A dairy product substitute beverage, comprising: (a) A dairy alternative component comprising: water and one or more edible non-dairy proteins and / or one or more beta-glucans; wherein the one or more edible non-dairy proteins are selected from the group consisting of: algae, legumes, broccoli, nuts, potatoes, oats, seeds, vegetarian meat, tandoori, tofu, fungal proteins, insects, and mixtures thereof; (b) One or more potent sweeteners selected from the group consisting of: rebaudin A, rebaudin M, rebaudin AM, rebaudin E, rebaudin I, rebaudin N, rebaudin B, monk fruit juice or monk fruit juice concentrate, monk fruit extract, cimanin I, mogroside V, syrup, kiwifruit protein (and its variants), brassin (and its variants), indigo protein (and its variants), sweet truffle protein (and its variants), sucralose, acesulfame potassium, aspartame, saccharin, cyclamate, and combinations thereof; and (c) One or more organic acid salts selected from the following: sodium gluconate, sodium citrate, sodium lactate, potassium gluconate, potassium citrate, potassium lactate, calcium gluconate, calcium citrate, calcium lactate, calcium lactate, magnesium gluconate, magnesium citrate, magnesium lactate, magnesium lactate, and their anhydrous and hydrated forms.
