[Solution] The present invention provides a process for spray freezing or spray freeze-drying under conditions of very low oxygen pressure, such as essentially anaerobic conditions, and in particular, a process for spray freezing obligate anaerobic microorganisms (bacteria) under conditions of very low oxygen levels or essentially anaerobic conditions. Furthermore, the present invention provides products that can be obtained by this process and apparatus that can be used in this process.
