[0002] With regard to improving the texture of artificial fish eggs, techniques for adjusting the thickness of the coating and the moisture content within a predetermined range have been disclosed (Patent Documents 1 and 2, etc.).

(2) Artificial fish roe according to (1), in which a solution prepared under the following conditions has an LST (Line Spread Test) value of 48 to 72 mm. <Conditions> A solution obtained by adding an equal amount of water to the artificial fish roe, stirring for 30 seconds, heating at 50°C for 1 hour, removing the seamless capsules by sieving, and then incubating at 30°C for 1 hour. (3) Artificial fish roe according to (1) or (2), in which the thickened seasoning liquid contains a thickening polysaccharide. (4) Artificial fish roe according to (3), in which the thickening polysaccharide contains at least one selected from the group consisting of xanthan gum, locust bean gum, guar gum, and gellan gum. (5) Artificial fish roe according to any one of (1) to (4), in which the seamless capsule has a content and a capsule shell enclosing the content, and in which a gelling agent is contained as a shell-forming component of the capsule shell. (6) The artificial fish roe according to (5), wherein the gelling agent is agar. (7) The artificial fish roe according to (5) or (6), wherein the breaking strength is 0.020 to 0.055 N. When the capsules were used alone without being immersed in a seasoning liquid (Comparative Example 1), or when no thickening polysaccharide was added to the seasoning liquid and it had no thickness (Comparative Example 2), an acceptable stickiness was not obtained.
Claims
1. Artificial fish eggs containing a seamless capsule and a thick seasoning liquid.
2. The artificial fish eggs according to claim 1, wherein a solution prepared under the following conditions has an LST (Line Spread Test) value of 48 to 72 mm. <Conditions> A solution obtained by adding the same amount of water as the artificial fish eggs, stirring for 30 seconds, heating at 50°C for 1 hour, removing the seamless capsules by sieving, and then incubating at 30°C for 1 hour.
3. The artificial fish roe according to claim 1, wherein the thickened seasoning liquid contains a thickening polysaccharide.
4. The artificial fish eggs according to claim 3, wherein the thickening polysaccharide comprises at least one selected from the group consisting of xanthan gum, locust bean gum, guar gum and gellan gum.
5. The artificial fish egg according to claim 1, wherein the seamless capsule has a content and a capsule shell that encloses the content, and the capsule shell contains a gelling agent as a shell-forming component.
6. The artificial fish eggs according to claim 5, wherein the gelling agent is agar.
7. The artificial fish roe according to claim 5, having a breaking strength of 0.020 to 0.055 N.
8. The artificial fish roe according to claim 5, wherein the coating rate is 32 to 73 mass %.
9. The artificial fish eggs according to any one of claims 1 to 8, which are caviar-like.
10. A method for producing artificial fish eggs by immersing seamless capsules in a thick seasoned liquid.
11. A method for producing artificial fish eggs by immersing seamless capsules in a mixture of a thick seasoning liquid and a seasoning liquid containing salt.
12. A method for producing artificial fish eggs as described in claim 10 or 11, wherein the thickened seasoning liquid contains a thickening polysaccharide.
