[0003] The invention relates to a bagel machine developed for use in the production of circleshaped bakery products such as traditional bagels (simit), kandil (religious holy night) bagels, and Izmir bagels.

[0005] The bagel (simit) machine is an industrial machine designed forthe production of bagels. These machines, generally used in the food sector, automate the bagel production process and speed up production. The bagel production machine performs the stages of kneading, shaping and baking the dough. With the dough kneading systems, the dough ingredients are combined, and a homogeneous consistency is achieved. Then, in the shaping section, the dough is brought into the bagel form. The shaping process is done quickly and precisely, and specially designed molds are used to create the traditional shape of the simit. Another important component of the bagel production machine is the baking section. The dough is placed on a belt sprinkled with sesame or various ingredients and passes through the hot oven section. The mentioned bagel mechanism consists of the following sections: movement rails, dough weight adjustment arm, dough transmission piston and rear rail foot, transmission pistons, dough weight chamber, chamber top cover, dough inner circle shaft to which the inner circle rounding cylinder and dough catching sleeve are connected, dough circle sleeve, helical spring for pushing the cutting blade, circled dough cutting blade, inner circle rounding cylinder, outer circle rounding ring, dough dropping buffers, front rail and buffer foot.

[0036] Detailed Description of the Invention

[0037] In this detailed description, the bagel machine (100) which is the subject of the invention, developed for use in the production of circle-shaped bakery products such as traditional bagel (simit), kandil bagel, Izmir bagel is explained only as an example for a better understanding of the subject and in a way that does not create any limiting effect.

[0038] The bagel machine (100) shown in Figure 1 ensures that the kneaded dough comes out in a circled shape without the need for cutting, weighing or even shaping, and thus, it provides a significant advantage in time and labor by performing the task of three machines on its own. In the mentioned bagel machine (100), there is a dough weight adjustment arm (101 ) at the end to adjust the dough weight to the desired extent according to the weight and size of the bagel to be made. At the bottom of the dough weighting arm (101), the dough transmission piston rear rail foot (102) is positioned for the axial movement of the transmission pistons (104). The said transmission pistons (104) are used to balance the transmission and distribution of the dough into the mechanism. The transmission piston adjustment screw (103) is positioned at the point where the mentioned dough transmission piston rear rail foot (102) is connected to the movement rails (105) for precise adjustment of the right and left sides. In the said bagel machine (100), the movement rails (105) positioned opposite each other ensure the smooth movement of the parts. In order to ease the dough function, the inner circle rounding cylinder (112) is fixed by the inner circle rounding cylinder fixing shaft (106). In the bagel machine (100) shown in Figure 2, there is a dough weighing chamber (108) for the volumetric weighing of the dough. In order to prevent the dough from heating, the chamber top cover (107) is positioned in this weighing chamber (108). In order to make the dough circle in a clear circular shape, the dough circle sleeve (109) without any material parts was used. The connection table (110) is positioned between the said dough circle sleeve (109) and the circled dough cutting blade (111 ) for connectingthe said parts. In order to prevent the temperature and humidity of the dough from changing during the cutting process, a circled dough cutting blade (111 ) is positioned on the connection table (110). In order to prevent the inner circle shape from being distorted during the transfer of the dough, there is an inner circle rounding cylinder (112) whose weight is lightened by 60% compared to the existing structures. In order to prevent the outer circle shape from being distorted during the transfer of the dough, the outer circle rounding ring (114) is positioned at the point where the outer circle fixing mechanism (113) is connected to the movement rails (105). The outer circle fixing mechanism (113) is positioned between the inner ring rounding cylinder (112) and the circle belt dropping piston (115). At the bottom part of the said bagel machine (100), the circle belt dropping piston (115) is positioned to take the circle-shaped dough from the bagel machine (100) to be cooked. The said circle belt dropping piston (115) is connected to the front rail complementary foot (116) which enables its axial operation from its lower part.

Claims

CLAIMS1. A bagel machine (100) developed for the production of circular-shaped bakery products such as traditional bagels (simit), kandil bagels, and Izmir bagels, wherein it comprises:- transmission pistons (104) for transporting the dough into the mechanism and balancing its distribution; inner circle rounding cylinder fixing shaft (106), which fixes the inner circle rounding cylinder (112) to relieve the dough function; dough circle sleeve (109) without any material piece inside to shape the dough circle in a clear circular shape; inner circle rounding cylinder (112), weighting 60% lighter than existing systems, to prevent the inner circle from deforming during the transfer of the dough.

2. The bagel machine (100) according to claim 1 , wherein it comprises a dough weight adjustment arm (101) positioned at the end to adjust the dough weight to the desired level according to the weight and size of the bagel to be made.

3. The bagel machine (100) according to claim 1 , wherein it comprises a dough transmission piston rear rail foot (102) positioned at the bottom of the dough weighing arm (101 ) so that the movement of the transmission pistons (104) occurs axially.

4. The bagel machine (100) according to claim 1 , wherein it comprises a transmission piston adjustment screw (103) positioned at the point where the dough transmission piston rear rail foot (102) is connected to the movement rails (105) for precise adjustment of the right and left sides.

5. The bagel machine (100) according to claim 1 , wherein it comprises movement rails (105) positioned opposite of each other for the smooth movement of the parts.

6. The bagel machine (100) accordingto claim 1 , wherein it comprises a chamber top cover (107) positioned in the weighing chamber (108) to prevent the dough from heating.

7. The bagel machine (100) according to claim 1 , wherein it comprises a dough weighing chamber (108) for weighing the dough in volumetric grams.

8. The bagel machine (100) accordingto claim 1 , wherein it comprises a connection table (110) positioned between the dough circle sleeve (109) and the circled dough cutting blade (111 ).

9. The bagel machine (100) according to claim 1 , wherein it comprises a circled dough cutting blade (111 ) connected to the connection table (110) to prevent the temperature and humidity of the dough from changing while cutting.

10. The bagel machine (100) accordingto claim 1 , wherein it comprises an outer circle fixing mechanism (113) positioned between the inner circle rounding cylinder(112) and the circle belt dropping piston (115).

The bagel machine (100) accordingto claim 1 , wherein it comprises an outer circle rounding ring (114) positioned at the pointwhere the outer circle fixing mechanism(113) is connected to the movement rails (105) in order to prevent the outer circle shape from being deformed duringthe transmission of the dough.

12. The bagel machine (100) according to claim 1 , wherein it comprises a circle belt dropping piston (115) positioned at the bottom fortakingthe circle-shaped dough from the bagel machine (100) to be cooked.

3. The bagel machine (100) according to claim 1, wherein it comprises the front rail complementary foot (116) to which the circle belt dropping piston (115) is connected from its lower part for axial operation.
