AI Technical Summary
Existing tooth cleaning compositions, such as toothpastes and mouthwashes, often have unpleasant salty and bitter tastes due to ingredients like sodium bicarbonate and betaine, which are not effectively masked by current flavoring agents, and may cause discoloration with titanium dioxide nanoparticles.
An aroma composition comprising at least three different alkyl aryl ethers, at least one alpha hydroxy ketone, and additional aroma substances, such as acetoin and menthol, effectively masks the salty and bitter notes without causing discoloration.
The aroma composition significantly reduces the perception of salty and bitter tastes in tooth cleaning compositions, providing a pleasant freshness without discoloration, even in titanium dioxide-free formulations.

Abstract
Description
AROMA COMPOSITIONFIELD OF THE INVENTION
[0001] The present invention refers to an aroma composition for masking salty and bitter notes in tooth cleaning compositions.BACKGROUND OF THE INVENTION
[0002] Common tooth cleaning compositions available on the market, in particular toothpastes, toothpaste gels, mouthwashes and tooth powders regularly contain a large number of active ingredients, e.g. effective against tooth decay, plaque formation, tooth neck sensitivity, tartar formation, bad breath, etc.
[0003] These active ingredients often bring about increased unpleasant taste impressions, so that the tooth cleaning compositions in question are usually flavored to an increased extent. Substances such as, for example, sodium bicarbonate and betaine lead to a salty and / or bitter taste.
[0004] In order to cover or mask (i.e. reduce or diminish) the extremely negative taste notes of the active ingredients used in tooth cleaning compositions and at the same time to give the consumer a feeling of pleasant freshness, the proportion of flavor used has been increased in recent years in a tooth cleaning composition.
[0005] Vanillin and ethyl vanillin are known substances which mask such undesired notes. WO 2014 / 039966 A2 describes, for example, mouth rinses and tooth sensitivity treatment compositions with vanillin as a taste masking agent. However, aldehydes in general, in particular maltol, ethyl maltol, cinnamaldehyde, vanillin or ethylvanillin cause severe discoloration of the toothpaste and mouthwash formulations. This is even worse with the reduction of titanium dioxide nanoparticles in tooth cleaning compositions. Titanium dioxide - a white color pigment with high opacity - is suspected of damaging the genetic material and is thus already prohibited in food. i
[0006] Therefore, it has been the object of the present invention providing aroma compositions which are stable and do not cause discoloration, even in titanium dioxide free tooth cleaning compositions.DESCRIPTION OF THE INVENTION
[0007] A first object of the present invention refers to an aroma composition for masking salty and bitter notes in tooth cleaning compositions comprising(a) at least three different alkyl aryl ether;(b) at least one alpha hydroxy ketone; and(c) at least one aroma substance.

[0074] Unless otherwise stated, all (quantity) information refers to weight.EXAMPLESExample 1General set up
[0075] The masking effect of the aroma composition according to the invention was tested by a sensory evaluation in different tooth cleaning compositions (toothpaste). Main ingredients of the aroma composition according to the invention are the following:
[0076] Main ingredients of the tooth cleaning composition 1 are the following: Water demineral. 27,16%, Sorbitol 70%ig 45%, Trisodiumphosphat 0,1%, Saccharin 450x 0,2%, Sodiummonofluorphosphate 1,14%, PEG 1500 5%, abrasive Silica 10%, Thickening Silica 8%, Aroma composition 1,3 %, Sodiumcarboxymethylcellulose 1,1%, Betain(Cocamidopropylbetain) 1%
[0077] Main ingredients of the tooth cleaning composition 2 are the following: Gylcerin 25%, PEG 1500 5%, water 20,08%, Aroma composition 1,2%, Sodiumfluoride 0,32%, Saccharin 450x 0,2%, abrasive Silica 8%, thickening silica 8%, Sodiumcarboxymethylcellulose 0,7%, Sodiumbicarbonate (baking soda) 30%, sodiumlaurylsulfate 1,5%
[0078] Main ingredients of the tooth cleaning composition 3 are the following: Sodium Bicarbonate 62 %, Water demineral. 26,4%, Glycerine 8%, Aroma composition 1,3%, Sodium carboxymethyl cellulose 1 %, Betain (cocoamidopropylbetaine) 1%, Saccharine 0,3%.
[0079] The test was carried out with a panel of 13 experienced extern panelists in order to investigate the overall sensory performance of the aroma composition according to the invention and their masking effect in comparison to a standard sample (aroma composition of the state of the art), focusing on bitter (tooth cleaning composition 1) and salty (tooth cleaning composition 2) taste perception.
[0080] The panel evaluated the toothpaste samples in introduction sessions collecting all the relevant descriptors, definitions and time measurement points. In the next sessions "test measurement" and "profiling with replication" the panel evaluated the intensities on an unstructured line scale (0=very weak 100=very strong). Each panelist evaluated the samples twice in the profiling sessions in a randomized sample order. In the following figures, the mean values are illustrated.
[0081] Evaluation of bitter masking
[0082] It can be seen from Figure 1 that the aroma composition according to the state of the art and the aroma composition according to the invention show nearly the same flavor profile during brushing. This means that the compounds of the aroma composition according to the invention do not have a strong taste of their own and therefore have no negative effects on the aroma profile.
[0083] Figure 2 shows that until 10 minutes after brushing the test sample containing the aroma composition according to the invention showed significantly reduced intensities of bitter aftertaste perception.
[0084] Evaluation of salty masking
[0085] Figure 3 shows that the aroma composition according to the present invention showed no change in flavor profile during brushing compared to the aroma composition of the state of the art. This means that the compounds of the aroma composition according to the invention do not have a strong taste of their own and therefore have no negative effects on the aroma profile.
[0086] Figure 4 shows that the test sample containing the aroma composition according to the invention showed significantly reduced intensities of salty aftertaste perception directly after brushing.
