Yogurt-flavored food and method for reducing oiliness
[0001] The present invention relates to a yogurt-flavored food and a method for reducing oily texture.
[0002] In processed foods such as confectioneries and desserts, processed foods containing fats and oils are often flavored with yogurt. This is because the taste of yogurt is popular with everyone, and the milky flavor and sourness of yogurt reduce the oily feeling when eaten. However, when the fat and oil content of processed foods increases, there is a problem that the oily feeling when eaten cannot be reduced even if the food is flavored with yogurt.
[0003] A technique for reducing the oily feel of oil- and fat-processed foods such as chocolate has been reported so far, in which edible oils and fats are prepared by adding a poorly oil-soluble emulsifier and a poorly oil-soluble high-intensity sweetener to the oils and fats (Patent Document 1). However, there has been a demand for a method for reducing the oily feel of yogurt-flavored processed foods that contain oils and fats.

Claims
1. A yogurt-flavored food containing 20 to 80% by mass of fats and oils, 0.3 to 10 ppm of ethyl butyrate, 1 to 25 ppm of isoamyl acetate, and 2 to 50 ppm of limonene.
2. The yogurt-flavored food product according to claim 1, which satisfies one or more of the following conditions (a) to (c): (a) the fat content is 20,000 to 2,500,000 when the ethyl butyrate content is taken as 1; (b) the fat content is 8,000 to 800,000 when the isoamyl acetate content is taken as 1; and (c) the fat content is 4,000 to 400,000 when the limonene content is taken as 1.
3. The food product according to claim 1 or 2, which contains a cider flavor containing one or more selected from ethyl butyrate, isoamyl acetate, and limonene.
4. A method for reducing oily sensation in a yogurt-flavored food, comprising blending ethyl butyrate, isoamyl acetate, and limonene into the yogurt-flavored food.
5. An agent for reducing oiliness in yogurt-flavored foods, containing ethyl butyrate, isoamyl acetate, and limonene as active ingredients.
