Abstract

A brewing control method includes: determining a target process control parameter corresponding to a type of a to-be-produced beer from a plurality of process control parameters; acquiring fermentation tank information of a target fermentation tank; determining a discharge path of the target fermentation tank based on the fermentation tank information; and controlling connection and disconnection of the discharge path based on the target process control parameter. According to this solution, the target process control parameter corresponding to the type of the to-be-produced beer is determined from the plurality of pre-stored process control parameters during beer brewing, thereby automatically controlling the connection and disconnection of the discharge path of the target fermentation tank based on the target process control parameter with higher accuracy and safety than manual control, and saving labor costs.

Description

BREWING CONTROL METHOD, BREWING CONTROL APPARATUS, BREWING SYSTEM, ELECTRONIC DEVICE, AND COMPUTER STORAGE MEDIUMTECHNICAL FIELD

[0001] Embodiments of the present disclosure relate to the technical field of wine brewing, and in particular to, a brewing control method, a brewing control apparatus, a brewing system, an electronic device, and a computer storage medium.BACKGROUND

[0002] In a beer production process, cold solids in a fermentation tank, if not discharged in time, may be attached to surfaces of yeast cells, thereby reducing surface contact area of yeast, and affecting fermentation speed. After fermentation and diacetyl reduction are completed, the yeast should be discharged in time. If the yeast is not fully discharged, it may be difficult to lower the tank bottom temperature, which may cause yeast autolysis and temperature rise, cause vicious cycle, and finally affect taste and quality of beer. At present, particular stress is laid on manual or semi-automatic control in a conventional method for discharging cold solids and yeast sludge. An operator performs operations such as connection and disconnection by controlling different valves to achieve production and discharge, and determines by himself whether the cold solids or the yeast sludge has been fully discharged.

[0003] However, a beer factory may produce several or even dozens of beers of different brands (alarge-scale brewery or craft brewery) . Since production processes of beers of different brands are different, time required for each process step during each production may also be different. Since manual or semi-automatic control in an existing method is performed by a special operator, when each process step is completed, production control operations such as valve switching are performed manually with unstable control accuracy, thereby resulting in low production efficiency.SUMMARY

[0004] In order to solve the above technical problems, embodiments of the present disclosure provide a brewing control method, a brewing control apparatus, a brewing system, an electronic device, and a computer storage medium, to at least solve or alleviate the above problems.

[0032] Specific implementations of the embodiments of the present disclosure will be further described below with reference to the drawings in the embodiments of the present disclosure.

[0033] FIG. 1 is a schematic diagram of an example scenario suitable for a brewing control method in an embodiment of the present disclosure. As shown in FIG. 1, the example scenario is a part of a scenario in a brewing production line, which includes a target fermentation tank 10, a feeding pipeline 20, a flushing agent pipeline 30, and a finished product pipeline 40. The brewing production line may include one or more fermentation tanks. The example in FIG. 1 is a scenario including one target fermentation tank 10. In a brewing process, brewing raw materials flow into the target fermentation tank 10 through the feeding pipeline 20 and a fermentation tank connecting pipeline 50 that are connected. After fermentation in the target fermentation tank 10 is completed, cold solids and yeast  sludge deposited at the bottom of the target fermentation tank 10 are discharged to a discharge pipeline 60 through the fermentation tank connecting pipeline 50, the discharge pipeline 60, and a pipeline therebetween that are connected. After the discharge is completed, the pipeline is flushed through the flushing agent pipeline 30 and the discharge pipeline 60 that are connected, and finally the brewed beer is discharged through the fermentation tank connecting pipeline 50, the finished product pipeline 40, and the pipeline therebetween that are connected.

[0034] It can be seen that the above production process involves multiple connections and disconnections of different pipelines, and manual control lacks accuracy and safety. Therefore, based on the above example scenarios, an embodiment of the present disclosure provides a brewing control method, as detailed below.

[0035] With reference to the system shown in FIG. 1, FIG. 2 shows a flow chart of a brewing control method in an embodiment of the present disclosure. As shown in FIG. 2, the brewing control method 100 includes the following steps:

[0036] Step S101: determining a target process control parameter corresponding to a type of a to-be-produced beer from a plurality of process control parameters.

[0037] S102: acquiring fermentation tank information of a target fermentation tank.

[0038] S103: determining a discharge path of the target fermentation tank based on the fermentation tank information.

[0039] S104: controlling connection and disconnection of the discharge path based on the target process control parameter.

