
[0009] A disadvantage of this type of cleaning article is that it is not safe to handle the cleaner combination, because of the presence of NaOH which is only surrounded by the first decomposable jacket. The invention aims to solve at least one of these problems, or at least to provide an alternative. In particular, the invention aims to provide a cleaning article that reduces the amount of disposable packaging while ensuring safety.
[0010] This aim is achieved by a cleaning article according to claim 1.
[0011] The cleaning article is designed for cleaning rotisserie ovens. The cleaning article comprises a first cleaning component, a second cleaning component and a water-soluble film that encloses both the first and second cleaning components. The first cleaning component comprises a first cleaning agent. The first cleaning agent is provided as a powder and comprises enzymes. The second cleaning component comprises a second cleaning agent and a meltable coating that seals the second cleaning agent. The second cleaning agent comprises at least one of the group consisting of: sodium hydroxide (NaOH) and potassium hydroxide (KOH).
[0012] The second cleaning agent (NaOH and / or KOH) is sealed by a meltable coating which prevents the first and second cleaning agents from reacting with each other. This obviates the need for a disposable packaging with separate compartments. The amount of disposable packaging is further reduced, by using a water-soluble film as an outer packaging for holding both the sealed first cleaning agent and the second cleaning agent.
[0013] Starting from EP'440, the cleaning article according to the invention provides a safer solution. NaOH and KOH are caustic and can cause chemical burns when contacting skin. According to the invention, the NaOH and / or KOH is sealed by the meltable coating, which is again enclosed by the water-soluble film (since both the first and second cleaning components are enclosed by the film). Thus, a double protection is provided around the NaOH and / or KOH. A user can safely hold the cleaning article, thanks to the double protection; just the meltable coating would be too risky to handle without protective gloves. Another positive safety effect is that the meltable coating avoids direct contact between the NaOH or KOH and the water-soluble film and thus reduces the risk that the NaOH or KOH impairs the water-soluble film.
[0014] A further advantage of the invention is that the cleaning article can be produced in a relatively simple manner. The first cleaning component and second cleaning component can be produced or sourced separately, after which they are combined into a cleaning article by enclosing them with the water-soluble film.
[0015] Preferred embodiments are defined in the dependent claims.
[0016] In an embodiment, the second cleaning agent is provided as a compressed powder. In other words, the second cleaning component, which comprises a compressed NaOH powder and / or a compressed KOH powder, is sealed by the meltable coating. The compressed powder forms a strong internal structure that support the meltable coating, which reduces the likelihood of accidental tearing of the coating. In an embodiment, the second cleaning component is provided as a block. Preferably, the block is formed by compressing NaOH powder and / or KOH powder. For example, the block is provided in the form of a tablet. This offers at least similar advantages as providing the second cleaning agent as a compressed powder.
[0017] In an embodiment, the second cleaning component comprises an opening. In the context of the invention, the term "opening" covers both a "recess" and a "through-hole". By providing an opening in the second cleaning component, the reaction surface of the second cleaning agent is increased, thereby improving the cleaning operation.
[0018] In a further embodiment, the first cleaning component is provided in the opening of the second cleaning component. This enables a particular compact cleaning article.
[0019] In a further embodiment, the first cleaning component is provided as a block, and / or the first cleaning agent is provided as a compressed powder. Preferably, the first cleaning component fits into the opening of the second cleaning component in a form fitting manner.
[0020] In this manner, the second cleaning component forms an enclosure of the first cleaning component. The second cleaning component comprises compressed NaOH and / or KOH, which is relatively solid compared to the enzyme-comprising powder of the first cleaning component. Namely, compressed enzyme-comprising powder has the tendency to fall apart over time and / or when subjected to shocks. By providing the first cleaning component in the second cleaning component in a formfitting manner, the compressed powder of the first component is prevented from falling apart.
