Abstract
Description
The present invention relates to a cooking appliance for large kitchens in the form of a combination damper or a rotary series appliance with a grease extraction device.Cooking devices for the large kitchen can have large or very large cooking spaces which are suitable for receiving a large amount of items to be cooked. When cooking fat-containing cooking material, such as e.g. poyaldes, ducks, geese, chickens, etc., a relatively large amount of fat released from the cooking material arises. This grease, which escapes together with liquid located in the item to be cooked, in particular water, forms the so-called vapour together with the discharged gaseous cooking chamber atmosphere when being discharged from the cooking chamber. This vapor is discharged from the cooking chamber via a discharge opening for its disposal. In the prior art appliances, the hot vapor from the cooking chamber is fed to a siphon device with vapor condensation in order on the one hand to condense the vapor and on the other hand to cool it together with the fat-water mixture of the vapor. Cooling to a predetermined value is necessary because only liquid with a maximum temperature, which is usually below that of the vapor discharged from the cooking chamber, can be introduced into the waste water system of the house connection.EP 1 717 518 B1 discloses a cooking appliance having a cooking chamber outlet and a siphon device, in which a water reservoir is located, which serves to prevent odors or vapors from the wastewater system from entering the cooking chamber. Furthermore, the water reservoir also serves for cooling the hot vapor. In certain products to be cooked, as indicated above, a large amount of grease emerging from the product to be cooked arises, which can entail problems in the disposal via the waste water house connection. In addition, this natural fat is suitable for further processing, for example in the production of cosmetics, e.g. soap, or fuel, and thus contributes to sustainability in the processing of such raw materials.U.S. Pat. No. 8,997,730 B2 discloses a cooking appliance in which the possibility exists of fat recovery by means of fat extraction. In this cooking appliance, the vapor is discharged via a discharge opening and a short pipe socket into an underlying siphon device, in which a water reservoir is located. A vapor collecting container is located below the discharge opening, wherein it is separated from the water reservoir. In this collecting container there is a discharge opening which is connected to a grease extraction line via which the grease-water mixture can be extracted by means of an extraction pump to a collecting container. After termination of the respective cooking process or after termination of a plurality of cooking processes, the cooking chamber must be cleaned for reasons of hygiene. This can be done either manually by introducing a corresponding cleaning agent into the cooking chamber, distributing it manually and flushing it out again by means of water supply. However, in the operation of large kitchens, automatic cleaning devices have proven to be particularly advantageous. In any case, the cleaning results in a liquid (powder-dissolved or otherwise dissolved) cleaning agent which, for reasons of hygiene, has to be applied completely from the cooking chamber of the cooking appliance and the further cooking appliance components to be cleaned before a further cooking process can be carried out.For applying the cleaning liquid with the corresponding dissolved cooking process residues, the same elements and devices of the cooking appliance are used as those for draining the vapor. In the above-mentioned prior art, this leads to the great disadvantage that the cleaning agent, which is mixed with the dissolved residues from the cooking chamber, likewise reaches the vapor collecting container and is likewise suctioned off. Residues of the cleaning agent thus pass into the collected fat and significantly contaminate this collected raw material for its further processing. The present invention is therefore based on the object of avoiding the disadvantages described above and of proposing a cooking appliance for the large kitchen in the form of a combination damper or a rotary kitchen appliance having a grease collection device and grease recovery, by means of which it is avoided to the greatest possible extent that cleaning residues can penetrate into the recovered grease or mix with it. It is a further object of the present invention to propose a corresponding grease collection device for a large kitchen cooking appliance. Finally, it is also an object of the present invention to propose a method for operating a large kitchen cooking appliance, in particular a combination damper or a rotary food appliance with fat recovery, in which contamination of the recovered fat by cleaning agents is avoided to the greatest extent. To achieve the object, the present invention proposes a cooking appliance for the large kitchen in the form of a combination damper, having a cooking chamber for