[0040] A beer processing plant may produce beers of many different types. For beers of different types, production needs to be guided based on different process control parameters during production. A staff can pre-store beers of different types and corresponding process control parameters thereof in a global data block (DB) of a Programmable Logic Controller (PLC) . In order to produce a certain type of beer, it is first necessary to determine a target process control parameter corresponding to the type of the to-be-produced beer from the DB of the PLC. During production, a raw material supply subsystem can pour wheat juice into the target fermentation tank 10 through the feeding pipeline 20. In this case, the raw material supply subsystem can provide the fermentation tank information of the target fermentation tank 10, and inform the target fermentation tank 10 to be used for production of the to-be-produced beer. The fermentation tank information of the target fermentation tank 10 can indicate a position of the target fermentation tank 10 in the beer processing plant, and information  such as pipelines connected to it and various valves in the pipelines. Therefore, the discharge path of the target fermentation tank 10 can be determined based on the fermentation tank information of the target fermentation tank 10, that is, which pipelines can be connected to connect the fermentation tank connecting pipeline 50 to the discharge pipeline 60. After the discharge path is determined, the connection and disconnection of the discharge path is controlled based on the target process control parameter. When the discharge path is connected, the target fermentation tank 10 can be used for discharging the resulting cold solids and yeast sludge from the target fermentation tank 10 in the production process through the discharge path. After the discharge of the cold solids and the yeast sludge is completed, the fermentation tank connecting pipeline 50 and the finished product pipeline 40 can be connected to discharge the finished product of the brewed beer.

[0041] In an embodiment of the present disclosure, the target process control parameter corresponding to the type of the to-be-produced beer is determined from a plurality of pre-stored process control parameters during beer brewing, thereby automatically controlling the connection and disconnection of the discharge path of the target fermentation tank 10 based on the target process control parameter with higher accuracy and safety than manual control, and saving labor costs.

[0042] In a possible implementation, step S104 may further include: determining at least one discharge parameter based on the target process control parameter, and controlling the connection and disconnection of the discharge path based on the discharge parameter.

[0043] Since the target process control parameter includes execution parameters of a plurality of production operation steps, at least one discharge parameter can be determined based on a currently required production operation, after the target process control parameter is obtained. The discharge parameter includes discharge start time, a discharge duration, and a flushing duration. In the production process, after feeding of the target fermentation tank 10 is completed, fermentation will be carried out in the tank. After the fermentation is completed, discharge of the cold solids and the yeast sludge deposited at the bottom of the tank can be started, so that the discharge start time is required to instruct to control the fermentation tank connecting pipeline 50 and the discharge pipeline 60 of the target fermentation tank 10 to be connected. The discharge start time is used to indicate a duration from termination of feeding of the fermentation tank to start of current discharge. For example, if the discharge duration is 1 h, the fermentation tank connecting pipeline 50 and the discharge pipeline 60 of the target fermentation tank 10 are controlled to be connected at one hour after the termination of the feeding of the target fermentation tank 10.

[0044] After the discharge of the cold solids and the yeast sludge is completed, some residues may be present in the discharge path, thereby affecting the quality of the finished beer that subsequently flows out. The discharge path includes at least a part of the pipeline between the target fermentation tank 10 and the discharge pipeline 60. Therefore, after each discharge, flushing is required. In this case, the discharge parameter to be determined is the flushing duration. The flushing duration is used to indicate a duration of flushing of the discharge path after discharge. Within the flushing duration, the flushing agent pipeline 30 and the discharge path are continuously connected to flush the discharge path.

[0045] It should be noted that due to the liquid flow in the tank during the discharge of the cold solids and the yeast sludge in the production process, some sediments that originally settle at the bottom of the tank may float up, so that the discharge may be performed multiple tines with discharge of a small amount each time. The cold solids can be discharged up to five times, and the yeast sludge can be discharged up to ten times. Since they need to be performed sequentially in the discharge process, the start time of each discharge is different, so that different discharge parameters include different discharge start time.

[0046] In an embodiment of the present disclosure, by determining at least one discharge parameter, different stages of brewing production is automatically controlled. In addition, by setting the flushing time, the residues in the discharge path after discharge of the target fermentation tank 10 is flushed, thereby ensuring the quality of the finished beer.

