[0066] <Method for Improving Ethanol Sensation> The present disclosure provides a method for improving ethanol sensation. In the present disclosure, the ethanol sensation is a comprehensive sensation based on the ethanol (alcohol)-like body sensation, ethanol (alcohol)-like aftertaste, and ethanol (alcohol)-like impact felt when drinking a beverage. In the present disclosure, improving the ethanol sensation of a beverage includes not only improving the ethanol sensation of a beverage containing ethanol, but also imparting an ethanol sensation to a beverage that does not contain ethanol.
[0067] In an exemplary embodiment, the method includes using a sweetener and propanal as ingredients. For example, the method may include adjusting the amount of sweetener and propanal in the beverage so that the sweetener and propanal are present in the beverage in amounts effective to enhance ethanol perception. Specifically, the method may include adjusting the amount of sweetener in the beverage to 4 g / L or more, based on the volume of the beverage, and adjusting the amount of propanal in the beverage to 1.5 mg / L or more, based on the volume of the beverage.
[0068] The combination of sweeteners and propanal contributes to an improved ethanolic flavor in beverages, regardless of whether ethanol is present or not. This effect is presumably due to the ethanol-like texture, flavor, and stimulation provided by the combination of sweeteners and propanal.
[0069] Specific examples of sweeteners are as described above. The method for adjusting the amount of sweetener in a beverage is not limited. The amount of sweetener in a beverage may be adjusted by using a sweetener or a composition containing a sweetener as an ingredient of the beverage. [0121] As is clear from Table 16, when a beverage contains a sweet component or propanal but does not contain a combination of a sweet component and propanal, it is not possible to obtain an ethanol sensation of 1% or more ethanol as a comprehensive sensation. On the other hand, the results of Tables 1 to 15 show that when a beverage contains a combination of a sweet component and propanal as a comprehensive sensation, it is possible to obtain an ethanol sensation of 1% or more ethanol as a comprehensive sensation.
[0122] Experimental Example 9 As in Experimental Example 3, each component was added to 3.5% ethanol (Spirytus (ethanol concentration: 96% by volume) manufactured by Polmos Warsaw diluted with water) to the concentrations shown in Tables 17 and 18 to obtain 1 L of a composition. The compositions were evaluated at room temperature of 22°C for the following items according to the following criteria. The scores of 10 trained evaluators (each evaluator performed the evaluation once) were averaged, and the average was rounded to the nearest whole number. The evaluation results are shown in Tables 17 and 18.
[0123] (Evaluation items) Ethanol (alcohol)-like body: Refers to the thickness or satisfying feeling of ethanol (alcohol) felt in the throat. Ethanol (alcohol)-like aftertaste: Refers to the flavor of ethanol (alcohol) that remains in the oral cavity and nasal cavity. Ethanol (alcohol)-like impact: Refers to the stimulation of ethanol (alcohol)-like bitterness or solvent feeling felt on the tongue.
[0124] (Evaluation criteria) 0: Equivalent to 0% ethanol 1: Equivalent to 1% ethanol 2: Equivalent to 5% ethanol 3: Equivalent to 10% ethanol 4: Equivalent to 20% ethanol 5: Equivalent to 40% ethanol
[0125] (Overall evaluation) The total score of the evaluation items was used as the overall evaluation. Note that if the value obtained by dividing 1.7 for 3.5% ethanol, 3 for 10% ethanol, or 4 for 20% ethanol in at least one of the items was 0 or less, the overall evaluation was set to 0.

[0128] Experimental Example 10: As in Experimental Example 9, each component was added to 10% ethanol to obtain the concentrations shown in Tables 19 and 20, to obtain 1 L of a composition. The composition was similarly evaluated for the same items as in Experimental Example 9, according to the same criteria. The scores of 10 trained evaluators (each evaluator performed the evaluation once) were averaged, and the decimal points of the average were rounded off. The evaluation results are shown in Tables 19 and 20.

[0131] Experimental Example 11: As in Experimental Example 9, each component was added to 20% ethanol to obtain the concentrations shown in Tables 21 and 22, to obtain 1 L of a composition. The composition was similarly evaluated for the same items as in Experimental Example 9, according to the same criteria. The scores of 10 trained evaluators (each evaluator performed the evaluation once) were averaged, and the average was rounded to the nearest whole number. The evaluation results are shown in Tables 19 and 20.

[0134] Comparative Experimental Example 2 As in Experimental Example 1, each component was added to 3.5% ethanol (Table 23), 10% ethanol (Table 24), and 20% ethanol (Table 25) to obtain the concentrations shown in Tables 23 to 25, to obtain 1 L of composition. The compositions were similarly evaluated for the same items as in Experimental Example 9, according to the same criteria. The scores of 10 trained evaluators (each evaluator performed the evaluation once) were averaged, and the decimal points of the average were rounded off. The evaluation results are shown in Tables 23 to 25.