[0021] In a further embodiment, the opening of the second cleaning component is tapered, and the first cleaning component is tapered correspondingly. In other words, the tapered shape of the first cleaning component matches the tapered shape of the opening in the second cleaning component. The tapered shape facilitates the production of the cleaning article, as the tapered first cleaning component can easily drop into the tapered opening. An additional advantage is that this shape increases the contact surface between the first cleaning component and the second cleaning component, thereby more effectively keeping the components together.
[0022] In a further embodiment, the first cleaning component also comprises an opening, and the cleaning article further comprises a third cleaning agent provided in the opening of the first cleaning component. This enables adding a third cleaning agent while maintaining a compact cleaning article. Preferably, the third cleaning agent is provided as a third component that fits in a formfitting manner in the opening of the first cleaning component.
[0023] Preferably, the third cleaning agent comprises a rinse aid. For example, the rinse aid is provided as liquid or gel, e.g. in a capsule. Preferably, the third cleaning agent is sealed by a second meltable coating, wherein the second meltable coating has a higher melting temperature than the meltable coating of the second cleaning component. For example, the second meltable coating has a melting temperature in the range of 65 - 75°C, whereas the meltable coating of the second cleaning component has a melting temperature in the range of 50 - 60 °C. Preferably, the third cleaning agent (e.g. rinse aid) is provided as a compressed powder and / or as a tablet, sealed by the second meltable coating.
[0024] In an embodiment, the water-soluble film is provided as a sealed pouch. This simplifies production. The first and second cleaning component can be produced or sourced separately. The cleaning article can now be produced by filling the water-soluble pouch with the enzyme-comprising powder and the coated NaOH and / or KOH, after which the pouch is sealed.
[0025] Preferably, the meltable coating comprises a wax.
[0026] Preferably, the water-soluble film comprises polyvinyl alcohol (PVA).
[0027] In an embodiment, the weight of the cleaning article is at most 125 grams. This has proven to be a convenient weight, as a typical rotisserie oven can be adequately cleaned by 3-5 cleaning articles of 125 grams. An additional advantage of limiting the weight to 125 grams is that no individual labelling of the cleaning articles is required under applicable regulations.
[0028] In a further aspect, the invention relates to a cleaning article, which comprises a first cleaning component and a second cleaning component. The first cleaning component comprises a powder comprising enzymes. The second cleaning component comprises a compressed powder and a meltable coating that seals the compressed powder. The compressed powder comprises at least one of the group consisting of: sodium hydroxide (NaOH) and potassium hydroxide (KOH). The second cleaning component comprises an opening. The first cleaning component is provided in the opening of the second cleaning component.
[0029] The second cleaning component forms an enclosure of the first cleaning component. The compressed powder comprising NaOH and / or KOH is relatively solid compared to the enzymecomprising powder of the first cleaning component. By providing the enzyme-comprising powder in the second cleaning component in a formfitting manner, the enzyme-comprising powder is prevented from falling apart.
[0030] In a preferred embodiment, the enzyme-comprising powder is provided as a compressed powder that fits in the opening of the second cleaning component in a form fitting manner. Preferably, the opening of the second cleaning component is tapered, and the compressed enzymecomprising powder has a correspondingly tapered shape.
[0031] In a preferred embodiment, cleaning article comprises a water-soluble film that encloses the first and second cleaning components.
[0032] The invention further relates to an assembly according to claim 15. The assembly comprises a rotisserie oven and one or more cleaning articles. The rotisserie oven comprises one or more receptacles dimensioned to each receive not more than one of said one or more cleaning articles.
[0033] In the context of the present disclosure, the term receptacle is any designated space within the rotisserie oven, in particular within cooking chamber of the rotisserie oven, which is designed to receive a cleaning article. The receptacle is open to at least one side so that the cleaning article comes into contact with a cleaning fluid, such as water. In an embodiment, the receptacle includes at least one side wall. In an embodiment, the receptacle is delimited on a floor of the cooking chamber by means of visual markings. In an embodiment, the receptacle is a recess in a floor of the cooking chamber.
