Description

[0001] BISCUIT MACHINE

[0002] Technical Field

[0003] The invention relates to a biscuit machine which has an easy mold changing system, which can automatically arrange products on conventional baking trays, and which can be use the dough by placing it in the chamber section of the machine immediately after kneading the dough from the mixer and which does not stick to the molds.

[0004] Background of the Invention

[0005] Biscuit machine, also known as biscuit production line, is a specialized piece of equipment used in the production of biscuits or cookies on a large scale. It is widely used in commercial bakeries or food production facilities to automate and facilitate the biscuit production process.

[0006] Components of a biscuit machine: a biscuit machine consists of several key components, each of which plays a vital role in efficient biscuit production:

[0007] Dough mixer: At the heart of the biscuit machine is the dough mixer, which blends ingredients such as flour, fats, sugars and sweeteners to form the biscuit dough. This ensures homogeneous distribution and consistency in the mixture, forming the basis for high-quality biscuits.

[0008] Dough feeding system: The dough feeding system, usually consisting of conveyor belts or auger mechanisms, transports dough from the mixer to the forming section of the biscuit machine. This ensures a continuous and consistent supply of dough throughout the production process. Forming section: In the forming section, the biscuit dough is given the desired biscuit forms. Various techniques are used to create different shapes and designs of biscuits, including extrusion, layering or cutting. This stage requires precision and careful control to maintain consistent shapes and sizes.

[0009] Baking oven: Once the biscuits are formed, they enter the oven where the magic of transformation happens. The oven provides controlled heat and airflow, ensuring that the biscuits bake to perfection. The time and temperature settings are carefully calibrated to achieve the desired texture, color and taste.

[0010] Cooling conveyor: After baking, the biscuits are transferred to a cooling conveyor. This important step allows the biscuits to reach room temperature, stabilizing them and preventing moisture retention or breakage. The cooling conveyor prepares the biscuits for subsequent packaging and storage.

[0011] Creaming / Filling section (Optional): Some advanced biscuit machines have a creaming or filling section where a layer of cream, filling or jam is sandwiched between two biscuits. This process adds variety and versatility to biscuit production, enabling the creation of filled or sandwich biscuits.

[0012] Packaging section: The final stage of the biscuit machine is the packaging section. Here the fully baked and cooled biscuits are carefully packed into bags, boxes or other suitable containers for distribution and sale. This stage usually involves automated packaging systems that ensure efficient and hygienic biscuit processing.

[0013] Using advanced engineering and automation, a biscuit machine is a complex system designed to streamline and optimize biscuit production on a large scale. It consists of a series of interconnected components and processes that work in harmony to transform raw materials into finished biscuits with precision and efficiency.

[0014] The core of the biscuit machine is the dough mixer, where ingredients such as flour, fats, sugars, sweeteners are combined in specific proportions and thoroughly mixed. This process ensures proper homogenization and consistency of the dough, facilitated by advanced mixing mechanisms and controlled settings.

[0015] Once the dough has been prepared, it is conveyed to the forming section via an advanced dough feeding system. This system can use conveyor belts, augers or pneumatic mechanisms to move the dough smoothly and consistently to the next stage. The dough is then formed into the desired biscuit forms using various techniques such as extrusion, rotary molding or cutting. These processes involve precision machinery and molds that create different shapes, patterns and textures in the biscuits.

[0016] The resulting dough is then sent to a specially designed baking oven to ensure precise temperature control and air flow. The heat of the oven activates leavening agents in the dough, leading to controlled expansion and browning. Advanced temperature and humidity controls ensure uniform baking resulting in consistent color, texture and taste of the biscuits.

[0017] After the baking process, the biscuits move to a cooling conveyor system that facilitates fast and even cooling. This stage ensures that the biscuits achieve optimum texture and stability, preventing moisture retention and preserving their structural integrity. Airflow and cooling parameters are carefully regulated to ensure even cooling across the entire production line.

