[0001] The present invention relates to a method for tenderizing pork hind leg meat and pork hind leg meat processed according to the same. More specifically, the invention relates to a method for tenderizing pork hind leg meat to achieve a soft texture by sous vide immersion, tenderization, and sauce blending, and to pork hind leg meat processed according to the same.