cooking items to be cooked, which can be arranged on a plurality of cooking levels, or in the form of a rotary kitchen appliance, having a cooking chamber for cooking items to be cooked, which can be arranged on a rotatable items carrier, having a heating device for heating the cooking chamber atmosphere, an appliance controller for controlling the cooking appliance, a cooking chamber outlet which is located below a base of the cooking chamber and serves for discharging a fat-water mixture and gaseous portions of the cooking chamber atmosphere from the cooking chamber, wherein the cooking chamber outlet extends from a discharge opening in the base or in the base region of the cooking chamber as far as a siphon device, wherein a grease collection device is provided, which comprises at least one grease collection container, at least one grease extraction line, at least one extraction pump and at least one grease extraction line, wherein the grease extraction line extends from the grease collection container to the extraction pump, wherein the extraction pump is configured to convey the grease-water mixture sucked in via the grease extraction line further into the grease extraction line, and wherein the grease collection device comprises a cleaning device configured to convey water at least via the grease extraction line and the grease collection container into the cooking chamber outlet in the direction of the siphon device. This advantageously ensures that cleaning agent residues are rinsed out of the grease suction line and out of the grease collection container and are discharged to the siphon device, so that in a subsequent cooking process the generated grease can be recovered without cleaning agent residues. This substantially increases the quality of the recovered fat and contributes substantially to the further usability of this fat.As a result, the large kitchen operator can also achieve a corresponding price for the raw material that can be processed further, which reduces the purchase price of the cooked product to the rear. The constructional design such that the grease collection container is arranged in front of the siphon device results in the distinct advantage that the grease content of the cooking chamber drain introduced into the siphon device is significantly reduced, wherein in addition the grease content in the exhaust air pipe is also significantly reduced. As a result, the service life of the cooking appliance or of its components, such as the discharge pump of the siphon, the circulation pump of the cleaning system, such as seals, in particular of the pumps, the water feeds of the cleaning system or also of the temperature sensors, can be significantly increased. In addition, the great advantage over large kitchen cooking appliances without fat recovery is retained in that fat separation before draining the cooking chamber drain into the house drain channel is superfluous. The advantage also results that no change in the already existing cooking processes is necessary and the cooking result is not impaired even with the grease collection device according to the invention. The cooking quality is thus not impaired.Due to the fact that the grease collection container is located in the initial region of the cooking chamber outlet, the grease extraction can be carried out early and the further flow path up to the siphon device is freed of grease loading early. For example, an initial portion of the grease receptacle is arranged within a distance of 80 to 120 mm from the center line of the discharge opening of the cooking chamber, preferably at a distance of 30 to 40 mm from the center line of the discharge opening.Advantageously, the cooking chamber outlet and the grease collection container are formed from metallic material, which is particularly temperature-resistant, and the grease collection container is welded to the cooking chamber outlet. This results in a long-lived connection of grease collection container to the cooking chamber outlet, while avoiding seals that may not be permanent, wherein the connection region is particularly difficult to reach because of the installation location below the cooking chamber.Accordingly, it is also advantageous that the grease extraction line, which comprises a grease extraction pipe preferably made of metal, is welded to the grease collection container. This creates a particularly permanent connection which is substantially maintenance-free.Because the end section of the grease receptacle is ramp-shaped in the direction of the siphon device, the advantage of a fluidically favorable configuration of the grease receptacle and its connection to the cooking chamber outlet is achieved. During the back-flushing by the cleaning device of the grease collection device, the grease collection container is flushed in the direction of the siphon device and the flushed water is conducted to the siphon device. The ramp-shaped configuration of the end section supports or facilitates the application process.Various embodiments are possible for the configuration of the