[0047] In a possible implementation, step S104 may further include: acquiring full tank time of the target fermentation tank 10, controlling the discharge path to be connected when the full tank time is equal to the discharge start time included in the discharge parameter; controlling the discharge path to be disconnected when the discharge path is controlled to be connected for a duration equal to the discharge duration included in the discharge parameter, and flushing the discharge path based on the flushing duration included in the discharge parameter.

[0048] The specific process of discharging the cold solids and the yeast sludge in the production process may be as follow. The full tank time of the target fermentation tank 10 is acquired. The full tank time is used to indicate a duration from termination of feeding of the target fermentation tank to current time, and may be timed using a timer. A timing start signal may be sent from a liquid level sensor or a pressure sensor in the target fermentation tank 10 when the target fermentation tank 10 is detected to be in a full tank state. When the full tank time obtained by timing is equal to the discharge  start time included in the discharge parameter, the discharge path is controlled to be connected. In this case, the discharge of the cold solids and the yeast sludge is started. At the same time, a duration in which the discharge path is controlled to connected using the timer. The timing start signal may be generated when a flow rate in the fermentation tank connecting pipeline 50 is not 0, or generated when a volume of contents in the target fermentation tank 10 decreases, or generated when a liquid level of the contents in the target fermentation tank 10 decreases. The discharge path is controlled to be disconnected when the duration in which the discharge path is controlled to be controlled, obtained by timing, is equal to the discharge duration included in the discharge parameter. When the discharge path is disconnected after the discharge is completed, washing is required. In this case, the discharge path is flushed based on the flushing duration included in the discharge parameter.

[0049] In an embodiment of the present disclosure, by acquiring the tank full tim, the discharge of the cold solids and the yeast sludge in the target fermentation tank 10 is automatically controlled based on the tank full time and the discharge start time included in the discharge parameter, and by acquiring the duration in which the discharge path is controlled to connected, the discharge path is disconnected based on the discharge path conduction duration and the discharge duration included in the discharge parameter, and further the discharge path is automatically flushed based on the flushing duration included in the discharge parameter.

[0050] FIG. 3 is a schematic diagram of another example scenario suitable for a brewing control method in an embodiment of the present disclosure. As shown in FIG. 3, the example scenario is a part of a scenario in a brewing production line, in which an inlet and an outlet of the target fermentation tank 10 are connected to a first flow channel port of a three-way valve 51 through a fermentation tank connecting pipeline 50, a second flow channel port of the three-way valve 51 is connected to an outlet of a first valve 70 through a pipeline, an inlet of the first valve 70 is connected to a second valve 21 and a third valve 31 respectively through a pipeline, the second valve 21 is arranged on a feeding pipeline 20, the third valve 31 is arranged on a flushing agent pipeline 30, a third flow channel port of the three-way valve 51 is connected to an inlet of a fourth valve 80 through a pipeline, an outlet of the fourth valve 80 is connected to a fifth valve 41 and a sixth valve 61 respectively through a pipeline, the fifth valve 41 is arranged on a finished product pipeline 40, and the sixth valve 61 is arranged on a discharge pipeline 60. The discharge path includes a pipeline from the three-way valve 51 to the sixth valve 61.

[0051] In a part of the scenario in the brewing production line, in order to control each pipeline,  corresponding valves are arranged at joints of each pipeline. In particular, the target fermentation tank 10 use a same pipeline segment for raw material inflow and content outflow, and therefore, the three-way valve 51 is provided at an outlet of the fermentation tank connecting pipeline 50 of the target fermentation tank 10. In addition, since a flushing agent is required for flushing during the production process, residues are likely to remain at bends of the pipeline. In order to prevent the flushing agent from flowing into the target fermentation tank 10, the second flow channel port of the three-way valve 51 is connected to the first valve 70 through a pipeline, and the third flow channel port of the three-way valve 51 is connected to the fourth valve 80 through a pipeline. In the flushing process, the flushing agent flows through the first valve 70, the second flow channel port of the three-way valve 51, the third flow channel port of the three-way valve 51, and the fourth valve 80 successively, thereby preventing the flushing agent from flowing into the target fermentation tank 10.

[0052] In the scenario shown in FIG. 3, the process of the controlling the discharge path to be connected may include: controlling the first flow channel port of the three-way valve 51, the third flow channel port of the three-way valve 51, the fourth valve 80, and the sixth valve 61 to open, and controlling the second flow channel port of the three-way valve 51, the first valve 70, the second valve 21, the third valve 31, and the fifth valve 41 to close, so that the inlet and the outlet of the target fermentation tank 10, the third flow channel port of the three-way valve 51, and the outlet of the fourth valve 80 are connected to the discharge pipeline 60 through pipelines.

