[0001] CARBONATED ALCOHOLIC BEVERAGE COMPRISING BEER DISTILLATE

[0002] TECHNICAL FIELD OF THE INVENTION

[0003] The present invention relates to a unique carbonated alcoholic beverage comprising a combination of beer distillate, ethanolic liquid, fruit juice concentrate, carbon dioxide and water, said beverage having an ethanol content of 2-12% ABV.

[0004] The invention also relates to a method of preparing the aforementioned beverage.

[0005] The invention further provides a unique beer distillate and a method of preparing an alcoholic beverage having an ethanol content of 20-50 wt.% using this beer distillate.

[0006] BACKGROUND OF THE INVENTION

[0007] Alcoholic beverages can be divided into three main categories, i.e. fermented alcoholic beverages (e.g. beer, wine and cider), distilled alcoholic beverages (liquors, such as whisky and rum, and liqueurs) and mixed alcoholic drinks (e.g. cocktails and shooters). Despite the huge variety of alcoholic beverages that is currently available, consumers are continuously looking for new alcoholic beverages that provide a unique pleasant taste sensation.

[0026] SUMMARY OF THE INVENTION

[0027] The inventors have developed a carbonated alcoholic beverage with a unique appealing taste. The beverage is obtained by mixing a special beer distillate with ethanolic liquid, fruit juice concentrate, carbon dioxide and water. The special beer distillate that is employed in the preparation of the alcoholic beverage combines a high ethanol content of 50-99.5 wt.% with a high content of amyl alcohols (alcohols with the formula CsHnOH). Besides amyl alcohols, the beer distillate contains other beer flavour components having a similar boiling point. Together these beer flavour components provide a very special floral, fruity flavour note to the beverage.

[0028] A first aspect of the present invention relates to a method preparing a carbonated alcoholic beverage having an ethanol content of 2-12% ABV and a water content of at least 80 wt.%, said method comprising combining:

[0119] A high gravity beer was produced from 100% barley malt. First, a wort was produced having a gravity of 18°P. After 50 minutes of wort boiling, dextrose was added to increase gravity of the wort to 24°P, followed by an additional 10 minutes of boiling.

[0120] Upon completion of the boil, the wort was moved to a whirlpool, with the addition of Ekuanot® hops for 3 IBUs of bitterness. The wort was then transferred to the fermentation tank at 50°F (10°C), followed by the introduction of lager yeast and yeast derivatives (including yeast autolysate).

[0121] Fermentation was continued for 12 days, during which period the temperature gradually increased to 64°F (17.8 °C). After a maturation period of 12 days, the beer was filtered. A method of preparing a carbonated alcoholic beverage having an ethanol content of 2- 12% ABV and a water content of at least 80 wt.%, said method comprising combining:• 0.03-10 parts by weight of beer distillate having an ethanol content of 50-98 wt.% and comprising 200-2,000 mg / kg of amyl alcohols;• 2-30 parts by weight of ethanolic liquid having an ethanol content of 25-100 wt.%;• 0.3-10 parts by weight of fruit juice concentrate;• 0.2-1.2 parts by weight of carbon dioxide;• 60-90 parts by weight of water.

2. Method according to claim 1 , wherein the beer distillate contains 50-500 pg / kg of linalool.

3. Method according to claim 1 or 2, wherein the beer distillate contains 40-500 mg / kg 1- propanol.

4. Method according to any one of the preceding claims, wherein the beer distillate contains 0-5 mg / kg of ethyl acetate.

5. Method according to any one of the preceding claims, wherein the beer contains ethyl acetate and amyl alcohols in a weight ratio of ethyl acetate : amyl alcohols of less than 1 :30.

6. Method according to any one of the preceding claims, wherein the beer distillate contains 5-300 pg / kg of dimethyl disulfide.

7. Method according to any one of the preceding claims, wherein the beer distillate contains 0-20 pg / kg of dimethyl sulfide.

8. Method according to any one of the preceding claims, wherein the beer distillate contains dimethyl sulfide and dimethyl disulfide in a weight ratio of dimethyl sulfide: dimethyl disulfide of less than 1 :3.

9. Method according to any one of the preceding claims, wherein the ethanolic liquid is selected from rum, vodka, tequila, whisky, bourbon, brandy, gin and combinations thereof10. Method according to any one of the preceding claims, wherein the fruit juice concentrate has a sugar concentration of 40-80 °Brix.

11. Method according to any one of the preceding claims, wherein the fruit juice concentrate is obtained from one more fruits selected from citrus fruit, passion fruit, dragon fruit, stone fruit and red fruit.

12. Method according to any one of the preceding claims, wherein the method comprises combining:• 0.04-0.8 parts by weight of the beer distillate;• 4-20 parts by weight of the ethanolic liquid;• 0.4-4 parts by weight of the fruit juice concentrate;• 0.3-0.7 parts by weight of carbon dioxide;• 68-85 parts by weight of water.

13. A carbonated alcoholic beverage obtained by the method according to any one of the preceding claims.

14. A beer distillate comprising:• 80-98 wt.% ethanol;• 200-2,000 mg / kg amyl alcohols;• 40-500 mg / kg 1 -propanol;• 40-500 mg / kg isobutanol;• 0.5-15 mg / kg ethyl acetate;• 50-1 ,000 pg / kg linalool.

15. A method of preparing an alcoholic beverage, the beverage having an ethanol content of 20-50 wt.%, a water content of 40-79 wt.% and a combined ethanol and water content of at least 90 wt.%, said method comprising combining:• 10-40 parts by weight of the beer distillate according to claim 14; and• 30-70 parts by weight of water.