[0034] Preferably the one or more cleaning articles are cleaning articles according to any one or more embodiments described herein.
[0035] The invention further relates to a method of producing a cleaning article, according to claim 16.
[0036] The method comprises providing a first cleaning component comprising a first cleaning agent. The first cleaning agent comprises enzymes and is provided as a powder. The method further comprises providing a second cleaning agent comprising at least one of the group consisting of: sodium hydroxide (NaOH) and potassium hydroxide (KOH). The method further comprises sealing the second cleaning agent by a meltable coating to form a second cleaning component. The method further comprises a step of enclosing both the first and the second cleaning components by a water- soluble film.
[0037] Preferably, the method comprises providing the second cleaning agent in a powder form and compressing the second cleaning agent into a block. An opening is provided in the block and the first cleaning component is provided in the opening of the block.
[0038] The same technical effects as described above in relation to the cleaning article, apply to the assembly and method. Moreover, the same preferred features as defined for the cleaning article are preferred features for the assembly and method.
[0039] The invention, its effects, and advantages will be explained in more detail on the basis of the schematic drawings, in which:
[0040] Fig. 1 shows an exploded view of a cleaning article according to a first embodiment of the invention;
[0041] Fig. 2 shows a cross-sectional side view of Fig. 1;
[0042] Fig. 3 shows a perspective view of the cleaning article of Figs. 1 and 2 in assembled state;
[0043] Fig. 4 shows a cross-sectional side view of Fig. 3; Fig. 5 shows a perspective view of a cleaning article according to a second embodiment of the invention;
[0044] Fig. 6 shows a cross-sectional side view of Fig. 5;
[0045] Fig. 7 shows an exploded view of the cleaning article of Figs. 5 and 6;
[0046] Fig. 8 shows a cross-sectional side view of Fig. 8;
[0047] Fig. 9 shows a schematic drawings of a rotisserie oven assembly; and
[0048] Fig. 10 shows a detail of a bottom plate of a rotisserie oven of Fig. 9, with three cleaning articles according to the first embodiment inserted in corresponding receptacles.
[0049] Figure 1 shows a cleaning article 2 according to a first embodiment. The cleaning article 2 comprises a first cleaning component 4 and a second cleaning component 6. The cleaning article 2 further comprises an upper part 8a and lower part 8b of a water-soluble film. Each part 8a, 8b is provided with a seam 10a, 10b around its perimeter for sealing the parts 8a, 8b together and enclosing the first and second cleaning components 4, 6.
[0050] As illustrated in Figure 2, the first cleaning component 4 comprises a compressed powder 4a comprising enzymes, particularly subtilisin. The compressed powder 4a comprises additional substances, such as sodium carbonate.
[0051] The second cleaning component 6 comprises a second cleaning agent 6a formed by a compressed powder comprising sodium hydroxide (NaOH). The NaOH-comprising powder 6a is enclosed and sealed by a meltable coating 6b. The coating 6b comprises a wax.
[0052] The second cleaning component 6 comprises an opening in the form of a through-hole 12. As can be seen clearly in Figure 2, the coating 6b also covers the inside of the through-hole 12 and thus truly seals the NaOH-comprising powder 6a. The through-hole 12 is tapered: its diameter decreases in the through-direction A (in the figure: the direction from top to bottom).
[0053] The powder 4a of the first cleaning component 4 is compressed into a tapered shape matching the tapered shape of the opening 12 in the second cleaning component 6.
