The proposed useful solution involves a multi-purpose ginger juice production process, including: raw material preparation, which involves cleaning fresh ginger, grinding the clean fresh ginger to a size of 0.5 mm to 1 mm, and preparing RO water as the solvent; extraction, which involves mixing the whole ground ginger with RO water in a 1:1 ratio, warming the mixture to a temperature between 50°C and 70°C for 3 to 6 hours; and filtration, which involves filtering the extracted mixture using a plate and frame filter press with 4 to 6 filter layers. The vacuum concentration process involves vacuum-sealing the extract to a pressure of 54 to 150 mmHg, and indirectly heating it with heat transfer oil to evaporate the water from the extract at approximately 50°C to 60°C for 70 to 90 minutes to produce the multi-purpose ginger extract.
