A speed cooking ovens is disclosed comprising a cooking cavity, thermal heating source, air movement and directing means, air flow control means, an air delivery means, and a vent assembly. The speed cooking oven may additionally utilize air flow control mechanisms and be practiced as a single rack speed cooking oven or a multi rack speed cooking oven. Hot gas is circulated to and from the oven cavity via air delivery means, such that turbulently mixed glancing, conflicting and colliding air flows mix at and about the surfaces of the food product. The turbulently mixed air flows are spatially averaged over the surface area of the food product producing high heat transfer and moisture removal rates, thereby optimizing speed cooking of the food product.

High speed convection oven

A convection heating apparatus capable of providing effective, high speed cooking without the assistance of microwave energy. The oven apparatus includes an exterior cabinet, a door, and a cooking chamber having interior side walls, a back wall, and a lower jet plate. The oven further includes a blower for circulating gas through the lower jet plate into the cooking chamber. In addition, the oven includes a product support disposed within the cooking chamber above said lower jet plate. The product support is disposed on a rail that is positioned to hold the lower jet plate in place when air is circulated therethrough. Optionally, the oven further includes an upper jet plate disposed within the cooking chamber above the product support. Temperature controlled gas is circulated through the upper jet plate toward the product support and any food product disposed on the product support. The oven may also include means for imparting movement to the product support during cooking operations in order to provide a more even cooking of a food product. A catalytic converter material is disposed downstream from the blower and upstream from a return plate which controls the direction of gas flow from the cooking cavity and protects the catalytic converter material.

Temperature controlled burner apparatus

A system for controlling temperature in an enclosure operates in a low heat or a high heat mode with flame always present. The presently intended use is for providing a cooking grill with a controlled temperature cooking space. An electrically controlled valve having high flow rate and low flow rate settings is interposed in the fuel line for at least one of the burners in the grill. A temperature sensor signals cooking space temperature to a controller that may be a microprocessor. The system includes a keyboard allowing the user to communicate a selected set point to the microprocessor and the microprocessor communicates status to a display. The microprocessor selects the setting of the electrically controlled valve. In a preferred embodiment, the electrically controlled valve is placed in series fuel flow with one of the manually adjustable valves commonly found on cooking grills.

Disclosed herein is an oven that is capable of discharging hot air generated when cooling a door and heat generated in a cooking chamber through the lower end of the door. The oven includes a door having at least two separated air channels. The air channels comprise at least one first air channel to discharge hot air generated when cooling the door through the lower end of the door, and at least one second air channel to introduce air through the lower end of the door such that the door is cooled. In the housing is mounted a circulating fan. Between the circulating fan and the air channels is connected a channel connecting unit. As the circulating fan is rotated, air flows along the second air channel to cool the door. Hot air generated when cooling the door is introduced into the first air channel through the channel connecting unit, and is then discharged out of the oven through the lower end of the door.

An outdoor gas barbecue grill having an electric self-cleaning unit. The gas barbecue grill includes a grill housing, a grill cover, and a lower grill housing for receiving a gas burner and a cooking grate member. The underside of the cooking grate member includes a plurality of heating members made of metal attached thereto. One of the walls of the lower grill housing includes an electric self-cleaning heating unit mounted thereon and includes an electrical conductor member having a plurality of heating elements for detachably connecting to the plurality of heating members on the cooking grate. During a self-cleaning cycle, the heating members are heated to at least 500° F. in order to burn-off and clean the encrusted and burnt food residues on the cooking grate member for sanitizing the cooking grate member. The grill housing further includes a grill lock connected to the grill cover and to the lower grill housing for locking the grill cover relative to the lower grill housing in order to maintain and control the heat production (ΔH) within the closed gas grill for cleaning the cooking grate member during a self-cleaning cycle. Further, one of the walls of the lower grill housing includes an exhaust fan being attached thereto for venting and dissipating the vaporized fumes to the outside air from the burning of the encrusted food residues on the cooking grate member during the self-cleaning cycle.