[0018] For filled or creamed biscuits, an additional creaming or filling section can be integrated into the machine. This section utilizes precise dosing and depositing mechanisms to apply the desired amount of cream or filling between the individual biscuits, guaranteeing accurate and consistent sandwiching.

[0019] Finally, the biscuits reach the packaging department where they are packed in various formats such as pouches, boxes or trays. Automated systems manage the packaging process, ensuring efficient and hygienic packaging operations. Quality control measures such as weight checks, metal detection and sealing integrity checks can be included to guarantee the highest product safety and quality standards. Throughout the entire biscuit machine, advanced control systems, sensors and programmable logic controllers (PLCs) monitor and regulate various parameters, including dough consistency, baking temperature, conveyor speed and packaging operations. These technologies enable precise control, real-time monitoring and adjustments to ensure consistent quality, operational efficiency and minimal waste.

[0020] In summary, a biscuit machine represents the convergence of mechanical, electrical and automation engineering. It encompasses a highly organized system of processes, machinery and controls to transform raw dough into a wide variety of biscuit varieties efficiently, consistently and with superior quality.

[0021] Currently, the soft biscuit production method is the most basic biscuit production method. The dough is shaped by placing the appropriate dough into the biscuit mold compartments. In this production method, a rotary forming machine is used to shape the dough. In the production of hard biscuits, which is another production method, the dough is first passed through thinner rollers and shaped into phyllo. The dough in phyllo consistency is cut with a chisel mold and given the desired shape. After cutting, the remaining dough is sent back to the beginning of the line to be thinned again with the help of conveyors. In traditional biscuit machines, it is necessary to roll out the dough in the form of lamination. Biscuit machines used in these processes require dough feeding equipment and scrap dough return conveyors. Biscuit machines are bulky machines with high production capacity. Biscuit machines have large structures and it is difficult to clean them. They are produced in a single size, cannot be used elsewhere and cannot be transported.

[0022] In low-capacity biscuit machines, the elastic dough is prepared as a block and then cut into certain thicknesses and fed into the chamber as a mold. The dough preparation process in these machines causes time losses and extra labor.

[0023] The above-mentioned information has a negative impact especially on biscuit producers. The invention comprises an easy mold changing system. It can automatically arrange the products on traditional oven trays. It can arrange products on the desired trays up to 40 cm. If desired, it can be installed at the head of the tunnel oven. You can place the dough in the chamber section of the machine immediately after kneading the dough from the mixer and use it. Thanks to the mold heating system, the products do not stick to the molds.

[0024] The structural and characteristic features and all the advantages of the invention will be more clearly understood by means of the following detailed description, and therefore this assessment should be made with this detailed description in mind.

[0094] Detailed Description of the Invention

[0095] In this detailed description, the inventive biscuit machine embodiment is described solely for the purpose of a better understanding of the subject matter and without any limiting effect. The body section (1) is the structure in which all the elements related to the machine are positioned or internalized. The conveyor section (2) is the part where the product and tray are transported.

[0096] The dough section (3) is the part where the dough is fed and the cutting section (4) is the part where the dough is cut. The mold heating system (5) is the system that prevents the product from sticking to the mold (51).

[0097] The touch panel (6) is the part that creates the product recipe and working scenario, and the body section (1 ) forms the outer structure of the biscuit machine as shown in Figure-2. The body section (1 ) consists of a design suitable for occupational safety with its ergonomic structure and 5 sensors on it. Inside of the body section (1 ), the body inner bearing part (7) suitable for food contact is made of plastic material. The operator can easily command the machine as on the touch screen by means of manual buttons (9) on the back of the body section (1 ), which has a user-friendly design. The screen allows external use. The waste tray (8), which is located in the body section (1), which is supported in the body inner bearing part (7), ensures that the dough falling from the dough section (3) accumulates on the tray and then the operator removes it by pulling the tray and returns it to the chamber (24). Thanks to this design, product waste is prevented.