ramp-shaped end section. For example, the end section is formed from three side surfaces inclined toward one another. Alternatively, the ramp-shaped end section can be formed conically. In a further alternative, the grease collection container can be designed as an inclined and / or conical tube or as a tube section which narrows in the direction of the siphon device.Advantageously, a branch line for the discharge of gaseous portions of the fluid or vapor discharged from the cooking chamber into the cooking chamber outlet branches off from the cooking chamber outlet between the grease collection container and the siphon device. As a result, the cooling capacity of the siphon device can be dimensioned to be smaller. In this context, it is advantageous that the branch line comprises a first section which runs substantially horizontally with a slight gradient of 1° to 5°, preferably of 2° to 2.5°. In principle, the hot exhaust air from the cooking chamber also contains portions of fat in the form of fat droplets and this exhaust air partially condenses in the branch line. Due to the slight slope, a return flow of this condensate, optionally with fat components, back into the cooking chamber outlet can be achieved. It is furthermore advantageous that the grease extraction line extends from the grease collection container to the extraction pump at least partially at a slight gradient of 1° to 5°, preferably of 1.5° to 2°. This ensures that a return flow of the fat-water mixture into the fat collection container is largely prevented.Furthermore, an advantage can be achieved in that the grease extraction line and the first section of the branch line are arranged at a small distance from one another, preferably lying against one another. This has the advantage that the closer the branch line is to the grease extraction line, the greater the heat transfer from the branch line heated by the exhaust air to the grease extraction line, whereby a solidification of the grease flowing through the grease extraction line can be significantly reduced and its flowability is promoted by the transferred heat.It is furthermore advantageous that the suction pump is designed as a pump through which flow can take place in both directions, as a result of which it is able to be flowed through counter to the pumping direction. The suction pump conveys the fat-water mixture from the fat collection container into the fat discharge line. If the pump inlet cannot be closed, there is the possibility that cleaning liquid will penetrate as far as the pump and accumulate there. Due to the ability to allow the suction pump to flow through, also counter to the pumping direction, there is the possibility of the suction pump being flushed through in this direction. Any accumulated cleaning liquid residues can thus be removed again. In a preferred embodiment of the present invention, the grease discharge line comprises a riser pipe which is arranged at the pump outlet of the suction pump and extends upwards from there over a certain distance. This has two advantages, namely firstly that a penetration of cleaning liquid into the riser pipe is limited up to the height of the discharge opening in the cooking chamber of the cooking appliance and secondly that the extracted fat-water mixture is conveyed upwards to such an extent that it enables it to flow off from there into a fat collecting container for collecting the extracted fat or fat-water mixture. Even if, in a space-saving configuration, the riser pipe is arranged substantially vertically upward, oblique arrangements of the riser pipe are likewise possible within the scope of the invention. The cleaning device of the grease collection device advantageously has a water supply. Cooking devices, in particular combination dampers, always have a water supply in order to be able to produce a steam on the cooking chamber. This is done by generating steam in the cooking chamber or by introducing steam from outside the cooking chamber. In addition, water is required for cleaning the cooking chamber, for example via a hand shower or by an automatic cleaning system. It is furthermore advantageous that the water supply of the cleaning device of the grease collection device has at least one water supply line which opens into the riser pipe above the suction pump. This reliably allows the line section possibly occupied by the cleaning liquid, including the suction pump, to be flushed through and freed of cleaning liquid residues. If the suction pump has a closable pump inlet, an ingress of cleaning liquid into the pump can be avoided by closing this pump inlet. This advantageously also creates the possibility of connecting the water supply line of the water supply line of the cleaning device of the grease collection device directly upstream of the pump inlet, in order to initiate a flushing of the grease suction line and of the grease collection container from there. It is furthermore advantageous that the water supply of the cleaning device of the grease collection device has at least one further water supply line. Thus, in