A process for preparing an instant plant-based food product, comprising the steps of: a. preparing a treated emulsion having one or more ingredients of plant-based flour, legume / pulse protein, vegetable oil, and one or more pre-gelatinized starches; and b. obtaining the instant plant-based food product from the treated emulsion; wherein in the treated emulsion, the plant-based flour and the legume / pulse protein are in a dry weight ratio of, plantbased flour to legume / pulse protein, from 1 : 1 to 10:1; and the vegetable oil and the plant-based flour are in a weight ratio of, vegetable oil to plant-based flour, from 1 :2 to 30: 1.
2. The process of claim 1, wherein the step of preparing the treated emulsion comprises the steps of: a. blending one or more of dry ingredients of the plant-based flour, the legume / pulse protein, and the one or more pre-gelatinized starches in a liquid to form a preemulsion; b. homogenizing the pre-emulsion to obtain an emulsion; and c. thermally treating the emulsion to obtain the treated emulsion.
3. A process for preparing an instant dairy substitute product, comprising the steps of: a. blending dry ingredients of plant-based flour, legume / pulse protein, and one or more pre-gelatinized starches in a liquid and a vegetable oil to form a pre-emulsion; b. homogenizing the pre-emulsion to obtain an emulsion; c. thermally treating the emulsion to obtain a treated emulsion; and d. drying the treated emulsion to obtain the instant dairy substitute product; wherein the plant-based flour and the legume / pulse protein are in a dry weight ratio of, plant-based flour to legume / pulse protein, from 1 : 1 to 10: 1; and the vegetable oil and the plant-based flour and are in a weight ratio of, vegetable oil to plant-based flour, from 1 :2 to 30: 1.
4. The process of claim 3 comprising an optional step of agglomerating the treated emulsion after the drying step.

An instant plant-based food product, comprising: a. plant-based flour; b. legume / pulse protein; c. vegetable oil; andPT-2223 -WO-PCT d. one or more pre-gelatinized starches; wherein the plant-based flour and the legume / pulse protein are in a dry weight ratio of plant-based flour to legume / pulse protein, from 1 : 1 to 10: 1; and the vegetable oil and the plant-based flour are in a weight ratio of, vegetable oil to plant-based flour, from 1 :2 to 30: 1.
6. The instant plant-based product of claim 5, wherein the vegetable oil and the legume / pulse protein are in a weight ratio of, vegetable oil to legume / pulse protein, from 1 : 1 to 30: 1.
7. The instant plant-based food product of any of claims 5 to 6, wherein the food product is free of any dairy components.