[0098] Conveyor section (2) consists of two conveyors: tray conveyor (2.1 ) and product conveyor (2.2). As seen in Figure-3, the tray conveyor (2.1 ) can be folded up and down, which saves space after use and facilitates cleaning. The joint apparatus (10) on the folding part of the tray conveyor (2.1 ) has an ergonomic design and allows the operator to turn on and turn off it easily. Thanks to the joint apparatus (10), it is possible to fold up and down 90 degrees in the inlet and outlet section. In order to fold the conveyor, the handle (12) is pulled on the exploded joint apparatus (10) shown in Figure-4 and the fixing pins (14) are released from the pin holder bearing (15). The released fixing pins (14) allow the articular apparatus body (11 ) parts welded to the chassis to move up to the slot distance in the movement adjustment part (13) inside. The operator moves the conveyor by pulling the handle (12) on the joint apparatus (10) on the right and left of the conveyor part that he wants to lift or lower. Then, by giving the conveyor a 90-degree up or down position, it is easily locked in its final position by pushing the handle (12) again. Thanks to the joint apparatus (10) whose working principle is explained, the operator can fold the conveyor without any equipment, thus saving space. The height of the tray conveyor (2.1 ) can be easily adjusted by means of the lever on the side of the body section (1 ).

[0099] The product conveyor (2.2) shown in Figure -5 transfers the products from the cutting section (4) onto the tray conveyor (2.1). It has a design that allows the operator to disassemble and assemble the product conveyor (2.2) without equipment by grabbing the conveyor fixing handles (12) on the side of the product conveyor (2.2) and lifting and pulling it up from the body section (1). Thanks to this feature, the operator can easily perform cleaning and maintenance operations of the product conveyor (2.2). Sensors detect when the product conveyor (2.2) is in place, preventing work accidents and product waste. The product conveyor (2.2) consists of a modular system. The product conveyor (2.2) consists of the upper body (20) and the lower body (21) joined by the body joining lever (18). By pulling the body joining lever (18), the belt (16) is released and can be easily replaced. The belt slip adjustment lever (22) on the product conveyor (2.2) allows the angle between the upper body (20) and the lower body (21) to be increased or decreased. This movement allows the belt (16) to give the movement that will prevent it from sliding to the right and left. In the same way, the band tension adjustment lever (19) allows us to adjust the gap between the upper body (20) and the lower body (21). This movement allows us to use a stable working conveyor by taking the gaps that are or may occur in the belt (16). The drive gear (23) is mounted independently from the motor (40) for ease of use.

[0100] Dough section (3) consists of dough roller (52), mold (51 ), chamber (24), protective grid (25), roller drive system (26), roller fixing system (27). There are sensors in the dough section (3) that confirm the position of the protective grid (25) after the dough is placed. If it is not closed, the system will not operate. Similarly, the protective grid (25) in the chamber (24) in the dough section (3) has a design that can be opened 90 degrees. There are sensors to prevent the system from operating when the chamber (24) is on. The chamber (24) has a structure that fits on the side wall of the dough roller (52) and mold (51 ) when closed. Thus, possible dough escapes are prevented. At the same time, the chamber side support arm (30) on one side of the chamber (24) is supported by the roller support pins (29) connected to the body section (1), preventing the load of the chamber (24) from pressing the dough roller (52) and mold (51 ).

[0101] The mold (51), dough roller (52), roller drive system (26), roller fixing system (27), the details of which are shown in Figure-7, are located in the dough section (3).

[0102] Changing the dough roller (52) and mold (51) in the dough section (3) can be done very easily without any equipment. As shown in Figure 6, after removing the chamber (24) and protective grid (25) in the dough section (3), the roller is disengaged by turning the levers on the specially designed roller fixing system (27) in the body section (1 ). Afterwards, the dough roller (52) and mold (51 ) can be easily cleaned and replaced by removing them from the upper part. The roller fixing system (27) performs sliding movement in the slot on the bearing (32) when the fixing adjustment lever (31 ) is turned clockwise. The roller fixing system (27) is fixed to the body section (1 ) with the roller fixing system body (33). Roller fixing system (27) is fixed by entering the dough roller (52) and mold (51 ) from the middle part with the rotating part with bearing (34). Roller drive system (26) transmits the movement it receives from the motor with gears to the dough roller (52) and mold (51) by means of pins (37). Roller drive system (26) is fixed to the body section (1) with the roller drive system body (38). The roller drive system (26) enters the middle part of the dough roller (52) and mold (51 ) with the drive system bearing part (35), and it forms the bearing. At the same time, a preliminary pressure is given to the drive system bearing part (35) with the spring (36) to eliminate the gaps that may occur in the dough roller (52) and mold (51 ) and a more stable system is obtained. Roller support pins (29) are used to hold the dough roller (52) and mold (51 ) when the roller fixing system (27) is in the on position.

