Method for preparing soybean protein isolate gel from metal ion composite TG enzyme

Abstract

The invention discloses a method for preparing soybean protein isolate gel by metal ion composite TG enzyme. The method comprises the following steps: preparing a soybean protein isolate solution with the mass concentration of 12%; adding TG enzyme and mixing; a chlorine salt is added to obtain a mixed solution, the chlorine salt is any one of NaCl, KCl and MgCl2, and the concentration of metal ions in the mixed solution is 0.04-0.10 mol / L; filling the mixed solution into a container, sealing, heating in a water bath at 40 DEG C for 50-70 minutes, and then heating in a water bath at 95 DEG C for 25-35 minutes; taking out, cooling in an ice-water bath, and storing overnight at 4 DEG C; by optimizing the concentration and the variety of the metal ions, the strength and the water holding capacity of the soybean protein isolate gel are remarkably improved, and meanwhile, the texture property of the soybean protein isolate gel is improved.
