[0002] The present disclosure relates to the food and beverage industry. More particularly, the present disclosure relates to a process for preparing beverages rich in healthy antioxidants and natural caffeine, and the beverage composition thereof. [Background technology]
[0003] Tea / coffee is a basic need for many people in almost every country, and these consumers require tea / coffee almost every day, with many of them drinking tea / coffee multiple times a day.
[0004] In existing formulas that contain tea leaves, the antioxidants and caffeine are not optimized to maximize the health benefits per serving. Moreover, existing methodologies do not address the optimization of antioxidants and caffeine by blending various ratios of antioxidant-rich botanicals such as black, green, and white teas with coffee beans, certain spices, and resveratrol from grape skins. From the above discussion, it is clearly depicted that there is a need for a process to prepare beverages rich in healthy antioxidants and natural caffeine. Summary of the Invention
[0005] The present disclosure seeks to provide a process for preparing high polyphenol and antioxidant extracts using various ratios of tea leaves, spices, coffee beans, and natural glycerin as substrates or extractants of natural antioxidants and natural caffeine. The present disclosure uses natural glycerin to optimally extract natural healthy components of plants by blending them in various ratios to maximize the final antioxidants and natural caffeine of the extract.
[0006] In this disclosure, different ratios of natural ingredients are blended and used together with a glycerin-based extract to exponentially increase the final antioxidant levels and natural caffeine of the extract.
[0007] In one embodiment, a process is disclosed for preparing a beverage concentrate enriched with healthy antioxidants and natural caffeine. The process includes blending a combination of selected ingredients with purified water and vegetable glycerin while uniformly stirring the mixture. The process further includes cold soaking the mixture for a period of time before fermentation begins. The process further includes centrifuging the cold soaked mixture to remove tea / coffee residues from the mixture. The process further includes a secondary clarification to concentrate the liquid tea / coffee extract thereby removing any tea / coffee residues left behind. The process further includes concentrating the clarified tea / coffee, homogenizing the concentrated tea / coffee, and then filling the partially drunk tea / coffee into jars / packets.
