[0005] In recent years, herbal soft drinks have established themselves as a rational way to invigorate while combining health and wellness with enjoyment, leading to an increase in the consumption of this category of beverages. The interest in herbs stems from their rich variety of biologically active components with pleasant aroma and taste. Unlike fruits, the presence of bioactive substances in herbs is accompanied by a low sugar content. To enable year-round use and processing, herbs are dried and stored in a dry state. The composition of herbs determines the methods used for their processing — through distillation and / or extraction with various solvents. Distillation products contain only the volatile components of the raw material, while extraction products include the entire range of soluble substances in the respective extractant. Additionally, the extraction process can be conducted selectively to isolate specific components, allowing the production of different flavor and aroma-flavor profiles from the same raw material.
[0006] Extracts for soft drinks are available in various forms — liquid, powdered, or the so-called soft extracts, which are concentrated liquid extracts containing 70% dry matter. The latter allow for a higher content of biologically active substances to be added but have a stronger impact on the taste and color of the final beverage. [0015] Technical nature of the invention
[0016] The objective of the invention is to develop a method of production and compositions for herbal soft drinks that ensure healthy manufacturing using natural ingredients, without sugar and without preservatives.
[0017] This objective is achieved by creating a method for the production of herbal soft drinks, including the operations: water treatment, composed of the processes of filtration, dechlorination softening; obtaining fruit and herbal extracts; saturating the liquid with CO2; bottling and capping the drink; labeling and packaging in cartons. According to the invention, the method includes the operations: the water treatment includes the processes of filtration, where the water passes through a mechanical filter with a size of 1-3 microns; followed by dechlorination at low pressure; softening by reverse osmosis through circulation of the water through resin, after which the water undergoes fine filtration through a filter with a size of 0,4-0, 8 microns and passes through a glass tube equipped with a UV lamp operating at a frequency of 275 hertz; prequalification of the selected herbs by preparing a sample extract by extraction of lOgm of herb in 150 - 200 ml of water at 75°C, with the extract then subjected to colorimetric analysis with a spectrophotometer with a wavelength of 420 nanometers; the preparation of herbal extracts is carried out by mixing the graded herbs with purified water in a stainless steel reactor; heating of the circulating ready-mixture at a temperature in the range 75°C - 85°C for 2 - 4 hours; filtering the prepared mixture through a mechanical filter of 1-3 microns to remove excess impurities and sediments; cooling and storage of the finished herbal extract mixture to a temperature of 1 °C - 3 °C in a hermetically sealed container; pasteurizing the herbal extract by heating it within a temperature range of 75°C to 85°C in a stainless steel reactor, and once the desired temperature is reached, storing it at 1°C to 3°C, with the mixture being held for 2 to 4 hours after reaching the set temperature to achieve 8 pasteurization units; mixing the herbal extract, fruit extracts and treated water in a stainless steel reactor; filtering the mixture through a fine filter of 0,4-0, 8 microns at a temperature of 1°C to 3°C and transferring it to an acratophore with a pressure of 5 bar; circulating the filtered mixture to saturate it with mineral CO2 for carbonated beverages or with liquid nitrogen for non-carbonated beverages at a temperature of 1°C to 3 °C and a pressure of 2-3 bar for 38-42 minutes in a stainless steel reactor; dosing and isometric filling of the gas-impregnated mixture under a pressure of 3 bar, followed by automatic sealing, and subsequent transferring and arranging in crates; low-temperature pasteurization of the finished products, arranged in plastic crates, in a cold pasteurization chamber at 61°C-68°C for 30-60 minutes; placing the product, after cold pasteurization, in a packaging room at room temperature for 1-3 hours, followed by labeling and packing into cartons.

Claims
PATENT CLAIMS1. A method of producing healthy herbal soft drinks comprising the operations: water treatment consisting of filtration, dechlorination, and softening; obtaining fruit and herb extracts; saturating the liquid with CO2; bottling and capping the beverage; labelling and packing into cartons characterised by the fact that the water treatment includes the processes of filtration, where the water passes through a mechanical filter with a size of 1 - 3 microns; followed by its dechlorination under low pressure; softening through reverse osmosis by circulating the water through resin, after which the water undergoes fine filtration through a filter with a size of 0,4 - 0,8 microns and passes through a glass tube equipped with a UV lamp operating at a frequency of 275 hertz;Pre-qualification of the selected herbs by preparing a sample extract by extraction of lOgm of herb in 150 - 200 ml of water at 75°C, which extraction is subjected to colorimetric analysis with a spectrophotometer with a wavelength of 420 nanometers; the preparation of herbal extracts is carried out by mixing the quality- assessed herbs with purified water in a stainless steel reactor; heating the circulating prepared mixture at a temperature range of 75°C to 85°C for 2 to 4 hours; filtering the prepared mixture through a mechanical filter of 1-3 microns to remove excess impurities and sediments; cooling and storing the prepared herbal extract mixture at a temperature of 1°C to 3 °C in a hermetically sealed container; pasteurizing the herbal extract by heating it within a temperature range of 75°C to 85°C in a stainless steel reactor, and after reaching the desired temperature, storing it at 1 °C to 3 °C;mixing the herbal extract, fruit extracts, and treated water in a stainless steel reactor; filtering the mixture through a fine filter of 0.4-0.8 microns at a temperature of 1°C to 3 °C and transferring it into an acratophore at a pressure of 5 bar; circulating the filtered mixture for saturation with mineral CO2 for carbonated beverages or with liquid nitrogen for non-carbonated beverages at a temperature of 1°C to 3 °C and a pressure of 2-3 bar for 38-42 minutes in a stainless steel reactor; dosing and isometric filling of the gas-impregnated mixture under a pressure of 3 bar, followed by automatic sealing, transferring, and arranging in crates; low-temperature pasteurization of the finished products, arranged in plastic crates, in a cold pasteurization chamber at 61°C-68°C for 30-60 minutes; placing the cold-pasteurized product in a packaging room at room temperature for 1-3 hours, followed by labeling and packing into cartons.