addition to the water supply line which opens into the riser pipe, a further water supply line can be provided which opens directly into the grease collection container and, if appropriate, a further water supply line can also be provided which opens into the grease extraction line directly upstream of the extraction pump. The water supply is equipped with at least one solenoid valve which controls the supply of fresh water to the at least one water supply line. A plurality of solenoid valves control the supply of water to a plurality of water supply lines. In an alternative embodiment, the suction pump can advantageously be arranged at a height which lies above the height of the discharge opening in the base or base region of the cooking chamber of the cooking appliance, wherein the outlet end of the grease suction line is connected to the pump inlet via a connecting line. This has the advantage that cleaning liquid does not in any case reach the suction pump and the latter therefore also does not have to be subsequently freed therefrom.Alternatively, it is possible to arrange the suction pump between the cooking chamber base and the appliance base or also below the appliance base.During operation of the cleaning device of the cooking appliance, the suction pump is not in operation. This prevents suction of cleaning agent to the suction pump. Also during operation of the cleaning device of the grease collection device, the suction pump is not in operation, as a result of which its flushing, in particular when the water is supplied into the riser pipe, can take place unimpeded.Furthermore, an advantage of the present invention is that a heating device is provided on or in the grease collection container, by means of which heating device liquid non-grease components of the grease-water mixture discharged from the cooking chamber can be vaporized. This has the advantage that the water content in the fat-water mixture is further reduced and the concentration of fat can thus be increased during recovery. It is furthermore advantageous that the grease collection device has a shut-off valve at the inlet of the water supply of the cleaning device in the grease extraction line, so that after the grease extraction line is shut off, the cleaning device is capable of cleaning the extraction pump and the grease discharge line by means of flushing. In this case, the shut-off valve can advantageously be a multiway valve which can assume a position in which the grease extraction line and the grease collection container are flushed through, and can assume another position in which the extraction pump and the grease discharge line are flushed through. If necessary, the shut-off valve can also be designed in such a way that it enables flushing in both directions at the same time. When the cooking appliance is used intensively and / or for a longer time, there may be the risk that grease deposits at unfavourable locations. Advantageously, the water used for the flushing through of the cleaning device of the grease collection device can be heated, whereby solidified grease can be made detachable again and rinsed out.The above-mentioned partial object is also achieved by a grease collection device for large kitchen cooking appliances, in particular combi-type dampers or rotary-series appliances, which comprises at least one grease collection container, at least one grease suction line, at least one suction pump and at least one grease discharge line, wherein the grease collection container can be arranged at a cooking chamber outlet of the cooking appliance in the vicinity of a discharge opening in the base or in the base region of the cooking appliance, wherein the grease suction line extends from the grease collection container to the suction pump, wherein the suction pump is configured to further convey the grease-water mixture sucked in via the grease suction line into the grease discharge line, and wherein the grease collection device comprises a cleaning device configured to, Water can be conveyed at least via the grease suction line and the grease collection container into the cooking chamber outlet in the direction of a siphon device at the end of the cooking chamber outlet of the cooking appliance. This makes it possible to integrate a grease collection system into cooking appliances in which fat or possibly also other substances can be recovered by suitable suction. Finally, the present invention also comprises a method for operating a large kitchen cooking appliance, in particular a combination damper or a rotary series appliance, and for collecting grease accumulating during the cooking process, having the following steps:collecting the fat-water mixture emerging from the cooking chamber of the cooking appliance via its discharge opening in a fat collection container of a fat collection device which is attached to a cooking chamber outlet of the cooking appliance, suction of the fat-water mixture via at least one fat suction line from the fat collection container by means of a suction pump arranged at the end of the fat