[0054] Figures 3 and 4 show the assembled cleaning article 2 and will be used to illustrate a method of producing the cleaning article 2. The method comprises providing the first cleaning component 4, by compressing enzyme-comprising powder 4a into a first block, having a tapered shape. The second cleaning component 6 is provided by compressing the NaOH-comprising powder into a second block comprising the through-hole 12. The second block is then coated by the meltable coating 6b to obtain the second cleaning component 6. The shape of the through-hole 12 of the second cleaning component 6 matches the tapered shape of the first cleaning component 4. The compressed enzyme-comprising powder 4a is then inserted into the through-hole 12 of the second cleaning component 6. The insertion is done by gravity, i.e. by dropping the first cleaning component 4 from a height into the through-hole 12. Alternatively, the first cleaning component 4 is pushed into the through-hole 12. In this manner, the second cleaning component 6 forms a boundary around the enzyme-comprising powder 4a that keeps the powder 4a compressed, or at least prevents the powder 4a from breaking apart. The combination of the first and second components 4, 6 is then placed between the upper part 8a and lower part 8b of the water-soluble film. The seams 10a, 10b are sealed together to form a water-soluble enclosure 8 around both cleaning components 4, 6. The water-soluble film 8 is tightly wrapped over the second block 6, such that the film seals the top and bottom of through-hole 12 in the block 6.
[0055] The cleaning article 2, may also be referred to as a two-phase cleaning article, since it comprises two different cleaning agents (NaOH and the enzyme-comprising powder). The meltable coating 6b melts when the temperature is raised to above a melting temperature in the range of 50°C - 60°C. The water-soluble film 8 dissolves at a much lower temperature. A cleaning program of a rotisserie oven will thus provide water at a first temperature T1 to dissolve the water-soluble film 8 and release the enzyme-comprising powder 4a of the first cleaning component 4. The enzymecomprising powder 4a acts on the contaminations in the oven and, after a predetermined time, the water is drained. Optionally, the oven is flushed with additional water. Then, the second phase of cleaning is started by raising the temperature to a second temperature T2 (greater than 50°C - 60°C), which melts the coating 6b and releases the NaOH-comprising powder 6a of the second cleaning component 6.
[0056] Figures 5-8 show a cleaning article 102 according to a second embodiment. Elements of cleaning article 102 that are the same as elements of cleaning article 2 of Figures 1-4 carry the same reference numeral, increased by 100. Notably, the cleaning article 102 differs from cleaning article 2 in that it comprises a third cleaning component 114. To this end, the first cleaning component 104 is provided with an opening, namely through-hole 116, as most clearly shown in Figures 7 and 8. Like the through-hole 112 of the second cleaning component 106, also through-hole 116 has a tapered shape, i.e. a decreasing diameter in through-direction A. Likewise, the third cleaning component 114 has a tapered shape to fit in a formfitting manner in the through-hole 116. This results in a compact cleaning article.
[0057] The third cleaning component 114 comprises a rinse aid. The rinse aid is provided as a powder 114a coated with a meltable coating 114b comprising a wax. The coating 114b has a melting temperature that is higher than the melting temperature of the coating 106b of the second cleaning component 106. Thus, when the second cleaning component 106 is released (at temperature T2), the rinse aid is not yet released. Only when the temperature is raised to T3 (65°C - 75 °C), is the rinse aid released due to melting of the coating 114b. It is noted that the water-soluble film 108 encloses all three cleaning components 104, 106,
[0058] 114.
[0059] Figure 9 shows a schematic drawing of a rotisserie oven assembly 250. The rotisserie oven assembly 250 comprises two rotisserie ovens 252, 254. Each rotisserie oven comprises a casing 256, a door 258, and a cooking chamber or oven cavity 260 within the casing 256. The cooking chamber or oven cavity 260 is designed for cooking a food product, such as a chicken. The casing 256 is made of metal, preferably steel. The door 258 comprises glass in a steel frame. Each rotisserie oven 252, 254 is provided with controls 262. The controls 262 allow a user to select a program, e.g. a cooking program or a cleaning program.
[0060] Figure 10 shows a plate of the floor of one of the ovens 252, 254. The floor plate 264 is provided with three receptacles 266, 268, 270. In this example, each receptacle is formed by two walls Til, T1 protruding from the floor plate. The walls Til, T1 form boundaries of the receptacle. The receptacles 266, 268, 270 are each dimensioned to receive only a single cleaning article (in this case the cleaning article 2 of Figures 1-4). In this manner, users can see clearly how many cleaning articles to insert into the oven 252, 254 for the cleaning process, and a correct dosage of each of the cleaning agents is ensured. In this example, the walls 272, 274 extend at substantially 90 degrees with respect to each, for letting two adjoining sides of the substantially rectangular cleaning article 2 abut against said walls 272, 274.
