Abstract

The purpose of the present invention is to provide a novel beer-flavored non-alcoholic beverage having favorable flavor development and balance of acidity. The present invention provides a beer-flavored non-alcoholic beverage having a γ-aminobutyric acid concentration of 3 ppm or more. According to the present invention, by including γ-aminobutyric acid, within a prescribed concentration range, in a beer-flavored non-alcoholic beverage, the beer-flavored non-alcoholic beverage can be provided with favorable flavor development and balance of acidity, which is advantageous in being able to meet diverse consumer preferences and needs.

Claims

1. A beer-flavored non-alcoholic beverage having a gamma-aminobutyric acid concentration of 3 ppm or more.

2. A beer-flavored non-alcoholic beverage according to claim 1, wherein the caprylic acid concentration is 1 ppm or more.

3. A beer-flavored non-alcoholic beverage according to claim 1 or 2, wherein the concentration of γ-aminobutyric acid is 5 ppm or more and 500 ppm or less.

4. A beer-flavored non-alcoholic beverage according to claim 1 or 2, in which the malt content is 50% or more.

5. A beer-flavored non-alcoholic beverage according to claim 1 or 2, in which the true extract is 2.0% by mass or more.

6. A non-alcoholic beer-flavored beverage according to claim 1 or 2, which is a dealcoholized beverage.

7. A method for producing a beer-flavored non-alcoholic beverage, comprising a step of incorporating γ-aminobutyric acid to a concentration of 3 ppm or more.

8. A method for improving the flavor of a beer-flavored non-alcoholic beverage, comprising the step of adding γ-aminobutyric acid to the beverage at a concentration of 3 ppm or more during the production of the beverage.