suction line, delivering the fat-water mixture drawn in by the suction pump via a fat discharge line to the fat collection container, andperforming a cleaning process of the grease collection device after completion of a cleaning process of the cooking device by water being conveyed in the direction opposite to the suction direction at least through the grease suction line and the grease collection container into the cooking chamber outlet in the direction of a siphon device at the end of the cooking chamber outlet of the cooking device.Advantageously, the suction pump is used in a clocked manner. In this case, the timing can be permanently preset or can change during the course of the cooking program or cooking process. For example, suction is effected by pumping out in a 60 second cycle: 30 seconds of pumping out and 30 seconds of pause. In certain cooking steps, continuous operation is also possible. On the other hand, a timing below 50% is also possible, i.e. the pump-down duration is shorter than the pause. It is thus also advantageous that the clocking takes place as a function of the item to be cooked and / or the cooking process. The suction output can thus be adapted to the fat build-up, for example due to the item to be cooked (duck, gans) and / or the amount of load in the cooking chamber and / or the course of the cooking process. It is furthermore advantageous that the cleaning process of the grease collection device is carried out both at the beginning and at the end of the cleaning process of the cooking appliance. The lead-through at the beginning advantageously creates a removal of the remaining fat-water mixture before the penetration of the cleaning agent discharged from the cooking chamber during the cleaning process of the cooking appliance, and the lead-through at the end removes the remaining cleaning agent.Due to the fact that at the beginning of the cleaning process of the cooking appliance, a rinsing through of the grease collection device takes place, the grease collection device is rinsed with fresh water and, after the completion of the rinsing process, a portion of the fresh water remains in the grease collection container, in the grease suction line, in the suction pump and in a section of the riser pipe. If the cleaning of the cooking appliance is now started, the water present in the grease extraction line makes it more difficult for the cleaning agent to penetrate into this grease extraction line.During the next grease suction process after previous renewed rinsing of the grease collection device, the fresh water present is conveyed into the grease collection container, and only then is the drawn-in grease introduced there, because of the natural separating capacity between grease and water, can the water collected at the bottom in the collection container be correspondingly discharged and the grease separated therefrom remains.Further details, features and advantages of the present invention will become apparent from the following description with reference to the accompanying drawings. The following shows: FIG. 1 shows a perspective view of a cooking appliance in the form of a combination damper; FIG. 2 shows a further perspective view of the cooking appliance from FIG. 1 with the cooking chamber door removed; FIG. 3 shows a perspective view of a cooking appliance in the form of a large combination damper with a rack; FIG. 4 shows a schematic basic illustration of the structure of an embodiment of the cooking appliance according to the invention in the form of a combination damper; FIG. 5 shows a perspective view of the cooking chamber outlet and a partial view of the grease collection device according to the invention with grease extraction line; FIG. 6 shows a view onto the rear side of the cooking appliance in the form of a combination damper with grease extraction pump, grease discharge line and water supply of the cleaning device of the grease collection device. In the figures, like elements are denoted by like reference numerals.FIGS. 1 and 2 show a conventional cooking appliance 1 in the form of a combination damper, which has a cooking chamber 3 for cooking food, which can be closed by a cooking chamber door 5. For handling the cooking chamber door 5, the latter has a door handle 8. Next to the cooking chamber 3 is the so-called technical chamber 6, in which a drive device for a fan wheel 7, the device control with display and control panel 9 and a hand shower 11 with hand shower head 13 are arranged. As can be seen, the hand shower head 13 is arranged in a recessed manner in a recess-like receptacle 19 and does not protrude beyond the front side of the cooking appliance in the rest position illustrated in FIGS. 1 and 2. Due to the niche-like receptacle 19, the hand shower head 13 is easy to grasp and can be pulled out together with a part of a feed line (not shown). The cooking appliance has a water supply to which the hand shower 11 is connected, wherein water can be injected into the cooking chamber 3 via the hand shower 11, for example for carrying out a manual cleaning