[0061] Several variants are possible within the scope of the attached claims. The features of the above-described preferred embodiments may be replaced by any other feature within the scope of the attached claims, such as the features of one of the other preferred embodiments, or as described in the following paragraphs.
[0062] Instead of providing the second cleaning agent (NaOH and / or KOH) as a compressed powder as depicted in the figures, the second cleaning agent can alternatively be provided as a gel, or a liquid encapsulated in a gel. The meltable coating is then provided around the gel or gel capsule.
[0063] Instead of the through-hole, the second cleaning component can alternatively comprise a recess. Similarly, in case of a third cleaning component (Figs. 5-8), the first cleaning component can alternatively comprise a recess instead of a through-hole.
[0064] In an alternative embodiment, the first and second cleaning component are provided next to each other within the water-soluble film. Preferably, the water-soluble film is then provided as a sealed pouch.
[0065] In a further alternative embodiment, the first cleaning component comprises an opening, wherein the second cleaning component is provided in the opening of the first cleaning component. Preferably, the second cleaning component is provided as a block and / or as a compressed powder (sealed by the meltable coating). Further preferably, the second cleaning component fits into the opening of the first cleaning component in a form fitting manner, e.g. the opening is tapered and the second cleaning component is correspondingly tapered.
[0066] The figures depict the second cleaning component as a block having a circumference in a plane perpendicular to the through-direction (direction A in the figures) that is substantially square in shape. The invention is not limited thereto. Alternative shapes for the circumference include rectangular, polygonal, oval, or circular. Likewise, the opening in the first cleaning component and the second cleaning component, which are both depicted as having a substantially square crosssection, may have an alternative shape, such as rectangular, polygonal, oval, or circular.
[0067] The figures depict a rotisserie that is provided with receptacles for receiving a single cleaning article. The figures show receptacles in the form of walls protruding from the floor plate. In a first example, the walls are distinct parts that are attached to the floor plate (e.g. by welding or gluing). In a second example, the walls are formed as an embossing of the floor plate.
[0068] In an alternative embodiments, the receptacles are formed as containers or recesses for receiving not more than a single cleaning article. For example, the receptacles are formed as indentations in the floor plate, wherein each indentation is dimensioned to hold not more than one cleaning article.
[0069] Instead of providing the floor of the oven with the receptacles, the receptacles may be at a different position in the oven, e.g. attached to a side wall of the oven.
[0070] In some embodiments, the first cleaning component consists of the first cleaning agent. Alternatively or additionally, the second cleaning component consists of the second cleaning agent and the meltable coating.
[0071] In the figures, the water-soluble film is tightly wrapped around the top and bottom of the second cleaning component, such that the film seals the top and bottom of the through-hole in the second component. In embodiments wherein the second component comprises a recess, the film is preferrable tightly wrapped over the recess to seal the recess. The invention is however not limited to tight wrapping of the water-soluble film. In an alternative embodiment, the water-soluble film is provided loosely around the first and second components, e.g. in the form of a sealed pouch that provides room for movement of the first and second components within said pouch.
[0072] In the figures, the water-soluble film comprises two parts that are sealed together at a circumferential seam. Alternatively, the water-soluble film may be provided as a single sheet that is folded to enclose the cleaning components, after which the non-folded edges are sealed. In another alternative, the water-soluble film is provided as a tube. The cleaning components are inserted into the tube and the tube is sealed at both ends to enclose the cleaning components. Regardless whether the water-soluble film is compiled of one, two, or multiple parts, it is one water-soluble film which completely envelops both the first and second cleaning components together. The water- soluble film is different from the meltable coating and the second cleaning agent is thus enclosed both the meltable coating and the water-soluble film.
