[0001] The present invention relates to a caramel composition, a method of preparing a caramel product, a caramel product and the use of a caramel product in a food product. BACKGROUND
[0002] Caramel is an orange-brown confectionery product produced by heat-treating a range of sugars. It can be used to prepare various confectionery products such as confectionery bars, top layer decorations for ice cream or frozen yoghurt, snack bars or fillings in a center-fill or puddings. Caramel is prepared by a caramelization process which involves slowly heating sugar to a high temperature in order to develop a unique colour and flavour.
[0003] Fats and oils are important ingredients of food products including caramel and are widely used in the food industry. Fats and oils play an important role in textural properties and sensory properties such as mouthfeel, texture, flavour release, flavour impact, processability and shelf life.
[0004] Milk fat is often used in caramel compositions. Milk fat can have a negative impact on health as it contains about 3% trans-fatty acids and a high amount of saturated fatty acids. Milk fat is also considered to have a negative impact on climate change and sustainability due to the emission of carbon dioxide during its production.