process. As can also be seen from FIG. 2, the cooking chamber 3 has, in the region of its base 4, an outflow 15 through which not only the fat-water mixture formed from condensed water and the fat released from the item to be cooked during cooking by the cooking process, but also gaseous cooking chamber atmosphere can flow out or outflow, which together forms the vapor defined here, and the cleaning medium produced during a cleaning process or the cleaning or washing liquor produced can be discharged from the cooking chamber 3.Also shown schematically is an internal temperature sensor 17 of the cooking appliance 1, which in the exemplary embodiment shown serves as a core temperature sensor, on the bottom 4 of the cooking chamber 3.On the upper side of the cooking chamber 3 an exhaust air outlet 21 is visible, at which an exhaust air pipe opens. This will be described in more detail below. While a cooking appliance 1 of a relatively small size is shown in FIGS. 1 and 2, a cooking appliance 1' of a large size is shown in FIG. 3. A transparent door pane 20 of the cooking chamber door 5 reveals a (suspension) frame 29 with a plurality of insert strips 31, which serve to receive an appropriate number of insert plates or insert grids, which form insert planes or form the desired number of insert planes for the respective cooking process, occupied by the provided item to be cooked. A corresponding frame 29 is located on the opposite side and both frames 29 are part of a known tray frame of a tray car 23, which tray car 23 comprises a rectangular frame 25 on which a roller 27 is provided at each corner, at least two of the rollers 27 being rotatable. As can be seen from FIG. 3, the frame 29 has twenty insert strips 31, which makes it possible to accommodate a large quantity of food to be cooked up to twenty insert planes. The cooking appliance 1' in turn rests on four corner supports 14.Advantageously, for example, a collecting plate or collecting trough (not shown) can be used on the lowermost insert strips on both sides, which collecting plate or collecting trough has an opening offset slightly downwards, as a result of which the liquid grease flows to this opening, which in the inserted state of the collecting trough comes to lie above the discharge opening 15. As a result, the grease dripping from above can be collected and conducted to the discharge opening 15 and drained into the latter, whereby the cooking chamber base 4 of the cooking appliance is wetted very much less by grease. As a result, the base 4 of the cooking chamber 3 does not have to be cleaned so intensively, which significantly facilitates the cleaning of the cooking chamber 3.If a large amount of fat cooked goods, such as ducks or geese, is cooked in such a large cooking appliance 1', a correspondingly large amount of fat released arises.FIG. 4 schematically shows a schematic design of the two illustrated cooking appliances 1 and 1', wherein the size relationships of the individual components are not shown true to scale but only schematically. Because both cooking devices are combination dampers, there are a plurality of insertion planes 32 for the corresponding reception of items to be cooked. The fan wheel 7 is driven by a motor 12, as a result of which the air or cooking chamber atmosphere 22 can be circulated in the cooking chamber 3.The discharge opening 15 is formed in the base 4 of the cooking chamber 3, to which a cooking chamber outlet 33 is connected, which extends on the underside of the cooking chamber 3 as far as a siphon device 35 and opens into the latter. The siphon device 35 has a siphon container 36, in which a water reservoir 37 is located. As is known from the prior art, a separating wall 41 is provided in the siphon container 36 and extends into the water reservoir 37. This forms an odor trap opposite the cooking appliance outlet 43 which is connected to the outlet channel of the house. A discharge channel 44 from the siphon container 36 opens into this (not shown).A water feed 45 is schematically shown, which is supplied with fresh water according to arrow 47, wherein this fresh water can be fed into siphon container 36 via a water feed line 49. To empty the siphon container 36, an emptying pump 51 is provided, to which an emptying line 53 is connected, via which the water reservoir 37 can be pumped out into the discharge channel 44. After emptying the siphon container 36, fresh water can be fed into the siphon container 36 via a water feed line 49 in order to restore the water reservoir 37.The cooking appliance schematically illustrated in FIG. 4 has an automatic cleaning device of the cooking appliance, which cleaning device comprises a feed line 55, with which liquid can be introduced from the water reservoir 37 into the cooking chamber 3 via a circulation pump 57. The water reservoir 37 serves for condensing exhaust air which is supplied to the siphon device 35 via the cooking chamber outlet 33, wherein corresponding vapor components likewise reach and act on the water reservoir 37. For this reason, in order to carry out the automatic