[0053] In the scenario shown in FIG. 3, the process of the flushing the discharge path may include: controlling the first flow channel port of the three-way valve 51, the second valve 21, and the fifth valve 41 to close, and controlling the second flow channel port of the three-way valve 51, the third flow channel port of the three-way valve 51, the third valve 31, the fourth valve 80, and the sixth valve 61 to open, so that the flushing agent pipeline 30, the inlet of the first valve 70, the second flow channel port of the three-way valve 51, the third flow channel port of the three-way valve 51, and the outlet of the fourth valve 80 are connected to the discharge pipeline 60 through pipelines to allow flushing of the discharge path by the flushing agent in the flushing agent pipeline 30.

[0054] It should be noted that the discharge pipeline 60 shown in FIG. 3 may include a plurality of pipelines, for example, may include a CIP pipeline for recycling the flushing agent, a yeast recycling pipeline for recycling yeast sludge, and a pipeline connected to an inlet of underground drain, wherein the pipeline connected to the inlet of the underground drain is a pipeline that must be included in the discharge pipeline 60.

[0055] In an embodiment of the present disclosure, the corresponding valves are controlled, to automatically implement operations such as discharge and flushing in the brewing process.

[0056] In a possible implementation, in the brewing control process, full tank time at start of each discharge, a duration of each discharge of cold solids and / or yeast sludge, and a duration of each flushing of the discharge path may be further recorded.

[0057] In an embodiment of the present disclosure, the full tank time at start of each discharge, the duration of each discharge of the cold solids and / or the yeast sludge, and the duration of each flushing of the discharge path are recorded, to monitor the production process. When problems occur with finished products, the record can be analyzed to find reasons and take appropriate measures.

[0058] In a possible implementation, in the brewing control process, during the controlling the connection and disconnection of the discharge path based on the discharge parameter each time, the following operations may be further executed:

[0059] acquiring a volume of contents in the target fermentation tank 10 prior to discharge, when the full tank time is equal to the discharge start time included in the discharge parameter, acquiring a volume of the contents in the target fermentation tank 10 after discharge when the discharge path is controlled to be disconnected, determining a discharge volume of current discharge based on the volume prior to discharge and the volume after discharge, and recording the volume prior to discharge, the volume after discharge, and the discharge volume of the current discharge.

[0060] In the process of discharging the cold solids and / or the yeast sludge, in order to understand specific conditions of each discharge, before each discharge, that is, when the full tank time is equal to the discharge start time included in the discharge parameter, the volume of the contents in the target fermentation tank 10 prior to each discharge is acquired by, e.g., a liquid level sensor or a pressure sensor in the target fermentation tank 10, then the volume of the contents in the target fermentation tank 10 after discharge is acquired when the discharge path is controlled to be disconnected, which indicates that the current discharge is completed, the discharge volume of the current discharge is determined based on a difference value between the volume prior to discharge and the volume after discharge, and the volume prior to discharge, the volume after discharge, and the discharge volume of the current discharge are recorded by, e.g., writing into an internally stored record table, which may be, e.g., as shown in Table 1.

[0061] Table 1

[0062] The target process control parameter of each discharge in the target fermentation tank 10 and the corresponding parameters in the actual production process are recorded in Table 1, and fermentation tank numbers included in the fermentation tank information of the target fermentation tank 10 are recorded in the record table. Therefore, a user can send a corresponding fermentation tank number or click on the fermentation tank number on a display interface, to invoke a record table corresponding to the fermentation tank number for viewing. The discharge volume in each discharge process of the cold solids is summed to obtain a total discharge volume of the cold solids, and the discharge volume in each discharge process of the yeast sludge is summed to obtain the total discharge volume of the yeast sludge.

[0063] It should be noted that in order to unify the format of the record table, discharge parameter records of 5 discharges of the cold solids and discharge parameter records of 10 discharges of the  yeast sludge are arranged in the record table. During actual discharge, if the cold solids is discharged less than 5 times and / or the yeast sludge is discharged less than 10 times, 0 is recorded at all redundant discharge parameter recording positions.

[0064] In an embodiment of the present disclosure, relevant parameters in each discharge process are recorded, to facilitate viewing and analysis by a staff.