[0103] The cutting section (4) shown in Figure-8 cuts the dough passing between the dough roller (52) and mold (51 ) in the dough section (3) to the desired thickness and ensures its passage to the product conveyor (2.2). In the cutting section (4), the drive motor (40) is fixed on the motor connection body (39). The bearing (34) on the eccentric shaft (41) connected to the drive motor (40) rotates in the slot (42) in the blade movement body (42) and provides the movement of the blade (47) in the direction shown by the arrow in Figure-8. Thanks to the product thickness adjustment unit (46) located in the body section (1 ), the operator can easily adjust the dough thickness. By moving the product thickness adjustment unit (46) to the right or left, the thickness of the product is adjusted by moving the thickness adjustment transfer part (45) up or down the blade (47) movement body. With the blade tension adjustment (44), the tension of the blade (47) can be easily adjusted. Cutting section (4) has an easy removable and cleanable design. The eccentric bearing (43) in the cutting section (4) provides a stable cutting process by preventing the resonance situation that may occur in the blade (47). The eccentric shaft (41) ensures that the eccentric bearing (43) remains stable.

[0104] The mold heating system (5) consists of a tangential radial fan (48), a resistance cassette (49) and a heating frame (50) providing the appropriate suction and discharge conditions. In the mold heating system (5), with the help of the tangential radial fan (48), the air passed through the resistance cassette (49) is heated and blown onto the mold (51 ) and thanks to the heated molds (51 ), the product does not stick to the rollers and the standard product is obtained. Tangentialrandial fan (48) and resistance cassette (49) in the mold heating system (5) operate at certain levels to prevent the products from sticking to the mold (51 ). At the same time, the tangential radial fans (48) used in the mold heating system (5) provide optimum performance with its forward-curved aluminum fan with thin blades, light weight, high flow rate and low noise level. Thanks to the shaded pole single-phase motor, low energy consumption and high efficiency are achieved.

[0105] With the touch panel (6), conveyor speeds can be regulated and product recipes can be created according to customer demands.

[0106] Biscuit dough consists of a mixture of biscuit and cookie dough with a special recipe. After kneading this dough, it is placed in the chamber (24) without any extra process. The dough, which is squeezed between the specially designed roller (52) and mold (51 ), takes form and is cut with a specially designed blade (47).

[0107] The body section (1 ), where all the elements related to the machine are positioned and shown in Figure-1 , constitutes the external structure of the biscuit machine. The conveyor section (2), dough section (3), cutting section (4), mold heating system (5) and touch panel (6) in the body section (1 ) have an ergonomic design and ensure efficient and stable operation of our system due to their location.

[0108] It is important for our system that the tray conveyor (2.1 ) is easy to clean, saves space thanks to its foldable structure and has an ergonomic design. Product conveyor (2.2) is important for our system that it is easy to clean and has an ergonomic design.

[0109] Dough section (3) is important for our design with its design and the dough roller (52), mold (51), chamber (24), protective grid (25), roller drive system (26) and roller fixing system (27). Thanks to the structure of the dough roller (52) in the dough section (3), biscuits can be produced without rolling out the dough. Changing the dough roller (52) and mold (51 ) in the dough section (3) can be done very easily without any equipment.

[0110] Mold heating system (5) is used to heat the molds (51 ) to prevent the products from sticking to the molds (51). With the safety switch (28), it is ensured that the machine is manually stopped immediately in cases such as malfunction and prevents it from running when it is on.