cleaning of the cooking appliance, the water reservoir 37 is emptied by means of the emptying pump 51 and fresh water is supplied via the water supply line 49. This can then serve as starting liquid for the automatic cleaning and can be supplied to the cooking chamber 3 several times if necessary by means of the circulation pump 57.Moreover, such an automatic cleaning device of a combination damper is known from the prior art and is therefore not described in any further detail.According to the present invention, the cooking appliance has a grease collection device 59 which has a grease collection container 61 which, as can be seen from FIG. 4, is arranged below the cooking chamber outlet 33 and is preferably welded to the latter. A connection opening 71 for a grease extraction pipe 73 is shown in dashed lines, which is part of a grease extraction line. Other connection possibilities that provide a permanent connection of cooking chamber outlet 33 and grease collection container 61 are within the scope of the invention.Referring now to Fig. 5, there is shown in perspective view a portion of the grease catcher 59 of the present invention. To connect the cooking chamber outlet 33 to the cooking chamber 3, the cooking chamber outlet 33 has a cooking chamber outlet inlet 34, with a connecting flange 38 which can be screwed to the cooking chamber base 4. The grease receptacle 61, which is welded to the tubular cooking chamber outlet 33 in the embodiment shown, to which the invention is not limited, is located in the vicinity of the cooking chamber outlet inlet 34. Details thereof will be described later. As can be seen from FIGS. 4 and 5, the cooking chamber outlet 33 ends in a connection opening 58 for connection to the siphon container 36 of the siphon device 35.As can also be seen from FIGS. 4 and 5, between grease collection container 61 and connection opening 58 there is an opening 63 for a branch line 64 of the exhaust air from the cooking chamber 3. An exhaust air pipe can be connected to this connection piece 69, which leads to the exhaust air outlet 21 (FIGS. 1 to 3 ).The first section 65 of the exhaust air branch line 64 extends substantially horizontally or with a slight gradient of 1° to 5°, preferably of 2° to 2.5°. This has the advantage that vapor of the exhaust air condensing there can flow back into the cooking chamber outlet 33 again. The second section 67 of the exhaust air branch line 64 adjoining the latter preferably runs on a similar or identical gradient to the first section 65. condensate and possibly also non-solidified fat can also flow back from there. Furthermore, any cleaning agent that may have entered these sections 65 and 66 can also flow back into the cooking chamber outlet 33 again during the evacuation of the cleaning agent from the cooking chamber 3 via the cooking chamber outlet 33 and then flows further into the siphon device 35.The grease collection device 59 also comprises a grease suction pipe 73, which preferably opens out in the lower region of the grease collection container 61 or creates the possibility that the grease-water mixture collected in the grease collection container 61 can flow off into the grease suction pipe 73. In this case, it is helpful that the grease suction pipe 73 extends in a slight gradient of 1° to 5°, preferably of 1.5° to 2°.Reference is now made to FIG. 6, which shows a perspective view of the only partially illustrated rear side 10 of the cooking appliance 1 or 1'. As can be seen from FIG. 6, the grease extraction pipe 73 extends beyond the rear side 10 of the cooking appliance and is connected to an extraction pump 77 via a connecting pipe section 75. The exhaust pump 77 serves to exhaust the grease-water mixture from the grease collection container 61 and to discharge this mixture via a grease discharge line 82 into a grease collection container (not shown), such as a canister, a collection barrel, etc.The suction pump 77 is connected to the appliance control via a corresponding control and supply cable 79, wherein the cable 79 extends from the suction pump 77 via an opening 81 in the rear side 10 of the cooking appliance for appliance control. The grease discharge line 82 has a riser pipe 83 which is held on the rear side 10 of the cooking appliance and extends substantially vertically upwards. This riser pipe 83 is adjoined by a discharge pipe 85, which in the exemplary embodiment extends substantially horizontally and at the end of which a shut-off valve 87 is provided for shutting off the grease discharge line 82.According to the invention, the grease collection device 59 comprises a cleaning device with which at least the grease suction pipe 73 and the grease collection container 61 can be flushed in the opposite direction to the grease suction device in order to remove residues of the grease-water mixture as well as residues of the cleaning agent that has penetrated during the cleaning process of the cooking appliance again, so that contamination of the extracted grease or grease-water mixture can be avoided as far as possible during the