Ginseng saponins have physiological activities such as anticancer effects, antioxidant effects, prevention of arteriosclerosis and hypertension, improvement of liver function, anti-fatigue, anti-stress effects, anti-aging, promotion of brain activity, anti-inflammatory activity, treatment of allergic diseases, and promotion of protein synthesis ability. Korean red ginseng is known to have excellent physiological activities such as antioxidant effects, lowering blood pressure, improving alcoholic hyperlipidemia, and lowering blood sugar.

[0020] One aspect of the present invention provides a method for pretreatment or storage of ginseng, comprising the step of placing dried ginseng in a storage container and storing it at a temperature of 2°C or lower.
[0021] In the present invention, ginseng may be used without limitation, including cultivated or commercially available ones. The ginseng includes various processed ones, and for example, may be at least one selected from the group consisting of fresh ginseng, fine ginseng, black ginseng, mountain ginseng, camphor ginseng, wild-cultivated ginseng, purified ginseng, enzyme-treated fine ginseng, fermented ginseng, red ginseng, and fermented red ginseng, but is not limited thereto. Fresh ginseng refers to raw ginseng that has maintained its original shape, and fine ginseng refers to the thin roots of ginseng. Red ginseng is raw ginseng that has been steamed, cooked, and dried, and has a browning reaction during the drying process, resulting in a light yellow-brown to reddish-brown color. This removes microorganisms on the surface of the fresh ginseng and prevents them from spreading internally.