[0065] FIG. 4 is a schematic diagram of a brewing control apparatus in an embodiment of the present disclosure. As shown in FIG. 4, the brewing control apparatus 200 includes:

[0066] a first determination module 201 configured to determine a target process control parameter corresponding to a type of a to-be-produced beer from a plurality of process control parameters, wherein beers of different types correspond to different process control parameters; an acquisition module 202 configured to acquire fermentation tank information of a target fermentation tank, wherein the target fermentation tank is configured to produce the to-be-produced beer; a second determination module 203 configured to determine a discharge path of the target fermentation tank based on the fermentation tank information, wherein the discharge path is used to discharge cold sludge and yeast slurry in the target fermentation tank; and a control module 204 configured to control connection and disconnection of the discharge path based on the target process control parameter.

[0067] A beer processing plant may produce beers of many different types. For beers of different types, production needs to be guided based on different process control parameters during production. A staff can pre-store beers of different types and corresponding process control parameters thereof in a global data block (DB) of a Programmable Logic Controller (PLC) . In order to produce a certain type of beer, the first determination module 201 first determines a target process control parameter corresponding to the type of the to-be-produced beer from the DB of the PLC. During production, a raw material supply subsystem can pour wheat juice into the target fermentation tank 10 through the feeding pipeline 20. In this case, the raw material supply subsystem can provide the fermentation tank information of the target fermentation tank 10 to the acquisition module 202, and inform the target fermentation tank 10 to be used for production of the to-be-produced beer. The fermentation tank information of the target fermentation tank 10 may indicate a position of the target fermentation tank 10 in the beer processing plant, and information such as pipelines connected to it and various valves in the pipelines. Therefore, the second determination module 203 can determine the discharge path of the target fermentation tank 10 based on the fermentation tank information of the target fermentation tank 10, that is, which pipelines can be connected to connect the fermentation tank  connecting pipeline 50 to the discharge pipeline 60. After the discharge path is determined, the control module 204 controls the connection and disconnection of the discharge path based on the target process control parameter.

[0068] In an embodiment of the present disclosure, the target process control parameter corresponding to the type of the to-be-produced beer is determined from a plurality of pre-stored process control parameters during beer brewing, thereby automatically controlling the connection and disconnection of the discharge path of the target fermentation tank based on the target process control parameter with higher accuracy and safety than manual control, and saving labor costs.

[0069] FIG. 5 is a schematic diagram of a brewing system in an embodiment of the present disclosure. As shown in FIG. 5, the brewing system 300 includes: a raw material supply subsystem 301, a brewing production subsystem 302, and a brewing control apparatus 200.

[0070] The brewing production subsystem 302 includes at least one fermentation tank 3021. The brewing control apparatus 200 is configured to execute relevant steps of the brewing control method in the above embodiments. The raw material supply subsystem 301 is configured to control raw materials to flow into a target fermentation tank 10 in the brewing production subsystem 302.

[0071] In the beer production process, the raw material supply subsystem 301 can determine a target fermentation tank 10 from the brewing production subsystem 302 during every feeding of the raw materials based on a production plan, and then control the raw materials to flow into the target fermentation tank 10. The brewing control apparatus 200 automatically controls pipelines connected to the target fermentation tank 10 to implement beer production.

[0072] In an embodiment of the present disclosure, the target process control parameter corresponding to the type of the to-be-produced beer is determined from a plurality of pre-stored process control parameters during beer brewing, thereby automatically controlling the connection and disconnection of the discharge path of the target fermentation tank based on the target process control parameter with higher accuracy and safety than manual control, and saving labor costs.

[0073] FIG. 6 is a schematic diagram of an electronic device in an embodiment of the present disclosure. Specific implementations of the electronic device are not limited in specific embodiments  of the present disclosure. As shown in FIG. 6, the electronic device 400 may include: a processor 401, a communication interface 402, a memory 403, and a communication bus 404, wherein:

[0074] the processor 401, the communication interface 402, and the memory 403 complete communication with each other through the communication bus 404.

[0075] The communication interface 402 is configured to communicate with other electronic devices or servers.

[0076] The processor 401 is configured to execute a program 405, and specifically may execute relevant steps of the brewing control method in the above embodiments.

[0077] Specifically, the program 405 may include a program code. The program code comprises computer operation instructions.

[0078] The processor 401 may be a CPU, or an Application Specific Integrated Circuit (ASIC) , or one or more integrated circuits configured to implement embodiments of the present disclosure. One or more processors comprised in a smart device may be processors of a same type, e.g., one or more CPUs; or may be processors of different types, e.g., one or more CPUs and one or more ASICs.