next process of grease suction. From the water supply 45 (FIG. 4 ) a water supply line 89 extends through an opening 90 in the rear wall 10 of the cooking appliance. This water supply line 89 opens into the riser pipe 83 above the suction pump 77. when water is supplied via the water supply line 89, the grease collection device can thus be cleaned and rinsed from above the suction pump 77 through the riser pipe 83, the connecting pipe section 75, the grease suction pipe 73 and the grease collection container 61, from which, promoted by the flow by the ramp-shaped end section 62, the rinsing or rinsed-through liquid quantity is discharged via the cooking chamber outlet 33 into the siphon device 35.In an alternative embodiment, the suction pump 77 can have a shut-off device at its pump inlet 78, which prevents cleaning agent from entering the suction pump 77 from the grease suction pipe 73 and the connecting pipe section 75. Accordingly, the water supply line 89 can open into the connecting pipe section 75 directly upstream of the pump inlet 78, wherein a flushing through to the siphon device 35 can take place from there. As can be seen from FIG. 6, two lateral covering walls 91 are provided, which are connected to the rear wall 10 of the cooking appliance by means of screws 93 via corresponding retaining elements 92 and thus make possible a box-shaped structure, which can be assembled with a corresponding covering wall (not shown). Advantageously, the overall arrangement of the suction pump 77 and its connections is then accessible for maintenance work without having to intervene in the interior of the cooking appliance. The present invention is not limited to the illustrated embodiments. For example, a plurality of water feed lines can be provided, of which one further opens directly into the grease collection container 61 or the grease extraction pipe 73 or even one further opens into the grease collection container 61 or into this grease extraction pipe 73.In a further alternative embodiment, a multiway valve can be provided at the pump inlet 78, with which water supplied can be introduced either into the connecting pipe section 75 and the grease extraction pipe 73 or into the extraction pump 77 and the grease extraction line 82 adjoining the latter one after the other or simultaneously. In a further alternative embodiment, for example, the riser pipe 83 can be directly connected to the grease extraction pipe 73 and the extraction pump 77 can be arranged at the upper end of the riser pipe 83, namely at a height which lies above the height of the discharge opening 15 of the cooking chamber 3. This prevents cleaning liquid from being able to penetrate as far as the suction pump 77. The discharge pipe 85 is then connected to the outlet of the suction pump 77.The present invention thus achieves the possibility of recovering fat from the cooking cavity, which is substantially free of detergent, said fat being notably extracted from cooked foods. This considerably increases the quality of the fat recovered for a corresponding further processing, for example for cosmetics. In addition, the considerable advantage is realized that the harmful grease load of both the discharge pump and the circulation pump can be reduced considerably by grease that has penetrated into the water reservoir, wherein corresponding seals can also be saved. The service life of the cooking appliance or its service life can thus be considerably increased. The great advantage also results that a (negative) influence on the cooking quality is avoided.List of reference numbers:1, 1' Cooking appliance 3 cooking chamber 4 cooking chamber base 5 cooking chamber door 6 technical chamber 7 fan wheel 8 door handle 9 display and control panel 10 rear wall of the cooking appliance 11 hand shower 12 motor 13 hand shower head 14 foot 15 discharge opening 17 temperature sensor 19 niche-like receptacle of the hand shower head 20 transparent door pane 21 outlet exhaust air 22 cooking chamber atmosphere 23 tray carriage 25 frame 27 rotatable rollers 29 frame or tray frame 31 slide-in strips 32 slide-in plane 33 cooking chamber outlet 34 cooking chamber outlet inlet 35 siphon device 36 siphon container 37 water reservoir 38 connecting flange 41 partition wall 43 cooking appliance outlet 44 discharge channel 45 water feed 47 arrow of the fresh water feed 49 water feed line 51 discharge pump 53 discharge line 55 feed line 57 circulation pump 58 connection opening to the siphon device 59 grease collection device 61 grease collection container 62 ramp-shaped end section 63 opening for branch line exhaust air 64 branch line exhaust air 65 first section branch line exhaust air 67 second section branch line exhaust air 69 connection stub exhaust air pipe 71 connection opening grease suction pipe 73 grease suction pipe 75 connection pipe section 77 suction pump 78 pump inlet 79 connection cable of suction pump 81 opening 82 grease discharge line 83 riser pipe 85 discharge pipe 87 shut-off valve 89 water supply line 90 opening 91 lateral cover wall 92 holding element 93 screw
